My husband and I learned to make this lemony chicken entree on a cooking vacation in Italy. The recipe is very quick and easy, yet bursting with flavor and tenderness. The sauce is made by whisking a beaten egg into the reduced liquids. We love it served over a side of pasta to soak up all the lemon-wine sauce.

4 boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
2 tablespoons flour
1 tablespoon butter
1 tablespoon olive oil
1/2 cup white wine
1/2 cup chicken broth (or water and bullion cube)
1/4 cup fresh parsley, chopped
1 large egg, well beaten
1/4 cup fresh lemon juice, freshly squeezed

Steps:

  • Flatten each chicken breast by pounding gently with a flat meat mallet (Hint - pound chicken inside a Ziploc bag - no mess!). Sprinkle flattened breasts with salt and pepper. Then dredge chicken in flour; shake off excess.
  • Heat butter and oil over HIGH heat; just before butter starts to brown, add the chicken pieces and saute quickly to brown, about 3 minutes. Flip and brown other side (3 more minutes). It doesn't need to be totally cooked through because it will cook more in the sauce later.
  • Remove chicken to platter but leave all browned bits in the skillet.
  • Add wine to browned bits in skillet and boil to reduce wine by almost half (about 3 minutes). Add chicken broth and bring to a boil.
  • In a small bowl, whisk together egg and lemon juice. Stir egg/lemon mixture into simmering wine and broth, whisking constantly until sauce is smooth and a little thickened (about 2 minutes). It will thicken more when you put in the chicken breasts which have a flour coating.
  • Add chicken and any juices back into the sauce; allow to simmer about 5 minutes until chicken is cooked through, turning chicken once. Add chopped parsley.
  • Place chicken on platter and pour sauce over top; garnish with lemon slices and additional parsley sprigs.
  • HINT: Please use FRESH lemons and parsley; it has a big impact on the flavor of the dish, and besides, no aspiring Italian chef would consider using otherwise!

2 Cloves Garlic - Crushed (You can use fresh or frozen garlic)
Juice of 1 Lemon - Fresh (You may use fresh or store bought juice)
1.5 Cup Dry White Wine*
1 Tbsp Butter - Use any plain butter you may like
1/4 Tsp Black Pepper Powder
1 Tsp Salt (As per your taste)
1 Tbsp Capers or Banana Peppers - For Garnish / Decoration - OPTIONAL
2 Large Chicken Breast - Cleaned and cut into 8 pieces
4 Tbsp AP Flour
Pinch of Salt
Pinch of Pepper
1 Tbsp Butter
2 Tbsp Olive Oil - For Frying. (You may use any flavorless oil of choice)

Steps:

  • In a ziploc or bag, add flour, salt, pepper and mix evenly.
  • Take the four chicken pieces, drop them in the Ziploc bag and shake 3-4 time to evenly coat the chicken.
  • Remove the flour coated chicken and add the remaining chicken to this bag and coat evenly. (Now all the chicken are evenly coated with flour mix).
  • In a large pan, add butter, oil and heat it for a minute on high flame and then reduce the flame to medium.
  • Now, place the coated chicken pieces evenly on the pan and let them cook for 3-4 minutes.
  • Turn the chicken to the other side and cook for another 3-4 minutes (Till light brown or golden brown - as per choice).
  • Transfer the cooked chicken on the large plate.
  • In the same pan, add the butter and let it heat for a minute.
  • Add crushed garlic, stir 3-4 times and then discard the garlic.(This will flavor the sauce with garlic without giving it an over-powering garlic flavor) BUT (You may keep the garlic as per your choice and proceed with next step).
  • Now add white wine and stir everything well using a whisk.
  • Let it cook for a minute on medium flame and then reduce the heat to low.
  • Cook the wine for about 4-5 minutes and then add lemon, pepper and salt.
  • Whisk everything to a smooth consistency and add the cooked chicken.
  • Let the chicken cook in the sauce for 2-3 minutes and then turn off the heat.
  • You can pour the entire content of the pan in a serving dish or can place 2-3 chicken pieces in
  • individual plate and pour some sauce over and around it.
  • Garnish with some sliced capers / banana pepper and serve.

