SPAGHETTI ALL'ARRABBIATA (SPICY SPAGHETTI)
A Roman classic dish, spaghetti all'arrabbiata is enjoyed throughout Italy. Arrabbiata literally means 'angry' in Italian, referring to the sauce made with tomatoes and hot red chili peppers that packs a spicy kick.

Steps:
- Pour the oil into a saucepan and fry the garlic over a medium heat for 1-2 mins until fragrant, but not browned. Add the chilli, fry for another minute, then add the tomatoes along with 1 tsp salt and ½ tsp sugar. Stir well to combine the ingredients and simmer gently for 20 mins, stirring regularly. The sauce will thicken slowly as it cooks.
- Taste and adjust the seasoning if needed. Serve stirred through pasta, or blend it first to create a smoother sauce if you prefer. Will keep chilled for up to five days.

- Boil a big pot of salted water and start cooking your penne (use a good quality pasta like De Cecco or Rustichella d'Abruzzo, not Barilla if it's made in the US).
- In a large sautè pan, heat the oil over medium heat then add the garlic, cayenne pepper and chopped parsley.
- Purée the San Marzano dell'Agro Sarnese-Nocerino DOP for a smooth sauce (I use an immersion blender right in the can-just don't lift it up while processing).
