CREAMY LENTIL & SPINACH SOUP WITH BACON



Creamy lentil & spinach soup with bacon image

2 tbsp olive oil , plus extra for frying
2 onions , finely chopped
2 carrots , finely chopped
2 celery sticks, finely chopped
140g green lentil
1 ½l weak vegetable stock
200g bag baby spinach
4 tbsp double cream , plus a drizzle to serve
6 rashers smoked streaky bacon

Steps:

  • Put the oil, onions, carrots and celery in a large saucepan, and cook for about 10 mins to soften.
  • Stir in the lentils and pour in the stock. Bring to the boil, then turn down and simmer for 30-35 mins or until the lentils are soft, topping up with water if the mixture begins to dry out. Pop in the spinach and cook for a few mins more, until wilted. Blitz the soup until smooth, then stir through the cream and season. Keep the soup warm over a low heat.
  • Heat a little oil in a non-stick pan over a medium heat. Add the bacon and fry until crisp and golden. Ladle the soup into bowls, drizzle with a little cream and crumble over the crispy bacon.

15ml/1 tbsp vegetable oil
2 rashers of smoked bacon, chopped
1 large onion, chopped
450g/1lb carrots, washed, trimmed and chopped
100g/4oz red lentils
1.4ltr/2 1/2pt vegetable stock made with low salt stock cube*
15ml/1tbsp tomato puree
5ml/1tsp medium curry paste
yogurt, fresh coriander and croutons to serve
* Kallo do a very low salt vegetable stock cube

Steps:

  • 1. Heat the oil in a large pan, add the bacon and onion and saute over a medium heat for 4-5 mins or until pale golden.
  • 2. Stir in the carrots, lentils, puree and curry paste and mix well. Add the stock and bring to the boil. Boil uncovered for 5 mins, then reduce the heat, cover and simmer for 20 mins or until the carrots and lentils are tender.
  • 3. Blitz the soup with a stick blender until smooth. Adjust the seasoning to taste, then serve with a dollop of yogurt, a scattering of coriander and croutons if liked.

BACON LENTIL SOUP

8 strips of bacon*
1 cup diced onion**
1 cup thinly sliced carrots
1 cup chopped celery
4 garlic cloves, grated/minced
2 teaspoons dried oregano (or Italian seasonings)
1/2 teaspoon dried thyme
64 ounces vegetable stock
30 ounces canned diced tomatoes with juices***
1 pound dried lentils, rinsed and drained
1 bay leaf
1/2 teaspoon salt (more to taste)
1/2 teaspoon freshly ground black pepper (more to taste)

Steps:

  • Cook bacon in a large pot or dutch oven until crispy. Transfer bacon to a paper towel lined plate, leaving fat in pan.
  • Adjust heat to medium-low. Add diced onion, sliced carrots, chopped celery. Saute in bacon fat for 5 minutes. (If pot is dry, add a little olive oil as needed.) Add garlic, oregano and thyme, and cook, stirring for one minute.
  • Add vegetable broth, tomatoes, lentils, bay leaf, salt and pepper. Crumble bacon and add to pot.
  • Bring to a simmer and cover; cook, stirring occasionally, until the lentils are soft, about 1-1 1/2 hour. Salt and pepper to taste.
  • If desired garnish with grated cheese and herbs. And if you like it spicy, add a few dashes (or more!) of hot sauce.

1 tbsp olive oil
1 onion, diced
2 x 70g packs pancetta cubes
1 carrot (about 120g), finely diced
1 tsp ground cumin
½ tsp turmeric
2 garlic cloves, finely chopped
1 chilli, sliced
2 low-salt stock cubes
250g red lentils, rinsed

Steps:

  • Heat the olive oil in a large saucepan. Add the onion, 1 pack of pancetta and the carrot. Cook on a low to medium heat for 10 minutes until the onions are soft.
  • Add the cumin, turmeric, garlic and chilli and cook for a further 1 - 2 minutes until the aromas are released.
  • Pour in 1.25 litres of boiling water, crumble in the stock cubes and add the lentils. Bring to a simmer and cook for 20 mins, stirring occasionally to ensure the lentils aren't sticking.
  • Meanwhile, fry the remaining lardons in a small frying pan for about 10 minutes until crispy. You don't need to add any oil as plenty will run from the pancetta.
  • Serve the soup with a sprinkle of crispy lardons on top.

1 tablespoon olive oil

8 ounces finely shredded cabbage

Steps:

  • Heat oil in a large soup pot and fry the bacon until the fat begins to run.
  • Add carrots, onion, celery and cook over high heat and stirring as needed until the edges of the vegetables begin to brown.
  • Add lentils, tomatoes, garlic and stock.
  • When this comes to a boil, put the lid on and reduce heat, allowing to simmer as gently as possible.
  • Simmer for 45 minutes, then add the cabbage.
  • Cook an additional 15 minutes.
  • Adjust seasonings with salt and pepper.
  • Stir in parsley, and serve immediately.

200g Red Split Lentils, rinsed in a sieve to remove dust and debris
1 Large Onion, peeled and diced finely
3 Carrots, Peeled and cut into small dice
6 Rashers of Bacon Bacon, cut into small pieces OR 1 Small Ham hock or Gammon Joint
1.5-2 Litres of water
1 Ham Stock Cube (only if using bacon - you shouldn't need it if you are using a ham hock or gammon joint because the meat will flavour the soup beautifully)
Salt and Pepper

Steps:

  • Place the rinsed lentils in a large saucepan with the onions and carrots. If you're using a ham hock or gammon joint place this on top of the lentils and vegetables. If you're using bacon there's no need to add it yet.
  • Pour over enough cold water to cover everything completely - about 1.5-2 litres. Lentils swell as they cook so you might need to add more liquid later.
  • Bring to the boil, then turn down to a gentle simmer. Add the chopped bacon and ham stock cube if using, then cook on a gentle heat for 11/2-2 hours. Give the soup a stir every now and then to make sure it isn't sticking to the bottom of the pan.
  • If you're cooking a ham hock or gammon joint with the soup, it will defintely need a good two hours on a slow simmer. The soup is ready when the ham hock or gammon joint pulls apart easily with two forks. Carefully lift the joint from the soup and place on a chopping board.
  • Using two forks, shred the meat into small chunks and add to the soup. Taste the soup to see if it needs salt and pepper before serving.

