1 1/2 cups water
1/4 teaspoon salt
1/2 cup frozen sweet peas
1 cup uncooked couscous
1/3 cup mayonnaise
1/3 cup orange juice
1 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
2 cups cubed cooked chicken
1/4 cup sliced green onions
1/4 cup golden raisins
1/4 cup slivered almonds

Steps:

  • In medium saucepan, combine water and salt. Bring to a boil. Add peas; return to a boil. Remove from heat; immediately stir in couscous. Cover; let stand 5 minutes. Fluff couscous with fork; cool 20 minutes.
  • Meanwhile, in small bowl, combine mayonnaise, orange juice, curry powder, salt and ground red pepper; blend well.
  • In large bowl, combine cooled couscous and peas, and all remaining ingredients. Pour dressing over salad; toss gently to coat. Cover; refrigerate at least 30 minutes to blend flavors.

Vegetable oil cooking spray
1 medium head cauliflower, trimmed and cut into 1/2 to 1-inch pieces
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 cups low-sodium chicken broth
1 1/2 tablespoons mild curry powder (recommended: Spice Islands)
1/2 teaspoon salt
1 (10-ounce box) couscous
3/4 cup dried cranberries
1/2 cup coarsely chopped, roasted and lightly salted cashews
1 (4-inch) piece cucumber, peeled, seeded and chopped into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
1 large lemon, zested
1/3 cup Greek yogurt
1/4 cup extra-virgin olive oil
1 1/2 teaspoons mild curry powder (recommended: Spice Islands)
2 tablespoons fresh lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Cauliflower: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a baking sheet liberally with vegetable oil cooking spray. Set aside.
  • In a medium bowl, toss the cauliflower and olive oil together until coated. Put in a single layer on the prepared baking sheet and season with salt and pepper, to taste. Roast until golden and tender, about 25 to 30 minutes. Set aside to cool for 10 minutes.
  • Salad: In a medium saucepan, bring the chicken broth, curry powder and salt to a boil over medium-high heat. Remove the pan from the heat and stir in the couscous. Cover the pot and allow the couscous to absorb the liquid, about 5 to 7 minutes. Fluff the couscous with a fork and transfer it to a large serving bowl. Stir in the cooked cauliflower, cranberries, cashews, cucumber, parsley, and lemon zest. Refrigerate until ready to serve.
  • Dressing: In a small bowl, whisk together the yogurt, olive oil and curry powder until smooth. Whisk in the lemon juice and season with salt and pepper, to taste.
  • Just before serving, add the dressing to the salad and toss well to coat.

If you like spice, you're gonna love the Madras curry powder used in this chicken dinner. If you prefer to keep the heat to a minimum, use the standard curry powder you're more familiar with.

1 cup uncooked Israeli couscous
6 green onions, trimmed and chopped
0.25 cup olive oil
0.25 cup white wine vinegar
1 tablespoon honey
2 cloves garlic, peeled and halved
Salt and pepper
2 skinless, boneless chicken breast halves, cooked and sliced
1 teaspoon Madras curry powder
2 cup sliced fresh kohlrabi, carrots, and/or celery

Steps:

  • Cook couscous according to package instructions.
  • For dressing: In a blender combine green onions, olive oil, vinegar, honey, garlic, and 1/4 teaspoon each salt and black pepper. Cover; blend until smooth.
  • In a medium bowl toss chicken with curry powder.
  • To serve, top couscous with vegetables and chicken mixture. Drizzle with dressing. Season to taste. Serves 4.

1 cup chicken broth
1 cup couscous
1/2 cup golden raisin
1/2 teaspoon curry powder
1 cup mayonnaise
1 teaspoon ground ginger
2 tablespoons lemon juice
3 cups cooked chicken or 3 cups cooked turkey, cubed
1/3 cup celery, chopped
1/4 cup green onion, chopped
1/3 cup toasted almond, finely chopped
1 cup red grapes, quartered
1 tablespoon fresh parsley, chopped

Steps:

  • Bring chicken broth to a boil in microwave or saucepan.
  • Combine couscous, raisins, and curry powder in a medium bowl. Stir in broth, cover and let stand 5 minutes.
  • Fluff couscous with a fork and let cool to room temperature.
  • In a large bowl mix mayonnaise, ginger, and lemon juice. Add chicken, celery, green onions, almonds, and cooled couscous mixture. Toss gently. Fold in grapes and parsley. Refrigerate at least 2 hours before serving.

1 1/2 teaspoons curry powder
1 (10 ounce) package couscous (1 1/2 c.)
1/2 teaspoon salt
1/2 cup mango chutney
2 cups shredded cooked chicken
5 green onions, trimmed and cut into 1/2-inch pieces
1 cup grape tomatoes, each tomato halved
1/2 of a cantaloupe, seeded, rind removed (melon cut into 3/4-inch cubes, about 3 cups)
3 cups torn butter lettuce leaves (Boston or Bibb)
1 lime, cut into wedges

Steps:

  • In a medium saucepan bring the water and curry powder to a boil. Stir in the couscous and salt. Cover the saucepan; remove the pan from heat. Let stand 5 minutes or until water is absorbed by the couscous.
  • Stir about half of the chutney into the couscous mixture.
  • In a medium bowl combine the chicken, green onions, tomatoes, melon, and remaining chutney.
  • To serve, arrange torn lettuce on 6 individual plates. Spoon couscous onto the lettuce then top with the chicken mixture. Squeeze a lime wedge over each serving.

