1 pound carrots, roughly chopped
1/3 cup sweet paprika
1/4 cup chicken bouillon
4 tablespoons (1/2 stick) butter
1/4 cup smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
5 bay leaves
4 stalks celery, roughly chopped
Kosher salt and freshly ground black pepper
1 1/2 pounds boneless, skinless chicken thighs
1/4 cup browning liquid
1 pound sour cream
1 1/2 cups flour, thinned with 3 cups water to make a slurry
Dumplings, for serving

Steps:

  • Combine the carrots, sweet paprika, bouillon, butter, smoked paprika, garlic powder, onion powder, bay leaves, celery, 1 1/2 tablespoons salt and 1 tablespoon pepper in a medium stockpot. Heat over medium heat, stirring, until the butter is melted and the vegetables are beginning to sweat, 2 to 3 minutes. Add the chicken, browning liquid and 2 1/2 quarts water. Bring to a boil, then reduce the heat to low and simmer until the chicken is falling apart, about 1 hour.
  • Pick out the bay leaves, then stir the pot, to break up the chicken. Add the sour cream and stir thoroughly. Slowly add the flour slurry, stirring constantly, until the raw flour taste is gone and the stew has thickened, about 5 minutes.
  • Serve over dumplings.

4 chicken legs, bone skin on (you can use a small cut up chicken or bone on skin on breasts)
salt and pepper
2 tablespoons vegetable oil (or bacon fat)
2 large onions, sliced
2 cups sliced mushrooms
2 garlic cloves, minced
1 teaspoon dried thyme
2 tablespoons sweet Hungarian paprika
1 tablespoon tomato paste
1/2 cup canned tomato (diced with their juice)
1 cup chicken stock
1/2 cup dry white wine
1 large bay leaf
2 teaspoons Worcestershire sauce
1 dash hot sauce
1 tablespoon cornstarch (mixed up in a little water)
1 cup sour cream (I use low fat)

Steps:

  • Season chicken with salt & Pepper.
  • Brown well in a large skillet in oil.
  • Remove chicken, keep warm.
  • Add onions, mushrooms, and garlic to skillet and saute. Season with thyme, salt and pepper.
  • Now add Paprika to vegetables and saute a few minutes till paprika loses its rawness.
  • Add Tomato paste and saute a minute or so till some of its moisture evaporates.
  • Add wine and bring to a boil.
  • Add tomatoes, chicken stock, wine, bay leaf, worcestershire sauce and hot sauce.
  • Taste for salt & pepper, and adjust seasonings.
  • Add chicken back to pan.
  • Cover and simmer about 35 - 45 minutes.
  • Remove chicken and keep warm.
  • Thicken sauce with constarch slurry.
  • When it is thickened and the seasonings have been adjusted, add sour cream and gently warm sauce through.
  • Add chicken back to pan in sauce and gently heat through.
  • Serve with egg noodles.
  • Yummo.

8 ounces fat free sour cream
1 tablespoon paprika

Steps:

  • Spray a large nonstick skillet and heat over medium-high heat. Saute onion for three minutes. Add the chicken and cook until heated through (about 5 minutes).
  • Reduce heat to medium. Stir in remaining ingredients. Cover and cook for 3 minutes. DO NOT ALLOW TO BOIL.

1 whole chicken (cut into pieces)
1 medium onion (sliced)
2 tablespoons paprika
4 tablespoons butter
1 can chicken broth
4 tablespoons sour cream
1/2 cup flour (optional)

Steps:

  • Melt Butter in a large pot or dutch oven.
  • Stir in Paprika to butter.
  • Sautee the onions in the paprika butter solution, then temporarily remove them.
  • It may be necessary to add an additional Tablespoon of butter to the solution.
  • Brown the chicken in the butter.
  • Add the chicken broth, re-add the onions and simmer for one hour, covered.
  • After the solution is fully cooked, add in the sour cream.
  • You may also add in the flour to thicken the gravy.
  • This dish is often served with the German pasta,'Spaetzels' or with the Hungarian'Halousky'.
  • This meal is exceptionally filling with the Spaetzels.

