I plant lettuce in my garden, so this is a recipe I make often. It's a nice change from a regular tossed salad.

5 bacon strips
8 cups torn salad greens
2 hard-boiled large eggs, chopped
2 green onions, sliced
1/2 cup sugar
1/2 cup vinegar
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon ground mustard

Steps:

  • In a skillet, cook bacon until crisp. Remove the bacon; crumble and set aside. Drain, reserving 1/4 cup drippings. In a large bowl, combine the greens, eggs, onions and bacon. Add remaining ingredients to the drippings; bring to a boil. Drizzle over the salad and toss to coat. Serve immediately.

1 egg
6 slices bacon
½ cup sliced onion
¼ cup white wine vinegar
¼ cup water
4 teaspoons white sugar
½ teaspoon salt
8 cups leaf lettuce - rinsed, dried and torn into bite-size pieces
8 radishes, thinly sliced

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let egg stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve excess grease.
  • Add onions to skillet with reserved grease and cook until tender. Add bacon, vinegar, water, sugar and salt. Stir and bring to boil.
  • Place lettuce in a large bowl. Pour hot dressing over and toss well. Garnish with egg and radishes.

1 head iceberg lettuce
4 slices bacon
2 teaspoons brown sugar
1/4 cup red wine vinegar
Salt and freshly ground black pepper
1 hard-boiled egg, finely chopped

Steps:

  • Remove the core from the lettuce and cut into 4 quarters. Arrange on serving plates and set aside.
  • In a small skillet saute bacon until crisp. Remove from skillet, to a plate lined with a paper bag or paper towels. Once cooled, chop into small pieces and add to a small bowl. In the skillet over low heat, add the brown sugar, vinegar and salt and pepper, to taste. Whisk together until combined and sugar is completely dissolved. Stir in the egg and bacon and season with salt and pepper, to taste. Pour over the top of the iceberg wedges and serve immediately.

1 lb bacon, diced
1/4 cup flour
1 1/4 cups sugar
1/4 teaspoon salt
2 cups water
1 cup balsamic vinegar

Steps:

  • Fry bacon until crispy.
  • Remove bacon to paper towel covered dish to drain and cool.
  • Reserve 1 1/2 teaspoons of the bacon fat.
  • Combine flour, sugar, salt.
  • Mix well with 1/2 cup water, let stand in mixing container.
  • Heat vinegar and remainder of water to hot (do not boil).
  • Add the hot liquid to dry ingredients, stirring well.
  • Add the mixture to the bacon fat still in skillet, and cook to desired consistency. (If gravy like texture is desired, you can bring to a brief boil. Overcooking with cause it to congeal into a thick ball).
  • If desired, you can crumble the bacon you fried and add to salad.
  • Pour over your salad of choice and devour immediately.

1/2 pound bacon strips, diced
1 medium onion, chopped
2 tablespoons sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon salt

1 cup milk
1 egg, lightly beaten
3 bunches curly endive, torn (about 12 cups)
3 hard-boiled large eggs, sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened.   • Place the bacon in a cold 10-12-inch skillet. The bacon slices should be close to each other, but not overlapping. Place the skillet over low-medium heat and cook until the fat begins to render then turn the heat up to medium and continue cooking until the bacon is crispy. This will take about 8-12 minutes. Flip the bacon half-way through the cooking process to crisp both sides. Transfer the crisp bacon to a sheet pan lined with a baking rack and set aside. This will allow the bacon to cool without getting soggy.
  • Reduce the heat to low. To the bacon drippings, add the sugar and cider vinegar and whisk until well combined. In a separate bowl, whisk together the water and cornstarch to make a slurry. Slowly add this to the skillet, whisking continually. As the liquid simmers, it will become slightly thicker. The dressing is done once it lightly coats the back of a spoon.
  • Place the lettuce in a large serving bowl and add the hot dressing then toss until the lettuce is coated. The lettuce will wilt slightly from the heat of the dressing. Crumble the cooked bacon on top then add the sliced eggs. Serve warm.
