- In a large bowl, combine the butter, lime juice, zest and thyme. Cut each potato into eight wedges; add to lime mixture and toss to coat. Place wedges skin side down on a greased baking sheet. Combine the cheese, salt and paprika; sprinkle over potatoes. Bake at 400° for 20-25 minutes or until tender.

Combine the cheese, salt and paprika; sprinkle over potatoes. Bake at 400 degrees F for 20-25 minutes or until tender.

these are very good with chicken or fish. The lime juice gives them a tang, almost like french fries with vinegar.I have used this recipe since 1977.

Steps:
- whisk first five ingredients well together.
- season with salt and pepper Arrange all potato pieces in a 9 x 13 inch pan.
- Pour all but 1/4 cup of the dressing onto potatoes.
- Keep the last dressing to drizzle just before serving.
- Toss the dressing all over the potatoes.
- Let sit at room temp.
- for 40 minutes.
- Preheat oven 400 degrees F.
- Roast potatoes until crisp and brown turning occasionally.

- Drizzle the reserved dressing over potatoes, just as serving.

- Roast potatoes:
- Put a 4-sided sheet pan in lower third of oven and preheat oven to 450°F.
- Stir cumin, oregano, and 3/4 teaspoon salt into oil in a large bowl. Add potatoes and toss. Arrange potatoes, cut sides down, in 1 layer in hot pan and roast, turning once, until golden, about 40 minutes.
- Meanwhile, make mayonnaise:
- Stir together mayonnaise, sour cream, cilantro, lime zest and juice, and 1/4 teaspoon salt in a small serving bowl.
- Serve potatoes with mayonnaise.
PARMESAN THYME POTATO WEDGES
Thyme and parmesan cheese kicks up the flavor of these baked potato wedges. I have recently started using 1/2 thyme, and 1/2 rosemary as my herbs, and I think it tastes even better than with just thyme. Goes great with almost any meal and easy to prepare.

Steps:
- Preheat oven to 375°F.
- Cut potatoes lengthwise into fourths, then cut pieces lengthwise again (so that potatoes are cut into eighths).
- Coat bottom of a large casserole dish or baking sheet with olive oil.
- Add potato wedges to baking dish and toss to coat in oil.
- Sprinkle potatoes with thyme, garlic powder, onion powder, seasoned salt and pepper, and toss potatoes again to coat with seasonings.
- Bake for about 1 hour, until potatoes are cooked and beginning to brown.
- Remove from oven and top with parmesan, return to oven for about 2 minutes to melt cheese.
- Remove from oven and serve.

- Heat oven to 200C/fan 180C/gas 6. Peel the potatoes and cut into thick wedges. Put in a pan, pour in enough water to cover and bring to the boil. Simmer for 2 mins, then drain well, shaking the colander.
- Put the olive oil, lemon juice and rosemary in a roasting tin with some salt and pepper. Add the potatoes and toss well until they are coated and glistening. Leave to soak up the oil and lemon for 10 mins, then bake for 20-30 mins, shaking the tin halfway through until the potatoes are nicely browned and glossy.