4 teaspoons paprika
4 boneless skinless chicken breasts
1 tablespoon butter
cooking spray
1/4 cup onion, diced
1/4 cup dry white wine
1/4 cup chicken stock
8 ounces egg noodles
1/2 cup nonfat sour cream

Steps:

  • Coat chicken breasts liberally on both sides with the paprika. Coat a non-stick skillet with cooking spray and heat over medium-high. Add the butter.
  • When melted, add chicken breasts and sauté until lightly browned on both sides; about 4 minutes. Remove to a serving platter. Cover with foil to keep warm.
  • Add the onion to skillet and sauté for 1 minute. Add wine, stirring to scrape up any brown bits in the pan. Increase heat to high and reduce wine to half. Stir in chicken broth and bring to a boil.
  • Lower heat and add chicken breasts back to the pan. Cover and simmer until chicken is tender; about 10 minutes.
  • Meanwhile in a large saucepan of boiling salted water, cook noodles until just tender; 3-5 minutes. Drain.
  • Transfer noodles to a serving platter. Remove the chicken from the sauce and arrange on top of the noodles. Whisk sour cream into sauce in skillet until smooth.
  • Cook and stir until sauce thickens slightly; 2-3 minutes. Spoon sauce over chicken.

4 chicken thighs, with skin (or equal amount of chicken pieces)
1 big white onion, finely chopped
5 tablespoons oil (originally cooked with lard)
1 -2 slice green peppers or 1 -2 slice red pepper
2 -3 teaspoons sweet Hungarian paprika
1 teaspoon hot Hungarian paprika
salt

Steps:

  • Saute chopped up onion in the oil. Pull it off from the heat.
  • Add the paprika (both kind) to the sautéed onion. (If you leave it on the heat while you do this, the paprika will burn) Mix it until the paprika dissolved.
  • Add chicken. Mix it together with the onion-paprika paste, until all the pieces are covered with the paste. Turn your heat up high, brown the meat, while you constantly mixing it. While you doing it, be careful not to burn the paprika paste!
  • When all pieces look white all around, turn down the heat to low, add salt, cover and cook. During your low heat cooking the juices of the chicken will come out, so your dish will cook in its own juices. If you pick dry meat (breast) you have to add some liquid(chicken broth).
  • After 10 minutes add pepper piece to the food. Cook for another 10-15 minutes. Check for tenderness.
  • Before serving, remove skin. Serve with pasta, or baked potato. Top the dish with a tablespoon of sour cream.
  • Hungarians serve it with some pickled items on the side, such as cucumber, or pickled pepper.
  • Enjoy.

1 large yellow onion, chopped
1 -2 tablespoon olive oil
4 lbs boneless skinless chicken breasts or 4 lbs boneless skinless chicken thighs
2 tablespoons paprika
1/2 teaspoon white pepper
1 1/2 cups hot water (NOT boiling)
2 tablespoons cornstarch
2 tablespoons cold water
1 (8 ounce) container low-fat sour cream (Cabot Light preferred)

Steps:

  • Preheat oven to 350°F.
  • In a large skillet, saute onion in the oil until tender.
  • Sprinkle chicken with paprika and white pepper and place in an ungreased roasting pan.
  • Spoon sauteed onions over the chicken parts; add hot water to roasting pan.
  • Cover and bake in preheated oven for 1½ hours or until juices run clear.
  • Remove chicken from oven, reserve pan juices for the sauce and keep the chicken warm while you make the sauce.
  • To make the sauce: In a small saucepan, combine cornstarch and cold water until smooth.
  • Whisk in the pan juices from the chicken; bring to barely a boil over medium heat.
  • Reduce heat to low and simmer, stirring until thickened.
  • Remove from the heat and stir in the sour cream; serve hot over the chicken which I serve over hot cooked noodles (whole wheat preferred) or hot cooked brown rice.

I found this little gem in a 20 minutes or less Cooking Light mag and best of all it has no sour cream! This is so easy to make and it really takes no time at all... perfect for weeknights. Just add cayenne pepper or red pepper flakes for heat. As is, this is kid friendly and the paprika is not overwhelming! Try, and enjoy! This is best served over hot egg noodles. Make sure you toss the egg noodles with butter, pepper, and caraway seeds! Delish :)
