Steps:

  • Heat oil in skillet over menium heat.
  • Add onion and chopped garlic and cook till the onion is tender.
  • Add clam juice to skillet and add all the seasonings.
  • Simmer over low for 5 minutes.
  • When pasta is ready, add clams, and remove from heat.
  • Pour sauce over drained pasta, toss together.

A few notes: The traditional salt used in this dish is a sea salt called Fleur de Sel, however Kosher salt will work as a substitute. This dish is quick to prepare so the linguini should be cooking at the same time that you prepare the sauce. The exact amount of clams and juice in a container differs from brand to brand. You will need to separate the juice from the clams as the juice gets used early in the sauce and the clams at the end. The additional bottle of clam juice is to get the sauce to the correct consistency.

2 tablespoons extra virgin olive oil
2 cups ½ inch diced green bell pepper
1 medium jalapeno, seeded, stemmed and diced, or serrano if you like it hotter
1 cup ½ inch diced onion
1 cup ½ diced leeks, white part only cleaned of all sand
2 tablespoons minced garlic
1/3 cup red wine, such as merlot
3 cups diced plum tomatoes seeded, about 5-6 large tomatoes
2 pounds (or 1 quart depending on how they are sold) chopped clams in their juice, clams and juice separated, see note above
1 teaspoon sea salt or Kosher salt, see note above
¼ teaspoon freshly ground black pepper
1 teaspoon dry thyme
1 teaspoon oregano
½ teaspoon paprika
4 tablespoons tomato paste
1 8-ounce bottle clam juice, as needed
¼ cup chopped fresh parsley plus more for garnish
½ cup grated Parmesan plus more for garnish
1 pound dry linguini

Steps:

  • Start to heat a large pot of salted water on the stove. Have all sauce ingredients prepared in advance.
  • Add the linguini to the salted boiling water and cook per package directions to slightly under-cooked.
  • While linguini is cooking, in a large skillet over medium high, heat olive oil and add both peppers, onions and leeks and cook for three minutes. Add garlic and cook for one more minute.
  • Turn to high and add wine. Cook to reduce the wine slightly, lower heat to medium high and add tomatoes, the juice from the chopped clams, salt, pepper, thyme, oregano, paprika and the tomato paste. Stir and simmer five minutes. If the consistency is too thick, add some or all of the bottle clam juice. The mixture should be very loose but not watery. The pasta will absorb some of the liquid on the next step.
  • Add clams and heat just until the sauce is up to temperature then add in cooked drained linguini. (save a little pasta water in case you need to thin down further). Cook just enough so that the pasta is al dente but be careful not to overcook the clams.
  • Remove from heat and stir in chopped parsley and Parmesan cheese and serve with additional parsley and cheese over each portion.

1 tablespoon olive oil
2 tablespoons butter
Two 10-ounce cans chopped clams, drained, juice reserved
3 cloves garlic, minced
3/4 cup white wine
Juice of 1/2 lemon, plus lemon slices, for garnish
3/4 cup heavy cream
2 tablespoons fresh flat-leaf parsley, chopped
Kosher salt and freshly ground black pepper
Freshly grated Parmesan, for garnish

Steps:

  • Bring a large pot of water to a boil. Add the linguine and cook according to the package directions for al dente. Be careful not to overcook; the pasta should have plenty of bite to it. Drain and keep warm.
  • Meanwhile, in a large skillet over medium-high heat, add the olive oil and 1 tablespoon of the butter. (Using both olive oil and butter allows you to heat the mixture at a higher heat before it starts to brown.) Add the clams and garlic and stir together. Cook for 3 minutes. Pour in the white wine, scraping the bottom of the skillet with a wooden spoon. Cook until the sauce is reduced and less watery, 3 to 4 minutes. Add the remaining 1 tablespoon butter and stir to melt. Reduce the heat and squeeze in the lemon juice. Pour in the cream and sprinkle in the parsley. This is a very decadent dish! Add some salt and freshly ground black pepper, then stir well and taste for seasoning. Add a splash of reserved clam juice if the sauce needs thinning. Cook over low heat until heated through, about 3 minutes more.
  • Pour the pasta into a serving bowl. Pour on the sauce straight from the skillet, including all the luscious juice, and toss to combine. At this point your kitchen smells like heaven. Top with freshly grated Parmesan and garnish with lemon slices.

2 pounds small clams, such as cockles or manila clams
Kosher salt
1 pound dried linguine
1/4 cup extra-virgin olive oil, plus additional for drizzling
3 cloves garlic, thinly sliced
2 shallots, minced
1 to 2 large anchovy fillets in olive oil, drained and chopped
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh parsley
1 cup dry white wine

Steps:

  • Soak the clams in cool water for about 30 minutes to expel the sand. Gently scrub the shells to remove any debris.
  • Bring a large pot of heavily salted water (it should taste like the sea) to a boil. Add the pasta to the water and cook until slightly less than al dente.
  • In a large braiser or sauté pan, heat the oil over medium-high heat. Add the garlic, shallots, anchovies and red pepper flakes. Cook, stirring, until the shallots are soft, about 3 minutes.
  • Add the clams in a single layer, along with a sprinkle of the parsley and the wine. Cover the pan with a lid and steam, shaking the pan occasionally, until the clams open up, 4 to 5 minutes. Discard any clams that remain closed. Transfer the clams to a bowl and set aside.
  • Strain or transfer the pasta and add it directly to the pan with the clam sauce along with a drizzle of olive oil, tossing to combine. Let the pasta finish cooking with the sauce until the sauce thickens, 3 to 4 minutes.
  • Add the remaining parsley to the pan and toss, then top with the clams and another drizzle of oil. Serve.

