These luscious squares have a raspberry jam layer tucked between a crisp sugar-cookie crust and a lemon topping. Be sure to provide forks, paper plates and plenty of napkins for serving these old-fashioned favorites. - 1 Preheat an oven to 350F. Butter a 9-by-13-inch baking pan. Place the 1 3/4 cups flour, 1/2 cup confectioners' sugar and salt in a food processor and pulse to blend. Add the butter and process until the dough begins to form a ball, adding the ice water if necessary. 2 Press the dough evenly over the bottom of the prepared baking pan. Bake until the crust is lightly golden, about 20 minutes. Let cool for at least 30 minutes, then evenly spread the jam over the crust. 3 In a bowl, whisk together the granulated sugar, the remaining 1/3 cup flour and the lemon zest. Place the eggs in a large bowl and slowly add the flour mixture, beating with an electric mixer until well blended, 1 to 2 minutes. Add the lemon juice and mix to combine. 4 Pour the lemon mixture carefully over the raspberry jam layer, making sure to keep layers separate. Bake until the lemon topping is just set, 25 to 30 minutes. Let cool in the pan. Dust with confectioners' sugar and cut into squares with a serrated knife. Place in a covered container and keep cool until ready to serve. Makes 24 squares.
RASPBERRY LEMON BARS
These delicious lemon bars are wonderfully tart with a novel addition of a raspberry layer which goes perfectly well. We love them.

- Preheat the oven to 350°F and spray a 9- inch square pan with nonstick cooking spray.
- Combine all the ingredients for the crust in a medium bowl and stir with a wooden spoon until a soft dough forms.
- Press evenly into the prepared pan.
- Chill for 10 minutes.
- Bake the crust for 15 minutes, then let cool in the baking pan for 15 minutes.
- Combine all the ingredients for the lemon topping in a bowl and whisk until blended.
- Spread the raspberry preserved evenly over the baked crust.
- Pour the lemon topping over the raspberry layer.
- Place in the preheated oven and bake for 20-25 minutes.
- Lower the oven temperature to 325°F and bake for 20-25 minutes longer, or until the topping is set.
- Transfer the pan to a wire rack and let cool completely.
- Refrigerate for at least 1 1/2 hours before cutting.
- Store at room temperature, or in the refrigerator if you prefer chilled squares.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, blend together the softened butter, 2 cups flour and 1/2 cup sugar. Press into whatever shallow pan (ungreased!) you have. 9" works great!
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
- In another bowl, whisk together the remaining 1/4 cup sugar and 3 tbls flour. Whisk in the eggs, lemon juice. and the blended 1/4 cup of frozen raspberries. Pour over the baked crust (it's fine if it's warm).
- Bake for an additional 20 minutes in the preheated oven. Keep an eye if the liquid is starting to firm up. Take it out and let it cool.

- 1. Stand 16 wafers around edge of plastic wrap-lined 8-inch square pan. Add boiling water to gelatin mix; stir 2 minute until completely dissolved. Stir in ice until melted.
- 2. Beat next 3 ingredients in large bowl with mixer until blended. Gradually beat in gelatin. Whisk in 2 cups COOL WHIP.
- 3. Pour half the gelatin mixture into prepared pan; cover with 16 wafers. Microwave preserves on HIGH 15 sec. or until melted; brush onto wafers. Top with remaining gelatin mixture and wafers.

I love raspberry and almonds together! I adapted this recipe from one I found on America's Test Kitchen. Toasting the nuts adds great flavor so don't skip this step. This recipe is easily doubled and would then be made in a 15" jelly roll pan.

- Pre-heat oven to 350 degrees, spray a 9x13" pan with nonstick cooking spray, you may also line the pan with foil with extra hanging over for easier removal, spray foil.
- In mixer bowl, mix flour, oats, sugars, extract, baking soda, salt, and nuts at low speed until combined, about 30 seconds. With mixer running at low speed, add butter pieces; continue to beat until mixture is well-blended and resembles wet sand, about 2 minutes.
- Transfer 2/3 of mixture to prepared pan and use hands to press crumbs evenly into bottom, bake until starting to brown, about 20 minutes.
- Using rubber spatula spread preserves evenly over hot bottom crust; sprinkle remaining oat/nut mixture evenly over preserves; bake until preserves bubble around edges and top is golden brown, about 30 minutes, turn pan halfway through baking time.
- Cool on wire rack then remove from pan using foil handles, cut into squares.
- NOTE:.
- After reading the first reviews for this, I realized the jam I used is lower sugar than many jams (9 gms per TBLS) It would be worth it to find a type that isn't overly sweet or try adding a little lemon juice to cut the sweetness.

LUSCIOUS LEMON-RASPBERRY BARS
Found this recipe on the box of the Betty Crocker Lemon Bars. The lemon bars by themselves are great, but add the raspberry preserves and you have a real treat. Lemon bar mix is not a recognized ingredient on this site, but that is what you'll need for the recipe. It can be found with the cake mixes in the grocery store.

- Heat oven to 350 degrees F whether using metal or glass pan.
- Stir filling mix, water and eggs using a fork (a few lumps will remain); set aside.
- Press Ready-Mixed Crust (dry) in bottom of 8 or 9" square pan. Bake 12 minutes.
- Drop cream cheese by spoonfuls onto hot crust and return pan to oven about 2 minutes to further soften cream cheese. Carefully spread cream cheese over crust. Stir filling mixture; pour over cream cheese.
- Bake 35 to 4 minutes or until top begins to brown and center is set.
- Cool 10 minutes.
- Spread preserves over top. Cool completely, about 1 hour.
- Sprinkle with powedered sugar.
- For 16 bars, cut into 4 rows by 4 rows. For ease in cutting, use sharp or wet knife.
- Store covered in refrigerator.

- Bottom Layer: Combine first 3 ingredients in bowl.
- Mix together well until crumbly.
- Press in a greased 9x9 inch pan.
- Filling: Spread jam over bottom layer.
- Top Layer: Beat eggs until frothy.
- Add sugar, coconut, vanilla and baking powder.
- Stir to combine well.
- Spread over jam layer.
- Bake in 350 oven for 30 minutes or until set and lightly browned.
- Cool and cut into 36 squares.
