GUAVA FLAN

Guava Flan image

I made this as a side dish for Dad's 67th Birthday Cake. This stole the show from the cake and everyone wanted the recipe. It is denser than most flans almost like a cross between cheesecake and flan with cubes of guava across the top. Thank you Moommy from PAC 09 for your suggestions! You can buy guava paste in flat cans in the international aisle of the grocery store.

Categories     Dessert

Time 4h20m

Yield 8 serving(s)

Number Of Ingredients 7

2 cups sugar, divided
1 (12 ounce) can evaporated milk
1 (8 ounce) package Philadelphia Cream Cheese, cut up, softened
5 eggs
1 teaspoon vanilla
1 dash salt
1/2 cup guava paste, cut into small pieces

Steps:

  • PREHEAT oven to 350°F Place 1 cup of the sugar in small heavy saucepan; cook on medium heat until sugar is melted and deep golden brown, stirring constantly with wooden spoon. This should take about 10 minutes. Remove from heat. Immediately pour into 9-inch round baking pan; tilt pan to evenly cover bottom of pan with syrup. Set aside.
  • PLACE milk and cream cheese in blender; cover. Blend until smooth. Add remaining 1 cup sugar, the eggs, vanilla and salt; cover. Blend just until smooth; add guava paste and pour into prepared baking pan. ( I found that sprinkling the cubes of guava paste across the top of the raw custard helped to keep them from globbing up in the middle- Next time I might try blending the guava paste in blender with the rest of the ingredients) Place filled baking pan in larger baking pan; add enough hot water to larger pan to come halfway up side of smaller pan.
  • BAKE 50 minute to 1 hour or until knife inserted near center comes out clean. Cool. Carefully remove flan from water. Cool on wire rack.
  • REFRIGERATE several hours or unti chilled. When ready to serve, invert pan onto serving plate to unmold flan. (Some of the guava cubes stuck to the caramel and I just took them off with a fork and stuck them back in the top of the flan where they came from!) Store any leftovers in refrigerator.

GUAVA CHEESE FLAN

Guava Cheese Flan image

Guava and cheese (Guyaba con Queso) is a typical combination for Cubans. It is delicious! They have Guava Skins that are made in syrup and then combined with cream cheese and "Cuban" crackers - oh my!!! This is an acquired taste and one that is NOT diet friendly!! This was given to me by a woman who works in the activities dept and is trying to start her own dessert business. Didn't include chilling time of about 3 hours up to overnight.

VANILLA AND LIME FLAN

Vanilla and Lime Flan image

Provided by Food Network

Categories     dessert

Time 1h47m

Yield 6 servings

Number Of Ingredients 7

1/2 cup sugar
3 tablespoons water
2 cups condensed milk
2 cups whole milk
3 limes, zested
1 vanilla bean
6 eggs

Steps:

  • Preheat the oven to 360 degrees F
  • To make the caramel, heat together the water and sugar gently, over a medium flame, until it is golden brown, about 10 minutes, ensuring the mixture does not burn.
  • Meanwhile, pour the condensed milk and whole milk into a pan. Add the lime zest. Slice the vanilla pod in half and carefully scrape out the vanilla seeds and add these to the milk mixture. Simmer the milk slowly for 15 minutes to let the flavors combine.
  • Once the caramel is ready, pour into a cake pan and swirl it around to evenly coat the bottom of the pan. Set aside.
  • In a bowl, crack the eggs and beat together. Slowly pour a little of the warm milk, vanilla, and lime mixture into the eggs. This will temper the eggs and prevent them from scrambling. Once the warm milk has raised the temperature of the eggs (tempered), pour in the rest of the milk. Pour all of the mixture into the cake pan over the caramel. Cook the cake pan in a water bath by placing the pan inside a larger pan that is filled half-way with water. Place in the oven and cook for 45 minutes to 1 hour.
  • Once ready, allow to cool and place inside a refrigerator overnight. The flan is then ready to be flipped over gently and served.

Yield Makes 8 servings

Number Of Ingredients 10

1 1/3 cups plus 1/2 cup sugar
1/2 cup water
4 teaspoons finely grated lime peel
3 large eggs
5 large egg yolks
2 cups whipping cream
1 1/2 cups whole milk
2 1/2 teaspoons vanilla extract
1/4 teaspoon salt
Lime slices (optional)

Steps:

  • Preheat oven to 325°F. Place eight 2/3-cup ramekins or custard cups on work surface. Stir 1 1/3 cups sugar and 1/2 cup water in heavy medium saucepan over low heat until sugar dissolves. Immediately pour caramel into ramekins. Using oven mitts as aid, pick up each ramekin and tilt and rotate to coat sides with caramel. Place ramekins in large roasting pan.
  • Using back of spoon, mash 1/2 cup sugar and lime peel in large bowl until sugar is moist and fragrant. Add eggs and yolks; whisk to blend. Bring cream and milk to boil in heavy medium saucepan. Gradually whisk cream mixture into egg mixture. Whisk in vanilla and salt. Ladle custard into caramel-lined ramekins. Pour enough hot water into roasting pan to come halfway up sides of ramekins.
  • Bake flans until just set and beginning to color on top, about 45 minutes. Remove from water; let cool 45 minutes. Cover and refrigerate overnight.
  • Cut around sides of ramekins to loosen flans. Invert flans onto plates. Garnish with lime slices, if desired.
