2 tablespoons unsalted butter
1 medium onion, finely diced
2 celery stalks (reserve tender leaves) trimmed, quartered lengthwise, then sliced into 1/4-inch pieces
3 tablespoons all-purpose flour
2 cups chicken or vegetable stock
2 (10-ounce) cans chopped clams in juice
1 cup heavy cream
2 bay leaves
1 pound Idaho potatoes, cut into 1/2- inch cubes
Salt and freshly ground black pepper
2 to 3 tablespoons unsalted butter
1/2 baguette, cut into 1-inch cubes
3 tablespoons freshly chopped flat-leaf parsley
Salt and freshly ground black pepper

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Stir in the flour to distribute evenly. Add the stock, juice from 2 cans of chopped clams (reserve clams), cream, bay leaves, and potatoes and stir to combine. Bring to a simmer, stirring consistently (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper, cook until clams are just firm, another 2 minutes.;
  • Melt the butter in a large skillet and toss the bread cubes in the butter until browned and toasted, about 2 to 3 minutes. Add parsley and season with salt and pepper.;

6 -7 pieces bacon, cut into small pieces
1 medium onion, chopped
2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed
2 (10 1/2 ounce) cans cream of celery soup
1 cup heavy cream
1 cup milk
1 tablespoon butter
1 teaspoon dried dill weed

Steps:

  • Add bacon to sauce pan and cook on medium low heat until crispy.
  • Add onion and cook until translucent.
  • Add clam juice from both cans.
  • Add potatoes.
  • Cook and cover until potatoes are fork tender, about 15-20 minutes.
  • Stir occasionally so potatoes won't stick.
  • Add clams, soup, cream, milk, and dill weed.
  • Stir together.
  • Add butter and let melt into the chowder.
  • Cook for about 30-45 minutes or until thickened.
  • Stir occasionally.

1 pound whitefish fillets, skin removed
2 pounds potatoes, peeled and cut into 1-inch cubes (about 5 medium)
2 celery ribs, finely chopped
1 large onion, chopped
3 tablespoons all-purpose flour
1 can (12 ounces) evaporated milk
2 can (6-1/2 ounces each) minced clams, undrained
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 can (4 ounces) tiny shrimp, rinsed and drained
2 tablespoons butter
1 tablespoon diced pimientos
2 teaspoons salt
1/2 teaspoon pepper
Minced fresh parsley

Steps:

  • Place whitefish in a Dutch oven; add water to cover. Cook, uncovered, over medium heat, 8-10 minutes or until fish just begins to flake with a fork. With a slotted spoon, remove fish and break into bite-size pieces; set aside., Pour cooking liquid into a 4-cup measuring cup. If necessary, add additional water to measure 4 cups; return to pan. Add potatoes, celery and onion; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until vegetables are tender., In a small bowl, whisk flour and milk until smooth. Stir into chowder. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until slightly thickened. Add clams, crab, shrimp, butter, pimientos, salt, pepper and reserved fish; heat through, stirring occasionally. Sprinkle with parsley.

2kg clams
1 bay leaf
500g potatoes , peeled and cut into cubes around 1cm
300g parsnips , cut into 1cm cubes
½ tbsp olive oil
100g unsmoked bacon lardons
1 onion , finely chopped
100g crème fraîche
lemon , to taste
chives , to serve

Steps:

  • Heat 1 litre of water in a large pan over a high heat. Once boiling, tip in the clams. Cover with a lid and cook for 2-3 mins until the majority of the clam shells have opened. Pour into a sieve over a large jug, reserving the cooking water. Tip the reserved liquid through a muslin-lined sieve into a large non stick saucepan and set aside - this is your stock for the soup.
  • Discard any clams which haven't opened, then remove three-quarters of the clams from their shells and roughly chop.
  • Put the bay leaf in the pan with the clam stock and tip in the potato and parsnip cubes. Cook for 5-7 mins until tender. Use a slotted spoon to remove half of the potato and parsnip and set aside. Fish out the bay leaf, spoon off any scum from the surface of the soup, then blitz the remaining stock and vegetables in a food processor until smooth, or using a stick blender.
  • Using the same saucepan over a medium heat, pour in the oil, add the bacon lardons, fry until crisp, then remove with a slotted spoon and set aside. Add the onion to the pan, cook for 5 mins until soft, then pour in the blitzed chowder, potato and parsnip. Heat until simmering, then tip in the chopped clams, take off the heat and stir through the crème fraîche, adding lemon juice to taste. Serve, topped with the crispy bacon, reserved clams in their shells and a scattering of chives and black pepper.

