PEPPER AND POTATO SALAD

2 1/2 pounds small potatoes, baby Yukon gold or red skinned potatoes
2 ounces, about 3 tablespoons, sliced jarred or canned hot peppers: jalapenos, hot pepper rings, hot cherry peppers, your choice
1 small red bell pepper, seeded and chopped
4 scallions, chopped
A splash hot pepper juice, from jar or can
3 tablespoons cider or wine vinegar, eyeball it
1/4 cup extra-virgin olive oil, eyeball it
Salt and pepper

Steps:

  • Chunk up the potatoes, cutting them into large bite-size pieces and place them in a pot of water. Boil until tender, drain and return back to hot pot to dry them out. Add hot peppers, bell peppers and scallions to potatoes, then dress with a splash of hot pepper juice and vinegar. Toss to combine, then drizzle with extra-virgin olive oil to coat the salad evenly and season with salt and pepper.

1 green bell pepper, minced
1 cucumber, sliced and quartered
½ cup sliced red onion
8 ounces crumbled feta cheese
1 lemon, juiced
½ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • In a large bowl, combine the potatoes, green peppers, cucumbers, red onion and cheese.
  • Whisk together the lemon juice, salad dressing, salt and pepper. Pour over salad and toss to coat. Serve with pita bread wedges if desired.

1 (6 ounce) package lime flavored Jell-O® mix
¾ cup boiling water
¼ teaspoon salt
¾ cup cold water
1 cup shredded cabbage
½ cup grated carrots
½ cup chopped walnuts

Steps:

  • Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.
  • Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into an 8 inch mold that has been sprayed with a non-stick spray. Chill until firm.
  • Set mold in a sink of hot water for a few seconds when ready to unmold. Place serving plate on top of mold, and turn over. Lift off mold.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).

750g new potatoes, halved if large
80g mayonnaise
50g soured cream
2 tbsp sriracha
1 lime, zested and juiced
1 tsp honey
6 spring onions, finely sliced
½ small bunch of coriander, finely chopped
½ tsp chilli flakes (optional)

Steps:

  • Tip the potatoes into a large pan of cold salted water. Bring to the boil, then reduce the heat and simmer for 15-18 mins until tender. Drain and leave to cool completely.
  • Whisk the mayonnaise with the soured cream, sriracha, lime zest and juice, the honey, half the spring onions, most of the coriander and some seasoning.
  • Toss the cooled potatoes with the sriracha-mayonnaise mixture until all the potatoes are coated. Tip into a serving bowl and scatter over the remaining spring onions, the rest of the coriander and chilli flakes, if you like.

1 cup sun-dried tomato packed in oil, drained and finely chopped
1 cup good mayonnaise (I use Hellmann's)
2 tablespoons freshly squeezed lime juice
2 teaspoons freshly grated lime peel
1 medium garlic clove, minced
4 drops Tabasco sauce
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/4 cup coarsely chopped parsley

Steps:

  • In a large pot, cover the potatoes with lightly salted water and bring to a simmer over high heat. Cook just until tender, 15 to 20 minutes, depending on size.
  • Drain and rise under cold water for a minute or two to stop them from cooking further. Drain well again and allow to cool completely.
  • Cut the potatoes in halves or quarters and set aside.

3 tablespoons white vinegar
3 tablespoons sugar
1 tablespoon lime juice, fresh squeezed

  • Dressing: Add lime juice, zest, olive oil, mustard and lemon pepper.
  • Drain potatoes and transfer to a large bowl.
  • Pour dressing over hot potatoes and coat well.

I got this potato salad recipe from a friend who got it from an adapted recipe from the California Avocado Commission. It's a wonderful recipe, that is lighter because the wonderful tangy dressing substitutes for mayo in most salads such as this. Lots of wonderful flavors, textures, and colors! You may serve this at room temperature, but it is best covered tightly and chilled for 1 to 3 hrs before serving. Can be prepared up to three hours in advance before serving.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place the potatoes into a saucepan, and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes. Drain.
  • Place the peppers into the oven so that they sit directly on the rack. Roast, turning every 10 minutes or so, until evenly charred. Place in a paper bag to sweat, then remove the peel when they are cool enough to handle. Remove the stem and seeds, and chop.
  • In a large bowl, combine the still warm potatoes, peppers, eggs, celery, onion, sweet pickles and olives. In a smaller bowl, whisk together the lime juice, vegetable oil, salt, pepper and mustard powder. I like to use a high speed mixing wand to help it emulsify. Pour over the potato salad, and stir to coat. Adjust seasoning to taste and serve.

16 ounces tiny new potatotes
8 ounces whole red peppers or 7 ounces ready-cut chopped peppers (1 to 1 1/2 cups)
8 ounces ripe field tomatoes
8 oil-cured black olives
1 tablespoon fresh oregano
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1/8 teaspoon salt, optional
Freshly ground black pepper to taste

Steps:

  • Scrub but do not peel potatoes. Cover with water and cook in a covered pot until potatoes are tender, about 15 to 20 minutes.
  • Wash, trim, seed and cut whole peppers into julienne strips, then cut strips into quarters and place in serving bowl.
  • Wash, trim and dice tomatoes and add to peppers.
  • Pit olives and cut up; add to bowl.
  • Wash, dry and chop oregano and add to bowl.
  • Stir in oil and vinegar.
  • When potatoes are cooked, drain and cut into small dices. Stir into bowl and mix to coat with dressing. Season to taste with pepper.