1 lemon
1/2 cup chopped white onion
1/4 teaspoon red chile flakes
1 tablespoon olive oil
Kosher salt and coarsely ground black pepper
3 cloves garlic, minced
1/2 cup lemon curd
1/4 cup chicken stock
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1/2 cup finely chopped fresh parsley

Steps:

  • Zest the lemon, then cut it in half and supreme/section it. Squeeze the juice of the remaining lemon center into a small bowl.
  • In a medium pot on medium heat, add the onions, red chile flakes, olive oil, a nice pinch of salt and plenty of coarsely ground black pepper. Cook, stirring, until the onions are tender, 5 to 8 minutes. Add the garlic, lower the heat and stir the garlic into the onions until lost and fragrant. Add the lemon zest and juice, lemon curd, chicken stock, Worcestershire, rosemary and thyme to the pot. Bring to a simmer and cook, stirring, until thickened, another 3 to 5 minutes. Gently stir in the parsley and lemon sections. Season with salt and pepper.
  • Use 1/4 cup to glaze a whole chicken while grilling. Drizzle the remaining glaze over the chicken when serving.

1 teaspoon dried thyme

3 tablespoons extra-virgin olive oil

1 red onion, thinly sliced
1 small bunch fresh thyme, leaves chopped
1/4 cup white wine (optional)
1 cup low-sodium chicken broth
Juice of 2 lemons

One 9-ounce bag spinach

Steps:

  • Season the chicken with the dried thyme, and salt and pepper to taste. Heat a large saute pan over medium heat and add the olive oil. Put the flour in a shallow dish. Working in batches, dredge the chicken in the flour and add to the pan; saute until cooked through, about 3 minutes per side. Transfer to a plate and tent with aluminum foil.
  • Add the red onion and fresh thyme to the pan and cook over low heat, stirring occasionally, until aromatic, about 5 minutes.
  • Combine the wine, chicken broth and the juice of 1 lemon in a bowl. Turn the heat under the pan to high and deglaze with the broth mixture, scraping up the pan with a wooden spoon. Cook until the liquid starts to reduce, about 10 minutes. Remove from the heat and whisk in 1 1/2 tablespoons butter. Season with salt and pepper.
  • Meanwhile, put the spinach in a microwave-safe dish and add 3 tablespoons water; cover loosely with plastic wrap and microwave until hot and wilted, 5 to 6 minutes. Drain and toss with the remaining 1/2 tablespoon butter, the juice of the remaining lemon, and salt and pepper to taste. Arrange on a platter and top with the chicken. Spoon the sauce on top.

½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

6 skinless, boneless chicken breast halves
1 lemon
¼ cup butter
3 cups fresh sliced mushrooms
2 tablespoons all-purpose flour
½ cup chicken broth, or more as needed

  • Preheat oven to 400 degrees F (205 degrees C).
  • Pour olive oil in an 8x8-inch glass baking dish. Place the chicken breasts in the dish, coating each side with oil. Squeeze the juice of 1/2 lemon over each chicken breast. Slice the rest of the lemon and place a lemon slice on top of each chicken piece.

3 -4 chicken breasts (I make the sauce below for three of us but it would stretch to 4 we like things more saucy)
lemon pepper seasoning
olive oil
1 teaspoon fresh ginger, grated
2 red chilies, finely chopped (add as few or as many seeds as you like.)
1 teaspoon finely grated lemon rind
1/2 cup water
1/2 cup dry white wine
100 ml lemon juice
2 teaspoons instant chicken bouillon granules
2 tablespoons honey
1 -2 tablespoon brown sugar (depending on personal taste)
1 teaspoon soy sauce
2 -3 teaspoons cornflour

Steps:

  • Heat some olive oil in a pan, sprinkle both sides of chicken breasts with lemon pepper seasoning, add to pan, cook both sides until browned and cooked through, approx 20-25 Min's.
  • Sauce.
  • While chicken is cooking make sauce.
  • Heat some olive oil in a saucepan, add ginger, chilies and rind, saute for 1 minute.
  • Add water, wine, lemon juice, stock granules, honey and sugar, stir until sugar dissolves.
  • Add soy, mix a little water with the cornflour add to sauce, stir until mixture boils and thickens.
  • To Serve: Slice chicken breasts and serve over rice or couscous or with veg and pour sauce over.