1 lemon, zested and juiced (zest reserved for Round 2 Recipe Lasagna Roll Ups)
1 (10-ounce) can whole clams
1 tablespoon chopped fresh parsley
2 tablespoons unsalted butter
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the linguini, cover the pot, and bring it back to a boil. Remove the cover, stir, and cook until al dente, about 8 minutes. Reserve 1 cup of pasta cooking water. Drain the pasta and set aside. (Reserve 1 cup pasta for the Round 2 Recipe Savory Noodle Pie.)

Salt
1/4 cup extra-virgin olive oil, 4 turns of the pan
6 fillets flat anchovies, chopped
4 cloves garlic, chopped
1 teaspoon dried thyme leaves
1/2 to 1 teaspoon crushed red pepper flakes
1/2 cup dry white wine, 2 turns of pan
1 (15-ounce) can whole baby clams, with their juice
Handful flat-leaf parsley, chopped

Steps:

  • Bring a large pot of water to a boil. Add salt and the linguini and cook to an extra chewy al dente, 7 minutes or so. The linguini will continue to cook in sauce, later. To a large skillet heated over medium heat, add oil, anchovies, garlic, thyme and red pepper flakes. Cook together until anchovies melt into oil and break up completely. Add wine to the pan and give the pan a shake. Add clams and their juice. Drain pasta and add it to the clam sauce. Toss and coat the pasta in sauce with clams until the pasta absorbs the flavor and juices, 2 to 3 minutes. Remove from heat and season with salt, add parsley and serve.

2 lbs littleneck clams, scrubbed well
4 garlic cloves, chopped
1 large shallot, minced
2 anchovy fillets, chopped
1 (28 ounce) can whole tomatoes, coarsely chopped (preferably San Marzano)
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 -1 1/2 teaspoon crushed red pepper flakes, to taste
1 lb linguine
freshly chopped basil, for garnish

Steps:

  • A Neopolitan custom is to let the clams soak in very cold water with a tsp of salt and the juice of one lemon for about 1/2 hour.
  • This will remove any sand or grit in the clams.
  • This step is optional, but I do suggest that you at least scrub the outer shells of the littlenecks quite well with a vegetable brush.
  • Bring a large stockpot of water to a boil for the linguini.
  • In another pan, heat olive oil over medium high heat.
  • Add shallots and crushed red pepper and sauté until shallots are softened.
  • Add chopped garlic and anchovies, and saute until anchovies begin to melt into the olive oil, careful not to let garlic get too dark.
  • Carefully add chopped tomatoes with their liquid.
  • Stir to combine, and add dried basil and oregano.
  • Cover, reduce heat to low, and simmer sauce until ready to cook clams and linguini.
  • Add little neck clams to the simmering tomato sauce, stir to coat well, and cover.
  • While clams begin to steam in sauce, generously salt the boiling pasta water, add linguini, and cook until al dente, (about 7 minutes).
  • As clams begin to open, I remove them to a large bowl and cover, until pasta and remaining clams are cooked.
  • Drain pasta, and transfer to a serving bowl.
  • Top with tomato sauce and toss with chopped fresh basil.
  • Finally, add cooked clams over top the pasta, still in their shells.

  • Add to skillet and toss with sauce 2 to 3 minutes, until pasta is al dente and has absorbed the sauce and flavor.
  • Add parsley, pepper and salt, to your taste and serve with bread for mopping up remaining juices.

1 (16 ounce) package dry linguine
1 onion, chopped
6 garlic cloves, minced
1 red bell pepper, chopped
1 jalapeno pepper
1 tablespoon of chopped fresh basil
1 tablespoon of chopped fresh parsley
1 tablespoon of chopped fresh oregano
4 tablespoons olive oil
4 (6 1/2 ounce) cans minced clams
1/2 cup butter
salt and pepper
2 tablespoons dry white wine

Steps:

  • In a large skillet, sauté the onion and garlic in olive oil until the onions are translucent. Add the butter, stir until melted. Add the peppers and herbs, simmer for about 5 minutes.
  • While the peppers and herbs are simmering start cooking the linguini according to the package.
  • Drain the cans of minced clams, reserving half of the juice.
  • Stir in the clams, reserved juice, salt and pepper, and wine into the large skillet with the peppers and herbs. Simmer the mixture for 25 minutes, until the sauce has reduced 1/3 and has thickened.

1 onion, finely chopped
2 garlic, minced
1/4 teaspoon thyme

1 red pepper, roughly chopped
6 large mixed mushrooms, roughly chopped
125 g light cream cheese, cubed (8 poz)
