1 cup lentils
water
2 celery ribs, cut in 1/2-inch dice
2 carrots, cut in 1/2-inch dice
1 small onion, cut in 1/2-inch dice
2 bay leaves
2 tablespoons olive oil
2 garlic cloves, sliced
2 cups whole canned tomatoes, crushed by hand
1/2 teaspoon kosher salt
1 pinch red pepper flakes (optional)
1 lb rigatoni pasta (or other chunky tubular pasta)
1 tablespoon olive oil
chopped parsley

Steps:

  • Place lentils in a large pot. Add enough water to just cover. Add celery, carrot, onion and bay, and bring to a boil. Reduce heat to a simmer and cook 20 minutes, until lentils are tender.
  • Bring a large pot of heavily salted water to the boil.
  • Heat olive oil over medium heat. Add garlic and saute until it just begins to turn golden. Add the lentils (vegetables, liquid and all) and tomatoes, salt and red pepper flake. If it seems thick, add a splash of water from the pasta pot. Bring to a boil, reduce to a simmer, and cook until reduced by about a third, 10-15 minutes.
  • Meanwhile, add the rigatoni to the boiling water and cook until ALMOST al dente. Drain the pasta and add to the lentils to finish cooking for the last 1-2 minutes. Finish with a drizzle of raw olive oil and garnish with chopped parsley.

This is Lidia Bastianich's recipe for spaghetti and meatballs. She is a chef on tv who makes very authentic italian food. This recipe is the next best thing to being in New York City in Little Italy.

two 35-ounce cans Italian plum tomato (preferably San Marzano)
1/4 cup extra virgin olive oil
1 medium onion, chopped (about 1 cup)
1 teaspoon crushed red pepper flakes
2 bay leaves
salt
fresh ground black pepper
1/2 lb ground pork
1/2 lb ground beef
1 cup fine dry white bread crumbs
1/3 cup freshly grated parmigiano-reggiano cheese
1/4 cup chopped fresh Italian parsley
2 garlic cloves, peeled and chopped fine
1 large egg
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
all-purpose flour
1/4 cup olive oil
1/4 cup vegetable oil
1 lb spaghetti
2/3 cup parmigiano-reggiano cheese (grated, and I want to add that it's important to use FRESHLY grated)

Steps:

  • Pass the tomatoes and their liquid through a food mill fitted with the fine disc.
  • Heat 1/4 cup olive oil in a 4- to 5-quart pot over medium high heat. Stir in the onion and cook, stirring, until wilted, about 4 minutes.
  • Pour in the tomatoes, crushed red pepper and bay leaves, and season lightly with salt and pepper.
  • Bring to a boil, then lower the heat so the sauce is at a lively simmer. Cook, stirring occasionally, 30 minutes.
  • Meanwhile, crumble the pork and beef into a mixing bowl.
  • Sprinkle the bread crumbs, 1/3 cup grated cheese, the parsley, and garlic over the meat.
  • Beat the egg with 1 teaspoon salt and 1/4 teaspoon salt and 1/2 teaspoon black pepper in a small bowl until blended. Pour over the meat mixture. Mix the ingredients with clean hands just until evenly blended. Don't overmix.
  • Shape the meat mixture into 1-1/2 inch balls.
  • Dredge the meatballs in the flour until lightly but evenly coated.
  • Heat 1/4 cup olive oil and the vegetable oil in a large, heavy skillet over medium-high heat.
  • Slip as many meatballs into the skillet as will fit without crowding. Fry, turning as necessary, until golden brown on all sides, about 6 minutes. Adjust the heat as the meatballs cook to prevent them from overbrowning.
  • Remove the meatballs, and repeat if necessary with the remaining meatballs.
  • Add the browned meatballs to the tomato sauce and cook, stirring gently with a wooden spoon, until no trace of pink remains at the center of the meatballs, about 30 minutes.
  • Stir the spaghetti into the boiling water. Return to a boil, stirring frequently. Cook the pasta, semi-covered, stirring occasionally, until done, about 8 minutes.
  • Drain the pasta and return it to the pot. Spoon in about 2 cups of the tomato sauce, tossing well until the pasta is coated with sauce.
  • Remove from the heat and toss in 2/3 cup grated cheese. Check the seasoning, and add salt and pepper if necessary.
  • Serve the pasta in warm bowls or piled high on a large warm platter.
  • Spoon a little more of the sauce over the pasta, and pass the remaining sauce separately. Pass the meatballs family-style in a bowl, or top the bowls or platter of spaghetti with them.

  • Choose your pasta wisely. A good dried pasta is made out of 100 percent semolina flour and just water. Semolina is a durum wheat flour that has a nutty finish and a great bite because it has more gluten.
  • Use the right amount of water. To cook pasta properly, you need abundant water. For a pound of dry pasta like spaghetti, you need about 4 to 6 quarts of water.
  • Add salt to the water. Before you put the pasta in, the water should be boiling rapidly and it should be salted to the point that it tastes almost like sea water.
  • Do not add oil to the water. You do not want to coat pasta with anything that will inhibit the absorption of the sauce later. A lot of people think they should add oil to the water to keep the pasta from sticking together.
  • Measure out the right amount of pasta. For a main course, one pound of pasta will make four really abundant portions or six regular portions. If you’re serving pasta as an aperitivo (appetizer) or primo (first course), you can get eight appetizers out of a pound of pasta.
  • Do not break long pasta. Breaking spaghetti is a real no-no in Italy, unless you want to put it in a soup like pasta fagiole. Italians love their pasta l-o-n-g.
  • Taste test your pasta. Cook the pasta for the amount of time recommended on the box, periodically mixing it and taste testing it. I’ve cooked A LOT of pasta in my life, so I can tell almost by look now when it’s done, but for people who are doubtful, just take out one piece of spaghetti or ziti and taste it.
  • Throw a piece of spaghetti against the wall if you aren’t sure if it’s done. There is a reason that pasta is done when you throw it to the wall and it sticks.
  • Save some of the pasta water. I think the cooking water of pasta always comes in handy. Even when you’re making the sauce, let’s say you’re making something as simple as a carbonara with bacon and onion, you need liquid.
  • Do not rinse the pasta. You don't want to rinse pasta because again the sauce won't stick to it. When the pasta is done, put it right into the sauce. I finish cooking the pasta in the sauce until the al dente texture goes away, and it absorbs the sauce and the pasta is ready to go.
