"I came up with this recipe to use an over-abundance of corn from the garden one year. Everyone liked it so much that I substituted frozen corn so I could make it all year round," writes Trisha Kruse of Eagle, Idaho.

1 package (16 ounces) frozen corn, thawed
5 plum tomatoes, seeded and coarsely chopped
1 large onion, chopped
2 jalapeno peppers, seeded and finely chopped
3 garlic cloves, minced
2 tablespoons olive oil
1/4 cup minced fresh cilantro
1/2 teaspoon salt

Steps:

  • Preheat oven to 425°. In a large bowl, combine the corn, tomatoes, onion, jalapenos and garlic. Drizzle with oil; toss to coat. Transfer to a 15x10x1-in. baking pan coated with cooking spray., Bake for 20-25 minutes or until onion is tender, stirring twice. Spoon into a bowl. Stir in cilantro and salt. Serve warm.

2 (15-ounce) cans black beans , drained
1 1/2 cups corn kernels
1 red or yellow bell pepper, diced
1 avocado, diced, optional
3 tomatoes, chopped
4 green onions, chopped
1/3 cup fresh cilantro, chopped
1/3 cup lime juice
1/3 cup olive oil
1/2 teaspoon kosher salt, or to taste
1/8 teaspoon cayenne pepper

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine beans, corn, pepper, tomatoes, onion, and cilantro, and gently toss.
  • In a separate small bowl, whisk together lime juice, olive oil, sea salt, and cayenne pepper until well combined.
  • Pour dressing over beans mixture and gently toss to combine well and coat all of the bean salad ingredients.
  • Gently fold in diced avocado just until well dispersed. If avocado is too soft and fragile, you can also just place the avocado on top of individual portions. If you have some extra time, this black bean salad recipe is best prepared a few hours before servings so that you can chill it in the refrigerator (for at least an hour) to allow all those great Southwest flavors to mingle and fully develop.

2 large fresh tomatoes (I like creole and beefsteak) or 2 lbs cherry tomatoes
1 1/2 cups fresh corn or 1 1/2 cups frozen corn, blanched and drained
8 fresh basil leaves
balsamic vinegar
extra virgin olive oil

Steps:

  • Wash tomatoes and remove leaves, cut into bite sized pieces or slices Tear basil leaves into small pieces Combine basil, tomato and corn in a bowl Drizzle with balsamic vinegar and good olive oil, to taste.
  • Stir.

3 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
6 ears fresh corn, shucked
2 cups red or orange grape tomatoes, halved
8 ounces mozzarella pearls or fresh mozzarella, cut into small cubes
1 bunch scallions, thinly sliced
1 1/2 cups fresh basil leaves

Steps:

  • Whisk together the vinegar, 2 teaspoons salt and some pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
  • Shear off the corn kernels with a sharp knife over a bowl (you should have about 4 cups). Toss in the tomatoes, mozzarella and scallions. Pour the vinaigrette over the salad and toss to coat. Cover and let stand for at least 15 minutes and up to 2 hours. Before serving, tear the basil over the salad and stir.

Six large ears of summer corn (or equivalent in smaller ears)
1/4 cup vegetable or peanut oil
2 pints of red cherry tomatoes (not grape)
1 or 2 (depending on size) Anaheim, poblano or New Mexican green chili. (Alternatively one four ounce can of roasted green chili can suffice)
1/2 cup thinly sliced red onion.
3 limes
1/4 cup olive oil
sea salt
2 avocados

Steps:

  • Husk and clean corn. Brush with vegetable oil. Wash green pepper(s). When the grill is hot place corn and chili on the grill over flame. The chili will char and blister. Have a plastic bag ready. Turn corn as it browns. Put on plate and put aside to cool. When the chili is roasted place in plastic bag and let steam for at least 10 minutes. Cut tomatoes in half and place in serving bowl. Lightly sprinkle with sea salt Cut the corn from the cobs and add to the tomatoes. Strip the roasted skin from the chili(s) and seed. Don't rinse (it removes the oils) Dice the chili(s) and add to the corn-tomato mixture. Add the sliced onion. Mix the juice from the limes and the olive oil together and mix with the salad. Let rest at room temperature for 30 minutes to allow the flavors to meld. If serving later then cover and refrigerate. When ready go serve, dice the avocados and add to the salad, gently stir. Check the seasoning. Add salt if needed. Best served the same day.

You can take a corn and tomato salad in a number of directions, but at the end of the day it shouldn't be much more than a dish you can make perfectly only in mid- to late summer, and one that showcases its primary ingredients. My version here marries corn and tomatoes with chile, avocado, cilantro and lime. It is just plain good. At the end, you've got meaty smokiness from bacon; that incredible sweetness of corn; the fruity acidity of tomato; the tender, smooth fattiness of avocado, and the sharpness of chile. It's a summer winner, one that you shouldn't even try after the first frost.

1/4 pound bacon, chopped
1 small red onion, chopped
4 to 6 ears corn, stripped of their kernels (2 to 3 cups)
Juice of 1 lime, or more to taste
2 cups cored and chopped tomatoes
1 medium ripe avocado, pitted, peeled and chopped
2 fresh small chilies, like Thai, seeded and minced
Salt
black pepper
1/2 cup chopped fresh cilantro, more or less

Steps:

  • Cook bacon in a large skillet over medium-high heat until it begins to render fat; add onion and cook until just softened, about 5 minutes, then add corn. Continue cooking, stirring or shaking pan occasionally, until corn begins to brown a bit, about 5 more minutes; remove from heat and let cool for a few minutes. Drain fat if you wish.
  • Put lime juice in a large bowl and add bacon-corn mixture; then toss with remaining ingredients. Taste, adjust the seasoning and serve warm or at room temperature.