4 medium potatoes, pared and cut into small cubes
1 small onion, diced
1 pt clams, cleaned and picked over
1 1/2 c evaporated milk or half and half
2 Tbsp butter

Steps:

  • 1. Fry bacon or salt pork, and add potatoes. Add the small onion, salt and pepper and clams. If using canned clams, drain. Add water to cover. Let cook until tender. Add butter and milk. You can use this same recipe for using scallops instead of clams.

1 cup chopped onion, diced small (about 1/2 a large onion)
1 teaspoon minced garlic
1/2 teaspoon dried thyme

1 10 ounce can whole clams, reserve juice
2 1/2 cups chicken broth, or vegetable broth
1 1/2 cups half & half
2 tablespoons chopped parsley

Steps:

  • In a large soup pot or French oven, fry the bacon until crisp. Remove the bacon and set aside and then crumble once cooled. Keep 2-3 tablespoons of bacon fat in the pan and remove the excess. Sauté the onions, garlic, and dried thyme until the onions are softened and starting to turn translucent, 2-3 minutes. Add the potatoes and sauté until slightly softened, another 5 or so minutes. Sprinkle the flour over the vegetables and cook for several more minutes, or until the flour is lightly browned. Add the clams, reserved clam juice, and the chicken or vegetable broth. Simmer until the potatoes are very tender, another 5 minutes. Season to taste with lots of salt and pepper. Add the half & half, and parsley and serve, topping with the crumbled bacon. Refrigerate leftover clam chowder in a sealed container for up to three days.

2 - stalkes of celery chopped
1 - red bell pepper chopped or green or yellow, add a little more for color
2 clove(s) garlic chopped
4-6 - sliced thick bacon (reserve grease)
2 lbs - potatoes (your choice red or russet)
3 cup(s) water
1 box(es) philly cream cheese (generic ok)
2 cup(s) half & half
2 can(s) chopped clams (sm cans)
2 - carrots chopped
1/4 - cube of butter (everything is better with butter)
1/4 cup(s) flour
- salt & pepper to taste
Pinch - cayenne pepper
Pinch - nutmeg

Steps:

  • Cook bacon, save grease. Add onions, celery, red pepper, garlic into bacon grease, cook for approx. 10 minutes. In a separate pan boil cubed potatoes and chopped carrots for about 15 minutes or until potatoes are tender. Microwave half & half, butter and cream cheese in small microwaveable bowl on high for a minute and half or a little more or until half & half and cream cheese are melted together, you will have to stir with wire whisk. Add mixture to potatoes and water. Also mix in cooked veggies. Add clams with juice, Add spices. Cook additional 2 minutes or until heated through, stirring frequently. Do not boil!!

1 large onion, diced

1/2 cup instant mashed potatoes
4 chef potatoes, peeled and chopped
1 quart clam juice
3 cups chopped clams
1 1/2 cups half-and-half
1/4 cup fresh parsley, chopped
1 drop Tabasco sauce
1/2 teaspoon celery salt
1/2 teaspoon thyme
1 bay leaf
2 tablespoons chopped parsley (garnish)

Steps:

  • Melt butter and bacon fat in large pot.
  • Sautee onion, celery garlic (and 1/2 cup shredded carrots, if using) until tender.
  • Add seasonings (parsley, Tabasco, celery salt, thyme & bay).
  • Add flour and instant mash potatoes.
  • Turn off flame and stir until flour is no longer visible.
  • Add the clam juice and stir.
  • Turn flame back on to high and continue stirring (constantly) to avoid sticking.
  • Bring to a boil.
  • Add potatoes and stir.
  • Cook for 15 minutes or until potatoes are tender.
  • Add clams.
  • Stir.
  • Add cream.
  • Stir.
  • Simmer for 1/2 hour.
  • Add salt and pepper, to taste.
  • Serve garnished with fresh parsley and enjoy!