This makes a great lunch or snack and is low-fat. Great for bringing to work or school and can be eaten hot or cold. I like it with Braggs sprinkled on top (but I'm known to add braggs to any rice or couscous dish for extra flavour!). Could also add some cooked chicken to make a main dish, maybe with a side green salad or additional steamed veggies.

1 medium onion, chopped
1/2 red sweet bell pepper, chopped
2 garlic cloves, minced

1 teaspoon curry powder
1/2 teaspoon cumin
1/4 teaspoon salt

Steps:

  • In a large pot, cook onion, red pepper and garlic in the olive oil over medium low heat until soft, about 7 minutes.
  • Add tomatoes, chickpeas, peas, corn and spices and continue to cook, stirring occasionally for 5 minutes.
  • Add broth, increase heat and bring to a boil. Stir in couscous, cover, remove from heat and let sit for 6 minutes.

I got this recipe from Martha Stewart's magazine; originally it did not include the chicken but I wanted to add something so it could be a meal by itself. If you'd rather not have the chicken just use another 1/4 cup couscous and another 1 cup corn instead. This makes just enough for me to have it for dinner and next day's lunch; as a side dish I'm guessing it would be enough for three or four.

1 teaspoon curry powder
2 teaspoons grainy mustard
1 tablespoon white wine vinegar
salt and pepper
4 tablespoons extra virgin olive oil
1/2 cup couscous
2 small chicken breasts, cubed
1 vidalia onion, minced
2 garlic cloves, minced
1 red chili pepper, minced (optional)
2 cups corn kernels (Martha says to slice them off a fresh ear of corn, but I use canned)
1/4 cup fresh cilantro, chopped fine

Steps:

  • Whisk together the curry powder, mustard, and vinegar.
  • Season with salt and pepper.
  • Whisk in 3 tbsp of oil and set aside.
  • Prepare the couscous by bringing 2/3 cups of water to a boil (use 1 cup of water if you omitted the chicken and are using the 3/4 cups of couscous).
  • Remove from heat, add couscous, and let sit covered for about 5 minutes.
  • Heat the remaining oil in a skillet over medium heat.
  • Cook the chicken until just done; the time will depend on how big your chicken pieces are.
  • Remove the chicken to another dish and keep warm.
  • Add the onion to the skillet and cook until softened, about 5 minutes.
  • Stir in garlic and chile and cook, stirring, about 2 minutes until softened.
  • Add corn; if using raw then cook about 5 minutes until bright yellow and tender, if using canned then just heat though.
  • Combine chicken, corn mixture, and couscous.
  • Add curry mixture and cilantro and toss to combine.

This recipe comes from "Simply Classic" by The Junior League of Seattle. It is great for hot summer days, fix it in the morning and dinner is ready whenever you are. I double the amount of currants called for and sometimes leave out the chicken, it is equally good with or without it. It says it serves 6, but I find it serves much more than that, it makes a large amount! The one hour cooking time is for the minimum chill time.

6 chicken breast halves, skinned
4 cups chicken stock
2 cups couscous
1 tomatoes, chopped
3 green onions, thinly sliced
1 (15 ounce) can garbanzo beans, drained
1/2 cup red bell pepper, diced
1/2 cup dried currant
1/4 cup parsley, minced
1/2 cup lemon juice, freshly squeezed
6 tablespoons olive oil
1 clove garlic, minced
1/4 teaspoon cumin
1/4 teaspoon curry powder
1/4 teaspoon Tabasco sauce
salt
fresh ground pepper
1/2 cup pine nuts, toasted

Steps:

  • Simmer chicken in stock in a large skillet until cooked through, 15 to 20 minutes.
  • Remove chicken from skillet and set aside.
  • Strain stock and return to skillet.
  • Bring stock to a boil and stir in couscous slowly.
  • Mix well, cover and remove from heat.
  • Let stand until all of the stock is absorbed, about 15 minutes.
  • Fluff with a fork and spread out on a baking sheet to cool.
  • Once cool, remove to a large bowl.
  • Remove chicken from bone and cut up into small pieces.
  • Add to bowl with couscous.
  • Mix in tomato, green onions, garbanzo beans, red pepper, currants and parsley.
  • Dressing: Blend lemon juice, oil, garlic, cumin, curry powder and Tabasco in a small bowl and season to taste with salt and pepper.
  • Mix dressing with couscous mixture and toss well.
  • Refrigerate before serving, one hour up to one day.
  • Sprinkle with toasted pine nuts just before serving.
