A fun new way to incorporate the flavors of jalapeno poppers into an indulgent appetizer or main meal. It's a fun new take on comfort food fit for any fun occasion.

1 32oz pkg of frozen tater tots
16 oz Velveeta cheese
1/4 cup cream cheese
1/2 cup sour cream
1/4-1/3 cup crisp crumbled bacon
2 green onions (thinly sliced)
1 jalapeño pepper (seeded & thinly sliced)

Steps:

  • Spread the tater tots out on a large baking sheet in a single layer, and bake according to the package directions. Set aside.
  • In a small skillet over medium low heat, stir the Velveeta cheese until it's melted and completely smooth.
  • In a separate, small skillet heat the cream cheese over medium low heat, stirring until it's melted and completely smooth. Remove the skillet from heat, let it rest for a minute and then stir in the sour cream until evenly combined.
  • Pour the melted cheese sauce evenly out over the tater tots. Spread the sour cream mixture out over top of the cheese. Sprinkle the green onions and crumbled bacon on next. Finally, top with the sliced jalapeno.
  • Serve immediately.

Here are all the good foods -- jalapeño poppers, cheese, bacon -- rolled up into dinner. Cooking it on the grill gets the bacon crispy while the cheese stays gooey and melted on the inside.

4 large jalapeño peppers (about 3 ounces each)
4 ounces cream cheese, divided into 4 pieces, chilled
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 small boneless, skinless chicken breasts (about 5 ounces each)
4 thin slices Colby Jack cheese
20 slices bacon (about 1 1/2 pounds)

Steps:

  • Wear gloves to protect your hands and use a small paring knife to cut the stem-end off the jalapeño; you should see the white ribs attached to the walls of the jalapeño. Use the paring knife to remove the ribs from the walls. Make a cut down the length of the jalapeño from the top to the tip. Carefully, without breaking the jalapeño in half, scrape out the ribs and seeds. Transfer to a microwave-safe bowl, add 3 tablespoons water, cover tightly with plastic wrap and microwave on high power until the jalapeños turn olive green and are lightly softened but are still firm and hold their shape, 2 to 3 minutes. Let cool.
  • Stuff each cooled jalapeño with a piece of cream cheese; squeeze the walls around the cream cheese to force out any air pockets and to seal the jalapeño walls together.
  • Mix together the cumin, 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl. Pound the chicken lengthwise down the breast to make a rectangular 1/4-inch-thick cutlet. Sprinkle with a quarter of the seasoned salt. Repeat with the remaining chicken and seasoned salt.
  • With one of the narrow ends of the chicken facing you, lay a piece of Colby Jack cheese at the bottom of the cutlet. Place 1 stuffed jalapeño crosswise on top of the cheese about 2 inches from the bottom. Tightly roll up the chicken and the cheese around the jalapeño, folding in the sides as you roll. Repeat with the remaining chicken and jalapeños.
  • Lay 5 strips of bacon on a clean work surface so that the strips are slightly overlapping (about 1/4-inch) and are wide enough to completely cover a chicken roll. Place 1 chicken roll at the bottom of the bacon blanket. Wrap the bacon tightly over the chicken roll. Repeat with the remaining bacon and chicken rolls.
  • Prepare a grill for indirect grilling and heat to medium-high heat.
  • Place the chicken rolls, bacon seam-side down, on the cooler side of the grill. Cover and cook until the bacon is beginning to brown and the cheese is beginning to melt and ooze from the sides, 15 to 20 minutes. Transfer the chicken rolls to the hot side of the grill and cook until lightly charred, 1 to 2 minutes per side. Let cool 10 minutes before serving.

