Tart pomegranate seeds add a delicious crunch to this salsa that also features sweet mandarin oranges, red onions, jalapenos and cilantro. Great served with tortilla chips.

2 pomegranates, peeled and seeds separated
2 (8 ounce) cans mandarin orange segments, drained and coarsely chopped
1 red onion, chopped
1 jalapeno pepper, minced
1 tablespoon minced pickled jalapeno pepper
1 bunch cilantro, minced
1 lime, juiced
1 pinch ground cumin

Steps:

  • Mix pomegranate seeds, mandarin oranges, onion, fresh jalapeno, pickled jalapeno, cilantro, lime juice, and cumin together in a bowl.
  • Cover bowl and refrigerate for several hours or overnight to let flavors blend.

Pomegranate and Roasted Pepper Salsa image

3 pomegranates, peeled and seeded
6 red peppers
1 medium red onion, very small diced
1 tablespoon finely chopped mint
2 tablespoons olive oil
2 limes, juiced
Salt and pepper

Steps:

  • Cut pomegranate in quarters and remove seeds. Extract the juice from the pomegranate seeds by placing the seeds on a strainer or bowl and pressing down with a ladle or mallet.
  • Roast the red peppers, place in a bowl, cover with plastic for 8 minutes, and then peel, seed, and dice the roasted red pepper into very small pieces.
  • In a mixing bowl, combine the pomegranate juice, diced roasted red pepper, diced red onion, chopped mint, olive oil, and lime juice. Season with salt and pepper.
  • Serve with cold-water Eastern or Atlantic oysters, preferably either Malpecque or Bluepoint, on the half shell.

1 small red onion, chopped
1 pomegranate, skin and light-colored membrane removed
6 tablespoons fresh lime juice
2 teaspoons grated lime zest
1 jalapeno pepper, chopped
1 serrano pepper, chopped
1 small tomato, diced
2 tablespoons olive oil
salt to taste
ground white pepper to taste

Steps:

  • In a medium bowl, toss together mint, cilantro, Italian flat leaf parsley, red onion, pomegranate, lime juice, lime zest, jalapeno pepper, serrano pepper, tomato, and olive oil. Season with salt and white pepper. Cover, and chill in the refrigerator at least 2 hours before serving.
