BLUEBERRY BANANA MUFFINS
Steps:
- Preheat oven to 375°F. Line a muffin pan with paper liners.
- Toss blueberries with 1 tablespoon of flour and set aside.
- Whisk dry ingredients in a medium bowl.
- In a separate bowl, combine bananas, sugar, melted butter, egg, and vanilla. Add to dry ingredients and mix just until combined. (Do not overmix)
- Gently fold in blueberries.
- Divide batter evenly over 10 muffin wells.
- Bake 18-20 minutes or until a toothpick comes out clean. Cool completely.
- Once cooled, mix glaze ingredients until smooth adding additional lemon juice to reach desired consistency. Drizzle over muffins.

- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
- BLUEBERRY BANANA MUFFINS GIFT TAG:
- Additional ingredients to be added by the recipient: 3/4 cup milk, 3/4 cup butter, melted, 2 eggs, 1 tsp vanilla extract, 2 cups fresh blueberries and 1 large ripe banana, mashed.
- BLUEBERRY BANANA MUFFIN INSTRUCTIONS:

- Add the contents of the jar, and stir just until mixed; do not overstir.

- In large mix bowl, combine sugar, buttermilk, butter, bananas, eggs and vanilla.
- Beat at medium speed, scraping bowl often until creamy (1-2 min).
- Add flour, baking soda and salt.
- Beat at low speed until moistened (1-2 min.).
- By hand, stir in blueberries.
- Spoon into paper-lined muffin cups.
- Bake for 25-30 min.
- or until toothpick inserted into center comes out clean.
- Remove from pan, cook and sprinkle with powdered sugar.
- Makes 6 Texas-size muffins with a little left over to freeze and bake later.

- Preheat oven to 425 degrees.
- Lightly spray a 12-cup muffin tin with olive oil or line with paper liners.
- Place the bananas, yogurt, honey, olive oil and vanilla in a large bowl. Stir together until well mixed.
- In a separate bowl sift together the flour, baking powder, baking soda and salt. Add the dry ingredients to the banana mixture and stir until just combined.
