RANDY'S THICK SPAGHETTI SAUCE
This is by and far the best sauce I have ever eaten. My husband finally gave me his recipe and allowed me to take over the task of making it. The longer you simmer this, the more the flavors will blend. It is a nice chunky sauce. Don't cut back on the salt amount...it really is 5 tsps. If you like your green peppers and onion with a little crunch, no need to cook until they are soft. I usually make the sauce around lunch time and keep in the crockpot until supper time.

CHEATER'S THICK SPAGHETTI SAUCE
This recipe came about after 6 years of making my family suffer through a thin, watery, homemade Weight Watcher's spaghetti meat sauce; hence, the words "cheater" and "thick" in the recipe title. Maybe my husband and son just don't have much to compare it against, but they really enjoyed this sauce. It made me actually enjoy the whole wheat pasta that I usually just endure! This recipe appears to be high in fat, but you will drain off the oil after browning the ground beef, if that's any consolation. I didn't add salt because there's usually enough sodium in the bottled sauce to preserve a small side of beef.

Steps:
- Heat oil in large, deep pot until hot but not smoking.
- Lower heat to medium-low and add dried onion. Fry onion, stirring occasionally, until it softens and turns a light brown color, about 4-5 minutes. Watch it carefully, and monitor the heat. If the onion is jumping excitedly, your pan is too hot. You want the onion to lie on the bottom of the pan and twitch nervously.
- Add ground beef and brown it until there's no more pink. Don't stir the beef too much as it browns. You can get big chunky pieces of meat if you let it brown on one side, then flip it over and break it up just a little with a wooden spoon.
- Drain ground beef of excess fat. Don't be too thorough about this, because you need about a teaspoon of fat in which to fry the bell pepper.
- Over medium-low heat, fry the bell pepper for about a minute in the teaspoon of fat that you left in the pot.
- Add ground beef back to the pot.
- Dump in both jars of spaghetti sauce, both cans of tomato paste, and the water. Mix thoroughly.
- Reduce heat to low, cover, and simmer for 30 minutes. Serve over pasta.

HOMEMADE CHUNKY SPAGHETTI SAUCE
We used to have this incredible Russian restaurant here and they used to make something similar to this. I decided when they went out of business that I would try to replicate one of their fabulous dishes. You may add or subtract any of the veggie ingredients to you liking. It seems to be if you add more veggies of various kinds, you may get a pasta primavera, without the tomato paste.

Steps:
- Get a skillet deep enough to hold the contents and the liquid of the sauce. Remember that the veggies will cook down so you need not use a pot unless you are doubling the recipe
- Quarter your mushrooms.
- Use about ½ a green pepper. You may use more or less depending on your taste for green pepper.
- Chunk the onion. Kind of like strips then cut the strips in half. This gives the sauce a great flavor.
- Heat your pan and add the olive oil. Make sure that the olive oil covers the bottom of the pan.
- Add your onion and sauté until they are almost clear.
- Add your green pepper and sauté until they are almost soft.
- Add your mushrooms and sauté until they are almost soft.
- If you are using zucchini, add now. This will take awhile to cook down so be patient.
- At this point you may need to add more oil or butter.
- When your veggies are at a good constancy, add 1-2 cans of diced tomatoes, 2 cans of sliced black olives, 2 pinches of dried basil, and the jalapeno or red pepper if you chose to use.
- Cover and let simmer for 30-45 minutes on low.
- Start cooking linguine
- By the time the linguine is done, so should be your sauce.
- Drain and serve linguine and cover with sauce.
CHUNKY PASTA SAUCE
Your kitchen will smell heavenly when it's time to dish up this hearty meal. With beef, pork and lots of veggies over pasta, this dish has it all. Add the extra 1/2 cup water if you want your sauce a bit thinner. -Christy Hinrichs of Parkville, Missouri

CHUNKY SPAGHETTI SAUCE
I don't like most spaghetti sauce. It's too sweet and too thin for my tastes. This is my own recipe. It's not designed to go in the spaghetti. It's served on the side at the table, that way you can have as much or as little as you want.