6 chicken thighs
2 teaspoons lemon pepper seasoning, divided
1/4 cup flour (use gluten free flour for gluten free version)
2 tablespoons olive oil
1 teaspoon olive oil
1/2 tablespoon butter
5 garlic cloves, minced
3/4 cup chicken stock
1 teaspoon lemon, pepper seasoning
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese or 1/2 cup parmesan cheese
2 tablespoons fresh lemon juice
3 green onions, green part only, chopped
2 tablespoons parsley, chopped
3 lemon slices, for garnish

Steps:

  • Chicken Thighs:.
  • Preheat oven to 375°F.
  • In zip-top bag, place 2 teaspoons of lemon pepper seasoning with flour and shake to mix thoroughly. Briefly shake thighs, 2 or 3 at a time, till coated.
  • Heat 2 tablespoons olive oil on medium-high heat in a large skillet. Add chicken thighs skin side down and cook for about 4 minutes until browned. Flip the chicken thighs over and cook for 2 minutes on the other side. Remove from heat. Put chicken thighs skin side up (crispy side up) on a baking sheet and bake at 375 F for about 20-25 minutes, until the chicken is fully cooked, the juices run clear and the chicken is no longer pink in the center.
  • Creamy Sauce:.
  • In the mean time, while the chicken is baking, make the sauce: Wipe the skillet you used for cooking the chicken thighs. Add 1 teaspoon olive oil and 1/2 tablespoon butter to skillet. Add minced garlic and cook, constantly stirring, for about 30 seconds. Add chicken stock and 1 teaspoon lemon-pepper seasoning to the skillet and bring to light boil. Add heavy cream and bring back to boil. Add shredded cheese and stir until melted. Reduce heat to simmer and keep stirring until the sauce is smooth. Remove from heat. Add 2 tablespoons freshly squeezed lemon juice and stir inches Top the sauce with chopped green onions (chop up only green portion of green onions and don't use white portion). Keep the sauce covered.
  • The chicken should be cooked by now. Check it for doneness and if chicken is completely cooked through, add it to the skillet on top of the sauce and on top of green onions. Top with chopped parsley and decorate with a few slices of lemon.

LEMON-PEPPER CHICKEN

For this recipe we created a lemon-pepper seasoning that also tastes great on steak, fish, and vegetables such as broccoli or green beans.

2 lemons
a 3-pound chicken, quartered
1 teaspoon black peppercorns
1 1/2 teaspoons coarse sea or coarse salt
1/4 cup water

Steps:

  • Preheat oven to 400°F.
  • With a vegetable peeler remove zest from lemon in strips and remove any white pith from strips. Coarsely chop enough zest to measure 1 tablespoon, reserving remainder for another use. Squeeze enough juice from lemons to measure 1/4 cup. In a flameproof roasting pan combine juice and chicken, tossing to coat, and arrange chicken skin sides down. Marinate chicken 15 minutes.
  • In an electric coffee/spice grinder grind zest, peppercorns, and salt until finely chopped. Arrange chicken, skin sides up, and pat lemon-pepper onto it. Roast chicken in middle of oven, basting occasionally, until just cooked through, 45 to 50 minutes. Transfer chicken to a platter and keep warm.
  • Add water to juices in roasting pan and simmer, stirring and scraping up any browned bits, until liquid is slightly thickened, about 2 minutes. Pour sauce over chicken.

1 teaspoon dried thyme
3 garlic cloves, minced
1/2 teaspoon lemon zest
1 teaspoon salt
1/2 teaspoon pepper
1/2 large onion
1 (4 -7 lb) broiler-fryer chickens, whole
1/4 cup dry vermouth
1/2 cup chicken stock
1 -2 tablespoon flour

Steps:

  • In a small bowl or mortar and pestle coarsely crush lavender and thyme. Then stir together with butter, zest, salt and pepper until well combined.
  • Spoon mixture onto a sheet of plastic wrap and form into a 4-inch log. Chill butter log until firm, at least 30 minutes, and up to 3 days.
  • Preheat oven to 400°F.
  • Rinse chicken and pat dry.
  • Slice herb butter and reserve 2 tablespoons for sauce.
  • Slide hand under skin of chicken breast to loosen skin from meat. Insert about 3/4's of the butter under the skin and spread the rest over the outside of chicken.
  • Truss chicken. Place the chicken in a flameproof roasting pan.
  • Slice the onion into large pieces and scatter around the chicken.
  • Roast bird in middle of oven until an instant-read thermometer inserted in thickest part of a thigh (be careful not to touch bone) registers 170° to 175°F.
  • It will take roughly 55-65 minutes for a four pound chicken and 8 minutes more per every pound over that.
  • Lift chicken and tilt, emptying any juices from cavity into roasting pan.
  • Remove the chicken to a platter, cover loosely with foil.
  • Sauce: Add vermouth to pan. Place pan over high heat; bring vermouth to boil, scraping up any browned bits and onions.
  • Strain the mixture into cup with pan juices.
  • Spoon fat off and pour back into the pan. Add reserved 2 tablespoons herb butter and bring to a simmer - or melt butter before adding to pan.
  • When butter has completely melted add flour and whisk until smooth.
  • Serve sauce with chicken.