Steps:

  • Combine onion, celery, carrot, bacon and garlic in heavy Dutch oven. Stir over medium-high heat 2 minutes. Reduce heat to medium-low; cover and cook until vegetables are tender, about 7 minutes. Uncover; add 7 cups broth, lentils, thyme and bay leaf and bring to boil. Reduce heat and simmer uncovered until lentils are tender, stirring occasionally, about 45 minutes. Discard thyme sprigs and bay leaf.

EASY BACON AND LENTIL SOUP

Steps:

  • Wash the lentils and put them in a large saucepan with the stock. Add salt and pepper and the clove.
  • Roughly chop the onion, bacon and garlic and add these to the saucepan along with the tinned tomatoes.
  • Bring to the boil, cover and simmer for about 1 hour, until the lentils are soft.
  • Peel and roughly chop the potatoes into similar sizes and add these to the saucepan. Cook for a further 20 minutes or until the potatoes are tender.
  • Remove the clove and then blend or purée the soup until smooth.
  • Serve hot with crusty bread.

Lately, we've been eating lunch at soupesoup in Montreal quite often. I satisfied my soup craving-which has been raging since early fall-by discovering all kinds of new flavours and ideas I never would have thought of. They're talented over there and it's inspiring. Basically, it all just made me want to eat even more soup and this idea came to me on the train to Toronto, where the food was awful and I would have given anything for a bowl from soupesoup. I pictured lentils, bacon, and vegetables, and my day was made (or not, because I wasn't going to be able to have any); three simple ingredients that I knew would be great together. I tried it out a few weeks later, and it was every bit as good as I'd imagined.

1 cup green or brown lentils, dried
yellow onion, chopped
4 slices bacon, chopped
1 tablespoon olive oil
3 celery stalks, chopped
8 cups store-bought beef broth Replacement options or vegetable broth
1 cup canned diced tomatoes
1 tablespoon red wine vinegar Replacement options or sherry vinegar
1 teaspoon dried oregano
1 bay leaf
Salt and pepper, to taste
2 cups kale, minced Replacement options or whole baby spinach

Steps:

  • Rinse the lentils thoroughly and set aside.
  • In a pot, heat the oil and cook the onion and the bacon for 5 minutes.
  • Add the celery and lentils and cook for 2 more minutes.
  • Add the remaining ingredients, aside from the kale, and bring to a boil. Simmer for 30 minutes.
  • Add the kale and cook for 10 more minutes. Adjust the seasoning and serve.

Steps:

  • Cook bacon in large saucepan or Dutch oven on medium heat until crisp. Remove all but 1 tablespoon drippings from pan. Add butter, onion, carrots, celery and garlic; cook and stir 5 minutes or until softened. Add beef stock and tomatoes; bring to boil.
  • Stir in lentils and seasonings. Return to boil. Reduce heat to medium-low; cover and simmer 30 to 40 minutes or until lentils are tender. Discard bay leaves.
  • With center part of cover removed to let steam escape, puree 2 cups of the soup in blender on high speed until smooth. Return pureed mixture to saucepan. Ladle into soup bowls.

1 1/2 cups green or black lentils
1/2 fennel bulb, fronds reserved, for garnish
1/2 red onion, peeled, root end left on
1/2 carrot, peeled
1 stalk celery
2 bay leaves
1 small bundle thyme
2 cloves garlic, smashed
Salt
Extra-virgin olive oil
5 slices bacon, cut into lardons
1/2 cup red onion, finely diced
1/2 cup celery, finely diced
1/2 cup fennel, finely diced
1/2 cup carrot, finely diced
1 clove garlic, smashed and finely chopped
3 tablespoons whole-grain mustard
1/2 cup red wine vinegar
Kosher salt

Steps:

  • To cook the lentils: In a large saucepan combine all the ingredients. Add water to the pot until it covers the ingredients by about 2 inches. Bring the water to a boil over medium heat, then reduce heat to a simmer. Cook for about 20 to 30 minutes or until the lentils are soft.
  • Remove the pot from the heat and season the water with salt. Taste the water to make sure it is seasoned. Let the lentils sit in the salty water for about 10 to 15 minutes. This will allow the lentils to absorb the seasoned water. Ladle off 1 cup of the lentil cooking water and reserve.
  • Remove all the vegetables and aromatics from the lentils and discard. Strain the lentils from the water.
  • To assemble the lentils: Place 2 tablespoons of olive oil in a large saute pan over medium heat. Add the bacon lardoons. When the bacon has rendered off a lot of fat and has become brown and crispy, add the onions. Season the onions with salt and sweat them until they become very soft and aromatic.
  • Add the celery, fennel and carrot. Season with salt and saute over medium heat until the vegetables start to become soft and aromatic, about 2 to 3 minutes. Add the garlic and saute for 1 to 2 minutes more. Add the cooked lentils, 1/4 of the reserved lentil cooking water, the mustard and vinegar. Cook until most of the liquid has reduced. Taste for seasoning, add salt or more vinegar, if needed. Serve hot or at room temperature.