3 cups soft shell clams or 3 cups long-neck clams, drained, and shucked
vegetable oil, for deep frying
3 eggs
1 cup evaporated milk
1 teaspoon salt
1/2 cup cornflour (not cornmeal)
lemon wedge
tartar sauce
ketchup

Steps:

  • Preheat oven to its lowest setting.
  • Line a lg. cookie sheet with double thickness of paper towels, and place it in the oven.
  • Pour vegetable oil into a deep fryer, or a lg. heavy saucepan, to a depth of about 3".
  • Heat oil to 375°F.
  • In a bowl, beat the eggs until well blended, then stir in the milk and salt.
  • Spread the flour on a lg. strip of wax paper.
  • Drop the clams into the egg-milk mixture, and let them soak for 1 minute.
  • Pick up a handful of the soaked clams, and roll them in the flour until well coated. Shake off any excess flour before dropping in the oil.
  • Immediately drop the floured clams into the hot oil, and deep-fry for 1-2 mins., until golden brown.
  • As they brown, transfer them to the towel-lined pan, and keep them warm in the oven, while the rest are cooking.
  • Serve with lemon wedges, tarter sauce, and ketchup.

3 (8 ounce) bottles clam juice

3 large minced garlic cloves
1 tablespoon thyme leaves
2 bay leaves
4 cups red potatoes, diced peeled
1 cup heavy cream
4 tablespoons flour
1/4 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 cup chives or 1/4 cup green onion, finely chopped for garnish

Steps:

  • In a large heavy pot cook the bacon until crisp and the fat is rendered, remove and set aside.
  • Add the onions and celery season with salt and pepper and cook until softened, about 5 minutes.
  • Add the garlic, thyme and bay leaves and crushed red pepper flakes, and cook until the vegetables are thoroughly wilted, about 3 minutes, being careful not to brown.
  • Add the flour and cook an additional 3 minutes.
  • Add clams with all the juice, and the potatoes and bring to a boil, simmer for 20 to 30 minutes or until the broth thickens slightly and the potatoes are very tender.
  • Reduce heat to low and stir in heavy cream add crush bacon and season with pepper and salt.
  • Cover, and Stirring often.
  • (If you like a thicker broth, mash some of the potatoes against the side of the pot with a wooden spoon.) Remove from the heat. (Do not allow to boil after adding the cream as it could break).
  • Set aside for 1 hour, covered, to allow the flavors to marry. Place the pot over low heat, and slowly reheat, being careful not to bring to the boil. Serve hot, garnished chives.

This is delicious on a cold winter or fall day! If thickened, this is great in a bread bowl. I love mine with oyster crackers on top, and a BIG dill or sour pickle on the side! You can add 2 cans cream style corn too, as I did in the pictures I posted for another delicious chowder variation! If you cook ahead and give chowder a chance to sit in the fridge, the flavors will meld and it is even more AWESOME the 2nd day! I often use Fat Free Half And Half in place of the whole milk, and its great too. NOTE: This chowder makes lots of delicious thin milky, buttery broth, which is traditional in New England style chowders. If you make changes to the amounts of milk, butter, etc. it will not taste as rich and delicious, and changes the recipe.

8 large potatoes, peeled, and cubed into 1-inch squares
2 large onions, cut in 1/2, then thinly sliced
2 (10 ounce) cans geisha brand baby clams, with juice
2 quarts whole milk, works best
1 (12 ounce) can evaporated milk
1/2 cup margarine
salt and pepper, to taste
1 (16 ounce) bottle clam juice (optional)
2 (14 3/4 ounce) cans cream-style corn (optional)

Steps:

  • In a lg. pot, put in potatoes, and onions. Add enough water to cover all.
  • Add salt and pepper, and let come to a boil. Boil about 15 minutes.
  • Drain out water, until it is just covering all.
  • Add clams with juice and bottled clam juice (if you are using), milk and evaporated milk, Stir.
  • Add stick of margarine, and stir as it melts to blend. Heat for 20 mins on med. heat.
  • If you want to thicken the chowder, do so now, by adding about 1/2 cup flour into 2 cups COLD water, mixing well to remove lumps, then add about 1/3 at a time into chowder, until you get desired consistency.
  • Add salt and pepper, to taste.
  • Makes a big pot.

