This weeknight-fast Swiss steak recipe is made on the stovetop in just 30 minutes (traditional Swiss steak braises in the oven for an hour or more). Sautéed peppers, onions and tomatoes make a quick, savory sauce. Ask your butcher for 4 equal-size cube steaks (about 4 ounces each) so they cook evenly.

4 cube steaks (1-1 1/4 pounds total)
½ teaspoon salt, divided
¼ teaspoon ground pepper
¼ cup all-purpose flour
2 tablespoons extra-virgin olive oil, divided
1 large onion, cut into 1/2-inch-thick slices (don't separate)
1 medium green bell pepper, thinly sliced
1 clove garlic, minced
1 teaspoon chopped fresh thyme
1 14-ounce can whole tomatoes
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 200 degrees F.
  • Sprinkle steaks with 1/4 teaspoon salt and pepper. Place flour in a shallow dish and dredge the steaks in it.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Reduce heat to medium and cook the steaks until browned, 2 to 4 minutes per side. Transfer to a baking sheet and keep warm in the oven.
  • Heat the remaining 1 tablespoon oil in the pan over medium-high heat. Add onion slices and cook, turning once and pressing with a spatula a few times, until browned on both sides, 4 to 6 minutes total. Stir in bell pepper, separating the onion rings as you stir, and cook, stirring occasionally, until the vegetables are tender, 3 to 4 minutes. Stir in garlic, thyme and the remaining 1/4 teaspoon salt; cook, stirring, for 15 seconds. Add tomatoes with their juice and Worcestershire. Cook, stirring, breaking up the tomatoes and scraping up any browned bits, until thickened, about 5 minutes. Serve the sauce over the steaks.

Beef and Tomato Stew image

This classic hearty beef and tomato stew is true comfort food at its finest! Perfect recipe for a chilly weekend at home and can easily be made in your instant pot, slow cooker or even right on the stove!

Number Of Ingredients 17

1 Tbsp olive oil (if searing the meat first)
2 lb. cubed stew beef
2 (15 oz) cans stewed tomatoes
1 (6 oz) can tomato paste
4 cups beef broth
1 Tbsp Worcestershire sauce
1 medium onion, chopped
3 large carrots, sliced
3 ribs celery, chopped
1 cup fresh or frozen peas
1 lb. baby potatoes
1 tsp. salt
1/2 tsp. pepper
2 tsp. garlic powder
1 Tbsp fresh thyme (or 1 tsp dried)
2 tsp fresh rosemary (or 1/2 tsp dried)
1 bay leaf

Steps:

  • To make in your instant pot: Drizzle olive oil in the bowl of your instant pot and turn on the sauté function. Wait until it's nice and heated then add meat, browning on all sides. Add the rest of your ingredients, seal the instant pot and select the meat/stew setting (about 35 minutes). Once cooking is complete, let the instant pot sit for about 12 minutes then release the steam by placing the valve to the venting position.
  • To make in your slow cooker: Add cubed beef (except the oil) along with the rest of ingredients, cover and cook on low for 7 to 8 hours.
  • To make on your stove top: In a large dutch oven or pot on medium high heat, drizzle oil and sear meat on all sides. Add the rest of the ingredients and bring to a boil, then cover and simmer for about 2 to 3 hours, until meat is tender. Serve and enjoy!

1 1/2 lb sirloin tip steak-cut into strips
seasoned as desired-garlic steak easoning & onion powder
2 medium red onions sliced
3 large carrots, washed peeled, & sliced as desired
9 clove fresh garlic, sliced- less if desired
3 stalk(s) celery chopped
8 oz canned sliced mushrooms, undrained
8 oz jar roasted red peppers undrained &chopped
2 can(s) cream of mushroom or chicken soup
1/3 c flour, optional
2-3 Tbsp extra virgin olive oil, or oil of your choice
1/2-1 tsp kitchen bouquet(optional)

Steps:

  • 1. Season steaks and cut into strips as desired. I cut rather thick because my husband likes lots of meat. I used my special spice blend seasoning mix Rose Mary's Spice Blend for meats. Allow to marinate at least 1/2 hour to 45 minutes if time permits.
  • 2. Wash peel and slice carrots & garlic, I prefer to cut on the diagonal to get more surface area per slice. Then chop the celery, slice the onions. Some of the ingredients used for tis recipe.
  • 3. Add the oil to skillet, and heat over medium heat, then add in the meat and sliced garlic, this allows the garlic to infuse the meat with a bit of garlic flavor. Saute until no pink remains.
  • 4. Add in the carrots and cook about 5-7 minutes before you add the other veggies.
  • 5. Now add in the chopped celery and sliced onions, & undrained sliced mushrooms, then lower the heat to low and cover with a tight fitting lid and allow the meat to cook about 20 minutes.
  • 6. Remove lid and stir in 2 cans of soup with one can of water or beef broth if desired & liquid from the roasted red peppers. Stir till soup is blended with the beef strips.
  • 7. Lower heat, and continue to cook for about 30 to 35 minutes, stirring frequently to prevent from sticking to bottom of skillet. During last 5 minutes of cooking add in the chopped roasted red peppers, stir to mix.

1 ½ pounds beef chuck roast (trimmed and cubed into ½" pieces)
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
1 onion (chopped)
2 cloves garlic (minced)
6 cups beef broth
15 ounces canned tomatoes (with juices)
1 teaspoon Italian seasoning
2 cups potatoes (cubed ½")
3 carrots (sliced ½")
1 rib celery (sliced ½")
1 cup green beans (cut into 1" pieces)
½ cup frozen corn (thawed or canned )

Steps:

  • Season beef with salt & pepper.
  • Heat olive oil over medium-high heat in a large pot and add beef in small batches cooking until browned, about 2 minutes per side.
  • Add cooked beef back to the pan, reduce heat to medium and add onion and garlic. Cook 2 minutes more.
  • Add broth, tomatoes with juices, and Italian seasoning, scraping up any brown bits from the bottom of the pan. Bring to a boil, reduce heat, and simmer 45-65 minutes or until beef is fork-tender.
  • Add potatoes, carrots, and celery and simmer 15 minutes more. Add beans and corn, simmer 10 minutes more. (If you prefer softer beans, they can be added earlier).
  • Season with salt & pepper to taste and serve.
