1 large onion, chopped
1 stalk celery, finely chopped
1 tablespoon chopped garlic
1 (16 ounce) package dry lentils, rinsed
1 cup shredded carrot
8 cups water
2 (14.5 ounce) cans chicken broth
1 (28 ounce) can diced tomatoes
1 tablespoon garlic powder
1 tablespoon chopped fresh parsley
2 bay leaves
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried basil
1 tablespoon salt, or to taste
½ teaspoon black pepper
½ pound ditalini pasta

Steps:

  • Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
  • Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.

4 tablespoons extra-virgin olive oil
1 pound kielbasa, cut diagonally into 1/2-inch-thick slices
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
7 garlic cloves, chopped
3 1/2 cups Le Puy lentils (about 2 pounds), rinsed and picked over
2 cups homemade or low-sodium store-bought chicken stock
1 dried bay leaf
3 teaspoons finely chopped fresh rosemary
Coarse salt and freshly ground pepper

Steps:

  • Heat 2 tablespoons oil in a large saucepan over medium-high heat until hot but not smoking. Brown sausage, about 6 minutes. Transfer to a bowl.
  • Add onion, carrots, celery, and garlic to pan; cook, stirring occasionally, until softened, about 5 minutes.
  • Stir in the lentils, stock, 3 1/2 cups water, bay leaf, 1 teaspoon rosemary, and remaining 2 tablespoons oil; season with salt. Bring stew to a boil. Reduce heat to medium-low, and simmer until lentils are just tender, about 50 minutes.
  • Return sausage to the pan; cook until heated through, about 5 minutes. Stir in remaining 2 teaspoons rosemary. Season stew with salt and pepper.

1/4 cup olive oil, plus extra for serving
4 cups diced yellow onions (3 large)
4 cups chopped leeks, white and light green parts only (2 leeks)
1 tablespoon minced garlic (2 large cloves)
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon minced fresh thyme leaves
1 teaspoon ground cumin
3 cups medium diced celery (8 stalks)
3 cups medium diced carrots (4 to 6 carrots)
3 quarts Homemade Chicken Stock, recipe follows, or canned broth
1/4 cup tomato paste
1 pound kielbasa, cut in 1/2 lengthwise and sliced 1/3-inch thick
2 tablespoons dry red wine or red wine vinegar
Freshly grated Parmesan, for serving
3 (5-pound) chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in 1/2, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in 1/2 crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns

Steps:

  • In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.
  • In a large stockpot over medium heat, heat the olive oil and saute the onions, leeks, garlic, salt, pepper, thyme, and cumin for 20 minutes, or until the vegetables are translucent and tender. Add the celery and carrots and saute for another 10 minutes. Add the chicken stock, tomato paste, and drained lentils, cover, and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, or until the lentils are cooked through and tender. Check the seasonings. Add the kielbasa and red wine and simmer until the kielbasa is hot. Serve drizzled with olive oil and sprinkled with grated Parmesan.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

2 Tbsp. olive oil
⅓ lb. pancetta (about 6 thick slices)
1 lb. Italian sausage (mild, sweet or hot; whatever your preference)
1 medium-large sweet yellow onion, diced into 1-½ - 2 cups
4 large carrots, diced
3 large stalks celery, diced (include as many of the leaves as possible)
3 cloves garlic, minced to equal 1 Tbsp.
1 cup brown lentils, preferably Umbrian lentils
4 cups chicken broth/stock
2 whole unpeeled zucchini, cut into ¼" chunks
1 green bell pepper, diced
2 28 oz. cans whole peeled tomatoes (San Marzano if possible)
½ lb (3 large) russet potatoes, cut into ¾" chunks
1 15-oz. can artichoke hearts, drained and diced
¼ tsp. red pepper flakes
1 Tbsp. dried oregano
1 Tbsp. dried basil
1 tsp. dried sage
1 6-oz. bag baby spinach
¼ cup chopped fresh Italian parsley
1 tsp. salt

Steps:

  • Pour olive oil into a large pot on a medium heat stove burner.
  • In the hot olive oil, saute the diced pancetta and Italian sausage until browned about 10 minutes. Then remove the pancetta and sausage with a slotted spoon, leaving the fat in the pan. Set the pancetta and sausage aside to add back into the pot later.
  • Add the sofritto: onions, carrots, and celery and saute for 7 minutes, stirring frequently, scraping up any browned bits on the sides and bottom of the pot.
  • Add the garlic, cooked pancetta and Italian sausage, lentils, chicken broth/stock, and all of the herbs.
  • Add the tomatoes, zucchini, green pepper, artichoke hearts, potatoes, and 1 to 2 chunks/rinds of Parmigiano cheese.
  • Bring to a boil. Once a boiling point has been reached, turn the heat down to simmer for 45 minutes or until potatoes and lentils are done, but not mushy.
  • Add baby spinach and parsley. Cook for another 5 minutes until the spinach and parsley have just wilted.
  • Add salt and freshly ground black pepper to taste.
  • Garnish with shaved Parmigiano cheese and parsley sprigs.