6 dozen clams
1 cup diced onion
8 cups potatoes
1/2 cup celery
3 garlic cloves
12 cups clam juice
3 cups fat-free half-and-half
1 teaspoon salt
1 teaspoon pepper
3 tablespoons flour
2 tablespoons butter

Steps:

  • In a large steamer pot add your cleaned clams - with 1 cup of white wine and 2 tsps crushed garlic. Steam until clams are fully opened.
  • Remove clams from the pot and set aside to cool.
  • Reserve all liquids from the clam steam (this is the clam liquor - add bottled clam juice to equal 12 cups).
  • In a 6 qt or larger pot add 1 tbsp olive oil, over medium high heat, add onions, celery, garlic and potatoes. Cook for approximately 5 minutes or until onions are clear.
  • Add clam liquor and cook till potatoes are tender.
  • In a small pot melt butter add flour, salt and pepper cook for two minutes slowly add several ladles of the clam juice from the soup pot to the rue and cook till it begins to thicken, remember to stir constantly while thickening or you will burn your rue. Return the rue to the soup pot and allow the two to come together. Add cream and cook for 10 minutes.
  • The last touch is to add your chopped clams - I add them last so they don't turn to rubber. Serve with a nice crusty bread.

  • Place diced bacon in large saucepan with the butter. Cook on medium heat until almost crisp; add onions, and cook 5 minutes. When onions are translucent, stir in water, clam juice and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered until the liquid has reduced by half. Potatoes should be fork tender. Pour in half-and-half and simmer for a further 5 minutes. Adjust seasoning and add chopped clams just before serving, (otherwise clams will be tough). Garnish with crackers and chopped chives.

30 littleneck clams (about 3 pounds), scrubbed
4 slices thick-cut bacon, chopped
2 tablespoons unsalted butter
3 stalks celery, finely chopped
1 medium onion, finely chopped
2 teaspoons chopped fresh thyme
1/3 cup all-purpose flour
1 large russet potato, peeled and cut into 1/2-inch cubes
2 cups half-and-half
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping (optional)

Steps:

  • Rinse the clams several times under cold running water. Transfer to a large pot and add 3 cups water. Bring to a simmer over medium-high heat, then cover and cook until the clams open, about 6 minutes. Strain through a fine-mesh sieve into a large bowl; reserve the broth. Transfer the clams to a bowl and cover with plastic wrap so they don't dry out.
  • Cook the bacon in a large pot over medium heat until crisp, about 10 minutes; remove with a slotted spoon and drain on paper towels. Melt the butter in the same pot over medium heat. Add the celery, onion and thyme and cook, stirring occasionally, until soft, about 10 minutes. Add the flour and cook, stirring, 1 minute. Stir in the reserved clam broth, 1 1/2 cups water and the potato. Bring to a simmer and cook until the potato is tender and the soup thickens slightly, about 15 minutes.
  • Meanwhile, remove the clams from their shells and roughly chop.
  • Reduce the heat under the soup to medium low. Whisk in the half-and-half and warm through (do not boil). Remove from the heat. Stir in the chopped clams; season with salt and pepper. Ladle the soup into bowls and top with the reserved bacon and chives.

  • Microwave milk and cream cheese in microwaveable bowl on HIGH 1-1/2 min. or until milk is heated through. Whisk until cream cheese is completely melted and sauce is well blended. Add to potato mixture; stir.
  • Stir in clams; cook 2 min. or until heated through, stirring frequently. (Do not let chowder come to boil.) Remove pan from heat.
  • Top with green onions and remaining bacon.

Strain the cooking liquid into a bowl through a sieve lined with cheesecloth or a coffee filter and set aside.
  • 2. Rinse and dry the pot thoroughly and place over medium heat. Add the bacon and cook until browned but not crispy and most of the fat has been rendered, about 10 minutes. Using the slotted spoon, transfer to a paper towel-lined plate to drain.
  • 3. Add the onion and celery to the pot with the bacon fat and cook, stirring often, until the onion is softened and fragrant, about 10 minutes. Whisk in the flour and cook until lightly browned. Add the reserved clam broth 1 cup at a time, whisking vigorously to remove any lumps of flour. Add the potatoes, thyme sprigs and bay leaf and simmer for 10 minutes.
  • 4. Remove the clams from their shells, reserving any liquid that accumulated in the bowl, and chop the meat coarsely. Discard the shells. Add the clams and any liquid in the bowl to the pot along with the cream. Cook, stirring gently once or twice, just until the potatoes are tender and the clams are heated through, 3 to 4 minutes longer. Remove and discard the thyme sprigs and bay leaf. Stir in the parsley.
