1 lb okra, small just top removed
1 lb hamburger
4 tomatoes, chopped
1 onion, chopped
1 teaspoon allspice, ground
1/2 teaspoon cinnamon, ground
3 tablespoons olive oil
5 garlic cloves, thinly sliced

Steps:

  • Mix okra, hamburger, tomatoes, onion, allspice, and cinnamon together.
  • Place mixture in a covered pan.
  • Bake at 350 degrees Fahrenheit for 45 minutes or until done.
  • Meanwhile, for the topping, fry garlic until crisp in olive oil.
  • You might want to try 1 clove of garlic and work your way up.
  • When casserole is done, pour mixture over top.

Okra is a staple in Gullah cooking, and let me tell you, give me a cast-iron skillet and I'm a happy girl. It's the perfect pan for giving that okra its crispy, roasted exterior. Paired with bacon...shoot, it's downright delicious. My secret for un-slimy okra? A squeeze of lemon juice.

4 slices thick-sliced bacon
1 pound fresh okra, cut in half lengthwise
1 tablespoon canola oil
1 teaspoon Miss Brown's House Seasoning, recipe follows
Juice of 1/2 lemon (about 1 tablespoon)
Freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Cook the bacon in a large cast-iron skillet until crisp, about 8 minutes. Remove to paper towels to drain, reserving the drippings in the skillet.
  • Add the okra to the drippings in the skillet. Add the canola oil if the skillet is dry. Sprinkle with the House Seasoning, and toss to coat. Saute until crispy and golden brown, 12 to 15 minutes.
  • Squeeze the juice from the lemon over the top of the okra. Crumble the bacon over the top and sprinkle with freshly ground pepper. Serve right from the skillet.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

1 (16 ounce) package sliced frozen okra (or equivalent in fresh)
1 large sweet onion, thinly sliced
1 (15 ounce) can chopped tomatoes, stewed style if you prefer
salt & pepper

Steps:

  • Heat oven to 375°.
  • Spray a 9X13 Pyrex dish with cooking spray.
  • Layer 1/2 the okra, 1/2 the sliced onion and 1 can tomatoes.
  • Salt and pepper to taste.
  • Repeat.
  • Bake uncovered for 45 minutes.
  • Place oven on "broil" and broil for 5 minutes or to desired doneness.
  • Onions and tomatoes should just start to turn golden.
  • Be creative with your own addition of veggies or seasonings!

A kind of Turkish ratatouille. You can increase or decrease the heat as you choose. Almost a meal in itself, with bread and salad, or a great accompaniment to something grilled. The eggplant skin is generally left on, but if you prefer, peel it. Cooking time does not include defrosting (if you have to use frozen okra).

3/4 lb okra or 1 (10 ounce) package frozen okra
1 eggplant, about a pound
2 medium zucchini
2 medium green bell peppers
1 large onion
3 tomatoes
1/4 cup olive oil
2 tablespoons garlic, finely chopped
1/4 teaspoon hot red pepper flakes
1/2 cup parsley, fresh, finely chopped
1 bay leaf, preferably fresh
1/2 teaspoon dried thyme
salt, to taste

Steps:

  • If using fresh okra, trim away any tough stems.
  • If frozen okra is used, defrost and drain.
  • Trim off the ends of the eggplant and cut unpeeled eggplant into one-inch cubes.
  • Trim the ends of the zucchini and cut into unpeeled zucchini into one-inch cubes.
  • Using a vegetable peeler, peel away the skin of the bell peppers; halve them and remove cores, veins and seeds.
  • Cut bell peppers into one-inch pieces.
  • Peel and dice onion into one-inch pieces.
  • Peel, core and seed and dice tomatoes into one-inch pieces.
  • Pre-heat oven to 375°F.
  • Heat the oil in a large, heavy casserole (stove top/oven ware) and add the onion and eggplant cubes.
  • Cook, stirring often, about five minutes.
  • Add zucchini, tomatoes and green pepper and cook, stirring occasionally, about two minutes.
  • Stir in the garlic, pepper flakes, parsley, bay leaf and thyme.
  • Add the drained okra and salt to taste.
  • Place in the oven, uncovered, and bake for about one hour.
  • Remove bay leaf and serve.

6 slices quality bacon
4 -5 boneless skinless chicken breasts
2 (10 1/2 ounce) cans cream of chicken soup
2 cups shredded monterey jack cheese
1 (16 ounce) box spiral shaped pasta
1 tablespoon garlic powder
1 pinch salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Cook and crumble bacon. Set aside for later use. While cooking, cut chicken into bite-sized pieces.
  • In same pan as bacon, cook chicken in bacon drippings. Add garlic powder, salt and pepper to taste.
  • While chicken is cooking, cook pasta as directed. Drain and return to pan.
  • Add chicken, cream of chicken soup, and 1 cup of cheese. Mix well.
  • Pour mixture into sprayed 9x13 pan.
  • Top mixture with crumbled bacon and remaining cheese.
  • Bake at 400 degrees for about 20 minutes, until cheese is melted and beginning to brown on top.

2 slices bacon
½ onion, chopped
1 clove garlic, minced
1 hot chile pepper, seeded and chopped
1 (16 ounce) can diced tomatoes, drained and juice reserved
1 sprig fresh thyme
salt and ground black pepper to taste
2 cups trimmed okra
2 tablespoons chopped fresh parsley

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Crumble bacon into a bowl.
  • Add onion and garlic to skillet over medium heat; cook and stir until soft and translucent, about 5 minutes. Add hot pepper and cook until tender, about 3 minutes more. Add drained tomatoes; season with thyme, salt, and pepper. Bring to a simmer over medium heat and cook 5 minutes more.
  • Add okra and enough reserved juice from tomatoes to cover. Simmer, covered, until okra is tender, about 15 minutes.

1 lb okra, cut
1 medium onion, chopped
2 cups rice, cooked
1 green bell pepper, chopped (optional)

Steps:

  • Preheat oven tp 350 degrees. Cook sausage in skillet, remove sausage to keep warm. Add onion, okra, rice and bell pepper, if using. Add sausage back to skillet to combine all ingredients thoroughly. Bake in oven at 350 degrees for 10-15 minutes.

3/4 kg pork liver
1/2 kg wiltshire smoked bacon (or any Smoked bacon but not streaky)
450 ml Worcestershire sauce
1 tablespoon tomato paste
250 g sliced mushrooms
1 small onion, chopped
2 celery ribs, chopped
5 garlic cloves, chopped
50 g butter
2 tablespoons vegetable oil
1 pinch black pepper
30 g bisto, gravy granules

Steps:

  • Lay the liver & bacon into a large casserole dish & add the beef stock, Worcestershire sauce, tomato paste & black pepper.
  • In a wok or large frying pan heat the vegetable oil & butter.
  • Add the chopped garlic, chopped celery & onions & fry for around 3 minutes.
  • Add the mushrooms & fry for another 3 minutes or so until cooked through.
  • Pour fried vegetables into the casserole dish & stir & cover.
  • Preheat oven to around 170°C & bake for 2 hours.
  • If required, season to taste & serve.
