YANKEE POT ROAST SOUP
Tastes like the Yankee Pot Roast Soup at the Montanas restaurant chain (I'm in Canada) - thick, hearty and fragrant. I typically add more beef than the recipe calls for as I usually cut up a small roast. Tastes even better reheated. I freeze it in individual size containers to microwave for lunch at work. (Bring extra - your colleagues will want to try it!)

Steps:
- In a large soup pot, melt butter over medium high heat. Brown the beef chunks in the butter.
- Add salt, pepper, garlic, broth, vegetables and tomato paste.
- Bring to a boil.
- Add bay leaves and Magi.
- Reduce heat to medium-low (so soup is simmering).
- Cover and cook for 1 1/2 hours (until potatoes are done but not overcooked.).

YANKEE BEAN SOUP
My family really enjoys this hearty soup, which is perfect for a wintry day. Bacon, molasses and onion add great flavor. A friend from Massachusetts gave me the recipe years ago, and I've made it countless times since then.

Steps:
- Place the beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. , Drain and rinse beans, discarding liquid. Set beans aside. In the same pan, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. , In the drippings, saute onion until tender. Stir in carrot and celery leaves. Return beans to the pan. Add water. Bring to a boil. Reduce heat; cover and simmer for 1-3/4 to 2 hours or until beans are tender. , Stir in the milk, molasses, salt and bacon. Remove about 2-1/2 cups of soup; cool slightly. Place in a blender or food processor; cover and process until pureed. Return to the pan; heat through.

- Stir in chili powder; add kidney beans, tomatoes and water.
- Bring to a boil; reduce to simmer and cook covered for 1 1/2 hours.

- In a large pot over medium heat, combine the ground beef and onions. Saute for 5 minutes, or until meat is browned. - Stir tomatoes, kidney beans, black beans, corn, vegetable broth, carrots, celery, onion, chili powder, and garlic together in a large saucepan. MY SIMPLE CHILI-SOUP
Chili enthusiasts would hate this recipe! But people who don't usually like chili will eat it, and it's the only chili my kids will eat. No chunks of tomato, onions, or peppers- that's why. It's not thick at all, and should be served with shredded cheese and frito chips, plus a dollop of sour cream. Make sure the beans are labeled "Chili Hot Beans"....no, they're really not hot!