1 tablespoon olive oil (plus extra)
1 white onion (diced)
1 small green bell pepper (diced)
1 small red bell pepper (diced)
1 small leek (chopped (white and light green parts only))
2 ribs celery (diced (about 1/2 cup))
4 cloves garlic (minced)
2 links Andouille sausage (sliced into half moons)
1 tablespoon tomato paste
1 tablespoons Creole seasoning (prepared or homemade)
1 1/2 tablespoons flour
white wine (optional)
2 cups chicken or vegetable broth
10 ounce can tomato sauce
14 ounce can diced tomatoes
1/3 cup dried French du Puy lentils (or black beluga)
1 cup spinach leaves (slices chiffonade)
kosher salt

Steps:

  • In a 4 to 5 quart Dutch oven or stock pot, heat the butter and olive oil until melted and shimmering.
  • Add the chopped vegetables and saute until soft (5-8 minutes). Add the minced garlic and continue sauteing until fragrant.
  • Scoot the vegetables to one side of the pan, and add the sausage to the cleared area. Stir the sausage pieces in place until the edges are golden (3 to 4 minutes). Mix into the vegetables.
  • Scoot the sausage/vegetables to the side once again, and add a glug of oil to the cleared side. Add the tomato paste, seasonings, and a big pinch of salt to the oil, and stir to create a fragrant paste. Stir into the vegetables.
  • Sprinkle the flour over the vegetables and mix well. The vegetables will be thick and pasty. Add a splash of broth to loosen things up. Stir for several minutes, to cook the "raw" out of the flour.
  • If there is flour paste stuck to the bottom of the pot, use broth or a splash of white wine to deglaze the pan (white wine is very effective, but optional).
  • Add the remaining broth, tomato sauce, tomatoes, and lentils, and bring the soup to a light boil. Reduce heat to maintain a gentle simmer, cover partially with a lid, and let the soup cook for 40 minutes. Check occasionally, stirring well through. If too thick, add a small amount of water, and continue cooking.
  • When the lentils are cooked through (they should be plump and al dente but tender), turn off the heat and stir in the spinach. Taste, and add more kosher salt if needed.

2 onions, chopped (about 2 cups)

1 teaspoon dried thyme

2 tbsp. olive oil
8 chicken sausages
1 large onion thinly sliced
1 red pepper sliced
400 g can chopped tomatoes
1 tbsp tomato paste
150 g green / puy lentils
450 ml chicken stock
125 ml red wine
1/4 tsp. dried mixed herbs
1/4 tsp. dried crushed chillies
Salt and freshly ground pepper

Steps:

  • Heat one tablespoon of olive oil in a stove proof casserole dish or a medium sized saucepan and fry the sausages for about 8 minutes turning frequently so they don't burn. Transfer to a plate.
  • Add another tablespoon of oil and gently fry the onion and pepper for about 5 minutes until softened.
  • Add the can of tomatoes, tomato paste, lentils, stock, wine, herbs and chillies. Stir well. Cover the pan and simmer for about 30 minutes until the lentils are tender. Season to taste.
  • Whilst the lentils are simmering away cut the sausages in half.
  • Once the lentils are ready stir in the sausages.
  • Serve with green vegetables like broccoli or some rustic bread.

  • Combine both stocks and lentils in large pot over high heat. Bring to boil. Reduce heat, cover and simmer 30 minutes.
  • Meanwhile, heat medium skillet over medium heat. Add fennel; sauté until seeds are light golden brown, about 2 minutes. Remove seeds from skillet.
  • Heat oil in same skillet over medium heat. Add celery, carrot and onion; sauté until onion is translucent and celery and carrot are tender, about 5 minutes.

  • Cut the andouille sausage in just over half inch thick circles. Rinse the lentils, remove any impurities. Dice the onion, carrots, celery and garlic.
