Steps:
- Combine the ketchup and chipotle and spread on the inside of each piece of bread. Place the cheese between the bread at an angle so that the edges hangover the sides of the bread. Butter the outside of one bread slice with half the butter. Heat a skillet over medium heat. Press the sandwich on, buttered-side down. Press until the bread is golden brown and the cheese has started to melt. Butter the other side (which is facing up) with the remaining butter and flip. Cook until golden brown and the cheese is gooey, this should all take 3 to 4 minutes. Remove the sandwich from the heat and hold.
- Meanwhile, in a pan over medium heat, cook the bacon until barely crisp, about 5 minutes. Flip the bacon, pushing the two pieces next to each other to form a square. Crack the egg on top, cooking into the bacon. Continue cooking until the egg is set, about 5 minutes. Open up the sandwich (use a spoon to help pull apart the bread) and slide in the eggs and bacon. Close up, slice and enjoy.

FRIED EGG & CHEESE SANDWICH
I don't care for runny eggs (except eggs benedict) so this hits the spot when I'm in the mood for something more rich and substantial than scrambled eggs, but not gooey (except the cheese). If I have it on hand, I replace one egg with a slice of ham that I fry first.

Steps:
- Heat the butter in a medium-sized non-stick frying pan over medium high heat.
- When it's very hot, crack one egg on one side of the pan and one egg on the other side of the pan.
- Try to keep them from running into each other so that they can be flipped individually.
- CRUCIAL: Poke the yolks with the eggshell (or a fork) so that they run into the whites.
- Sprinkle salt and pepper on the eggs.
- When eggs have set (edges seem firm), flip carefully.
- I usually end up flipping them a few times to make sure the yolk is thoroughly cooked (it's okay if it's a little soft inside but not runny).
- When almost done, top each egg with a piece of cheese and cover with a lid until melty--watch closely.
- Spread mayo on each slice of toast, top with eggs, and put together.

Steps:
- Preheat broiler on high.
- Cut a rectangle out of the middle of the bread, approximately 1 inch by 2 inches.
- In a large skillet, melt 1/2 tbsp. butter on medium heat, swirling the butter around to cover the surface of the pan.
- Once butter is sizzling, add the bread to the pan. Crack the egg into the hole in the bread.
- Cook for approximately 2 minutes. If you prefer your egg less runny, add 1 - 2 additional minutes to the cooking time, but be sure to peek under the bread during cooking and if it's getting too brown, turn heat down.
- Using a spatula, flip the bread over, making sure the bread lands on the side of the pan rather than the middle.
- Add the remaining 1/2 tbsp. butter to the empty space in the pan. Add bologna and tomato slices to the pan. Cook bread, bologna and tomato for 2 minutes. Flip bologna and tomato during cooking time to ensure even browning. Turn down heat if they are browning too fast.
- Remove bread to an oven-safe tray. Add tomato slices on top of the bread, then pile on the bologna. Top with cheese slice(s). Broil for 2 - 3 minutes or until cheese is bubbly and slightly brown. Watch carefully during broiling to avoid burning.
- Remove from tray onto a serving plate. Top with freshly ground black pepper and serve immediately.

- Using a spatula, place each egg on a slice of toast.

BEST EVER EGG & CHEESE SANDWICH
This is an old family favorite. I have added a little heat to it with the pepper flakes. Fried onions are also a nice option to make it a little special. Try it with a little Thousand Island Dressing. Cheddar cheese is fine but Cheez Whiz does the trick!

Steps:
- Melt margarine in frying pan.
- Add egg (don't break the yolk, but if you do that is alright too!).
- Gently fry the egg.
- Sprinkle the egg with the salt, black pepper and red pepper flakes. (if you don't like hot, leave them off).
- Flip the egg over. I like the yolk to be a bit soft. Polk the yolk after you have turned the egg so that a bit of the yolk seeps out.
- Spread the Cheez Whiz on one side of the bread.
- Put the egg on the bread and top with the other slice of bread. (I like the side with the pepper flakes to meet the Cheez Whiz).
- Return the sandwich to your fryng pan and grill until golden, flip over and grill the other side. (I don't butter the sandwich before frying).
- Enjoy!

Steps:
- Prep:.
- Slit the bologna in 4 places alond the side to 1/2 to middle (like a pinwheel) to prevent it from curling when fried.
- Mayo one side of 2 slices of bread (I prefer to grill with mayo -- browns better than butter -- a trick I learned from a diner).
- Add small pat of butter to grease a non-stick frying pan on medium. Add the bologna. Fry to your liking turning frequently as not to burn. Transfer to one piece of your bread on the un-mayo side.
- Fry an egg. You will have plenty of grease to fry it inches Poke yolk. Flip. Add a slice of cheese to cooked side. Fry it through. Transfer to on top of bologna.
- Put other slice of bread over. Mayo side out. Transfer to fry pan. Grill it like you would a grilled cheese sandwich. I put Frank's Red Hot cayanne pepper sauce as a condiment. (milder than Tabasco) -- use whatever condiment you want or leave it plain! Super YUMMY!

- Place a large non-stick skillet over medium heat then allow it to warm up. Spread about 1½ tsp unsalted butter on 1 side of each piece of bread then set aside.
- Place 4 pieces of the sourdough, butter side down, in the skillet then immediately top with sliced cheese. Cover skillet with the lid slightly ajar. Doing so will trap heat inside the skillet but allow steam to escape and melt the cheese. When the bread is golden brown on the bottom and the cheese has melted, which takes about 2-3 minutes, transfer to a serving dish. Place the remaining bread, buttered side down, into the skillet to toast.
- Meanwhile, top melted cheese with sliced tomatoes, fried eggs and the herb of your choice. Season with a light dusting of paprika, salt and pepper.
- When the bread in the skillet is grilled to a crispy golden brown, place the slices on top of the sandwiches and enjoy!

- Divvy the cheese between the slices of bread and place them on a baking sheet, cheese-side up. (And yes, 8 slices of cheese is a lot but it’s also obscenely good. How much you use is between you and your scale.) Slide the baking sheet under the broiler and keep watch until the cheese melts, which will probably be a matter of seconds and not minutes.
- Heat about a teaspoon olive oil or butter in a skillet over medium-high heat. After about 20 seconds, crack the egg into the skillet. Reduce the heat to medium and let the egg sit until the white sets completely. Sprinkle with salt and pepper.
- Remove the melted cheese toasts from the broiler and slide onto a plate. Using a spatula, place the egg, sunny-side up, on a slice of cheesy toast. Top with bacon or ham, if desired, then top with the other cheese toast, cheese side down. Eat immediately, employing the hot sauce as desired, or return the sandwich to the skillet, adding more oil or butter if needed, and cook it as you would a grilled cheese sandwich until the bread is golden and crunchy, flipping the sandwich once. Then eat immediately.

- To prepare this egg and cheese grilled sandwich recipe, lay the whole wheat bread slices on a clean surface (or a tray). Carefully spread butter on one side of the bread slices. Once done, keep them aside until needed again.
- Next, put a non-stick pan on medium flame and melt butter in it. Once the butter has melted, crack open eggs in the pan. Cook the eggs until the egg whites are completely settled and the egg yolk becomes thick. Top it up with black pepper powder and salt to add more flavour. Then, remove the eggs from the pan and keep them aside.
- Now, put another non-stick pan on medium flame and transfer the bread slices on it. Make sure to keep the side with butter on it, facing towards the pan. Add cheese slice on it followed by the scrambled eggs (see step-2 for reference).
- Add the remaining bread slices to cover the sandwich. Make sure to keep the side with butter on it, facing upwards.
