Lemon Or Lime Shaved Ice Food

LIME ITALIAN ICE

Steps:

• Fill a large bowl with ice water. Place another bowl inside so it's surrounded on all sides by the ice water. In a medium saucepan, bring water and sugar to a boil. When sugar has dissolved, remove from heat and add lime juice. Pour into bowl sitting in the ice bath to cool lime mixture, about 15 minutes. Pour mixture into a 10 by 12-inch baking dish that's sitting on a sheet tray and put in the freezer. After 1 1/2 hours, remove from freezer and scrape the ice with a fork, being sure to mix the softer center with the more frozen outer edges. Put back into the freezer for another 1 1/2 hours. Before serving, scrape again using the fork.

LEMON OR LIME SHAVED ICE

Steps:

• Shave the ice in an ice shaver, into a cup. Sprinkle the sugar on top of the ice. Pour the lime juice on top of the sugar. Using a spoon, incorporate the gooey lime-sugar mixture into the ice. Enjoy!

BASIL-LEMON ICE

Steps:

• Bring the juice of 5 lemons and 3/4 cup each sugar and water to a boil. Add 1/2 cup basil leaves and the zest of 2 lemons (in wide strips) and steep, off the heat, 45 minutes; strain. Add 2 cups cold water, then pour into a baking dish and freeze 1 hour. Meanwhile, hollow out 6 of the juiced lemon halves and freeze. Scrape the ice with a fork; freeze 4 more hours, scraping every hour. Serve in the lemon cups.

COOL SUMMER LEMON PIE

Steps:

• stir drink mix and water until dissolved.
• beat lemonade mix and ice cream on low until blended.
• stir in whip topping.
• freeze until mixture firms, then spoon into crust.
• freeze 4 hrs.
• let stand out for 10 min.
• before serving.
• garnish w/ lemon slices.

LEMON OR LIME TOFU PIE

Steps:

• Dissolve jello in one cup hot water.
• Cool in refrigerator until slightly thickened.
• Drain tofu and blend in blender until smooth.
• add lemon juice, jello, and half of cool whip.
• Blend mixture.
• Pour into pie crust.
• Spread remaininng cool whip on top of jello mixture.
• Refrigerate several hours.
• Optional: decorate pie with mandarin oranges.
