LINA'S AWESOME SMOOTH LENTIL AND VEGGIE SOUP!
There is no other way to describe this soup besides just saying WOW. My mom taught me this recipe and well, my mom is the best cook on the planet. Anything she makes is wonderful. You can enjoy this soup guilt free as it is lower in calories and is loaded with veggies!

Steps:
- Rinse Lentils and add them to a big cooking pot. Add all the veggies (do not add the parsley). Add the Chicken broth. Cook on medium high for approximately 30 to 40 minutes or until the veggies are very tender. Once the veggies are very tender, take the pot off the stove and set on a heat proof area. Mix the soup with a hand blender until very smooth (You can use a blender but it's just easier with a hand blender). Put the smooth soup back on the stove on a low setting and add the butter and mix until the butter has melted in with the soup. Add your cumin, garlic and salt. Mix into the soup. Finely, add your chopped parsley and mix.
- Serve hot. So good.

LENTIL VEGETABLE SOUP

- In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.
- In a large stockpot on medium heat, saute the onions, leeks, and garlic with the olive oil, salt, pepper, thyme, and cumin for 20 minutes, until the vegetables are translucent and very tender. Add the celery and carrots and saute for 10 more minutes. Add the chicken stock, tomato paste, and lentils. Cover and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, until the lentils are cooked through. Check the seasonings. Add the red wine and serve hot, drizzled with olive oil and sprinkled with grated Parmesan.
MOROCCAN LENTIL SOUP WITH VEGGIES

- Heat 1/4 cup olive oil in a large pot over medium heat. Cook and stir carrots, onion, salt, parsley, black pepper, ginger, tarragon, and cumin in the hot oil until the onion is translucent, 5 to 7 minutes.
- Stir lentils and tomatoes into the carrot mixture. Pour vegetable broth over the vegetables, stir, and bring to a boil. Reduce heat to low, place a cover on the pot, and simmer until the lentils are tender, 45 to 50 minutes.
- Stir spinach and zucchini into the broth mixture; simmer until the zucchini is tender, about 7 minutes more. Remove pot from heat and season soup with salt. Drizzle 1 teaspoon olive oil over the soup before serving.

- Heat half the olive oil in a large pot over medium heat. Add the garlic, onion and carrots and saute until softened, about 5 minutes. Add the beef broth and the lentils and bring to a boil.

- Place lentils in a large bowl. Add 2 1/2 cups water; let soak for 12 hours.
- Melt 6 tablespoons butter in a large Dutch oven over medium heat. Add carrots, onion, celeriac, leeks, and celery. Cook, stirring, until vegetables have softened and onions are translucent, 2 to 3 minutes.
- Drain and rinse lentils; add to Dutch oven. Cook, stirring to combine, 2 to 3 minutes. Place thyme, garlic, and peppercorns in a piece of cheesecloth; tie with kitchen twine to enclose. Add to skillet along with chicken stock. Place a parchment paper round over liquid and cook for 10 minutes. Season with salt and continue cooking until lentils are tender, about 5 minutes more.
- Transfer 1/3 of the soup mixture to the jar of a blender; blend until smooth, adding chicken stock, if necessary. Transfer blended soup back into Dutch-oven with remaining soup; stir to combine. Add spinach leaves, remaining 2 tablespoons butter, and drizzle with olive oil. Keep warm.
- Fill a large pot with water and add vinegar; bring to a boil over medium-high heat. Gently crack eggs into pot, one at a time, and reduce heat to medium. Cook eggs for 3 minutes; using a slotted spoon, transfer cooked eggs to a paper towel-lined plate.
- Serve soup immediately topped with a poached egg.
SIMPLE LENTIL VEGETABLE SOUP
This satisfying bowlful is a simpler, smaller-batch, and vegan version of Ina Garten's Lentil Vegetable Soup.

- Rinse lentils. Place in a heat-proof bowl and pour boiling water over the top. Let sit 20 minutes.
- While the lentils soak, chop and saute the vegetables. To saute, set a large soup pot over medium heat.
- When hot, add the olive oil. Add the onion, carrots, and celery and cook, stirring occasionally, until tender, about 10 minutes. Add garlic, thyme, cumin, salt, and pepper. Cook, stirring

- Peel and dice all vegetables and thoroughly wash leeks to remove any grit.
- Place all ingredients except beans and lentils into a large stock pot, cover and bring to the boil.
- Reduce heat and simmer until vegetables are tender (approx 25 minutes).
- Add washed and drained lentils to the pot and stir well. Check and stir at 10 minute intervals so lentils don't stick to the base of the pot.
- Cook until lentils are soft (approx 25 minutes) then add drained beans. Stir well and continue cooking to produce a thick soup. Can be served immediately with crusty bread although the flavour improves if served the next day.
