GENNARO'S SIMPLE TUNA BUCATINI
Anchovies and tomatoes are a match made in heaven in this summery pasta dish - with tuna and a zesty hit of lemon thrown in, you will love it!

Steps:
- Cook the bucatini in a large pan of boiling salted water until al dente. Meanwhile, finely slice the garlic and chilli, then roughly chop the anchovies and tomatoes. Heat 3 tablespoons of oil (use the oil from the tin of tuna for added flavour, if you can) in a frying pan over a medium heat, then add the garlic, chilli, anchovies and capers. Fry for 2 minutes, then add the tomatoes and toss well.
- Reserving some of the cooking water, drain the bucatini and add to the sauce. Toss well over the heat until lovely and glossy, adding a splash of the cooking water to loosen, if needed. Flake in the tuna, then add some lemon juice and most of the rocket. Toss well to warm the tuna through and wilt the rocket, then season carefully with salt and more lemon juice. Serve with a drizzle of oil, and a scattering of the reserved rocket.

SPAGHETTI WITH PRAWNS, CHILLI & ROCKET
A fresh, summery spaghetti dish packed full of seafood and spice

Steps:
- Cook the spaghetti in boiling salted water according to pack instructions.
- While the spaghetti is cooking, split the chillies down the centre lengthways. Using a teaspoon and starting at the top, scoop the seeds from the flesh - add these if you like your food hot. Using a sharp knife, cut the chillies in thin strips, bundle them together and cut across to make squares.
- Drain the spaghetti, toss with a drizzling of olive oil and set aside. Heat the oil in a deep frying pan or sauté pan over a high heat and add the prawns. Stir in the chillies, season, then add the spaghetti. Remove from the heat, fold through the rocket and stir.

WILD ROCKET AND CHILLI SPAGHETTI

- Cook the spaghetti in boiling salted water according to the packet instructions. Prepare your sauce by gently heating a little olive oil then add the garlic, chilli, and anchovies. Add the wild rocket, toss and add the lemon zest. Remove from the heat and add the lemon juice.
- Drain the spaghetti then toss it with the sauce, taste and season if needed. Place on a plate and pile the extra handful of wild rocket on top with a good sprinkling of grated Parmesan.
ROCKET & CHILLI SPAGHETTI
I adapted this recipe from a non veggie friendly Jamie Oliver recipe which had parmesan and anchovies in it. I love this as its got a really perky flavour and its quick to make!

Steps:
- Heat a wide saucepan or frying pan over a medium heat and add half the extra virgin olive oil.
- Add the garlic, chilli and capers and fry gently for a minute or so. Add 2 handfuls of the rocket, the lemon zest and a good squeeze from half the lemon (you dont need all of it)and add half of the nutrional yeast, then remove from the heat. The rocket will wilt from the heat - mix it well with the garlic, chilli and capers.
- Meanwhile, cook the spaghetti in plenty of salted boiling water, according to the packet instructions, and drain.
- Toss together with the rocket and chilli sauce.
- Season well with salt and pepper and serve with some of the reserved fresh rocket with more nutritional yeast and olive oil on top.