8 slices bacon, chopped
2 jalapenos, sliced into rounds (seeded if preferred)
1 small onion, chopped
1 1/2 pounds chicken breast, thinly sliced
2 teaspoons taco seasoning
Pinch kosher salt
Zest and juice of 2 limes
4 ounces cream cheese, at room temperature
1/2 cup sour cream
Jalapeno hot sauce, to taste
12 crispy taco shells, warmed
1 cup shredded Cheddar
2 large jalapenos, minced

Steps:

  • For the filling and cream cheese topping: In a large skillet over medium heat, add the bacon and cook until crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • Raise the heat to medium high and add the jalapenos and onions. Cook, stirring for a minute or two, then add the chicken in an even layer. Sprinkle over the taco seasoning, add a pinch of salt and cook, without stirring, for 2 minutes. Stir, then continue to cook until the chicken is cooked through, an additional 2 to 3 minutes. Squeeze over the lime juice and remove from the heat.
  • Add the cream cheese and sour cream to a bowl and mix until well combined. Stir in the lime zest and season with the hot sauce.
  • For the tacos: Serve the chicken mixture, bacon and cream cheese topping alongside each other with the crispy taco shells, shredded Cheddar and minced jalapenos, then have everyone make their own tacos.

20 fresh jalapenos, 2 to 3 inches in size
Two 8-ounce packages cream cheese, slightly softened
1 pound thin (regular) bacon, slices cut in half

Steps:

  • Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
  • If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
  • Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
  • Serve immediately, or they're also great at room temperature.

12 jalapeno chillies (we used jalapeno but other mild green chillies would work)
150g full-fat cream cheese
50g grated mozzarella
30g plain flour
2 large eggs , lightly beaten
100g fresh breadcrumbs
oil for deep frying
To serve lime wedges (optional)

Steps:

  • Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
  • Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
  • Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
  • Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
  • Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.

There are many delicious versions of jalapeño poppers: Some are breaded and deep-fried, others use two kinds of cheese, and another, called armadillo eggs, calls for enrobing the cheese-stuffed peppers with ground meat and bacon. These easy-baked poppers are filled with tangy cream cheese - brightened with scallions, cilantro, garlic and lime zest - then wrapped with bacon for looks, salt and crunch. For a vegetarian variation, sprinkle the stuffed jalapeños with finely crumbled tortilla chips before baking to complement the crisp-tender chiles and the molten-cheese filling.

12 medium jalapeños (no longer than 3 inches each, about 2/3 pound total)
8 ounces cream cheese, softened
Scant 1/4 cup finely chopped cilantro
3 scallions, whites and greens parts, trimmed and very thinly sliced (about 1/4 cup)
1 garlic clove, finely chopped
1 lime, zested (about 1/2 teaspoon), optional
Kosher salt and black pepper
12 thin slices uncooked bacon (thick-cut bacon won't cook as evenly), halved crosswise

Steps:

  • Heat the oven to 400 degrees. Line a large baking sheet with aluminum foil, then top with a wire rack.
  • Halve jalapeños lengthwise. (Do your best to halve them through their stems for added visual appeal.) Using the tip of a small spoon, scoop out and discard the seeds. Set the halved jalapeños aside.
  • In a medium bowl, stir together the cream cheese, cilantro, scallions, garlic and lime zest, if using; season generously with salt and pepper.
  • Season the inside of each halved jalapeño with salt and pepper, then fill each with about 2 teaspoons of the cream cheese mixture. (Fill until there's a slight dome on top.) Wrap each stuffed jalapeño with 1 piece of bacon, setting one tip of bacon on top of the cream cheese filling, then wrapping the bacon under and over the popper at an angle, so the bacon covers the filling on top in two layers. (The bacon will shrink as it cooks, so you want to make sure the top of the popper is well covered.) Arrange poppers evenly on the wire rack, nestling each popper between two parallel wires to keep it upright so the cream cheese doesn't spill during baking.
  • Transfer to the oven, and bake until bacon is cooked through, about 25 minutes. Broil on the rack closest to the broiler until crisp, about 2 minutes. Let cool for 5 minutes, then serve warm.
