LEMONADE WITH LEMON GRASS AND DRIED LEMON



Lemonade With Lemon Grass And Dried Lemon image

Yield 8 to 10 servings

Number Of Ingredients 4

2 cups sugar
1 stalk lemon grass, chopped
1 dried lemon (see note)
3 cups fresh lemon juice (from about 24 lemons)

Steps:

  • Combine sugar, lemon grass and dried lemon in a saucepan. Add 2 cups water, and bring mixture to a boil. Simmer 5 to 7 minutes or until dried lemon is tender. Use a spoon to squash lemon against side of pan.
  • Turn off heat, and let mixture rest for 10 minutes, then strain it into a pitcher. Add lemon juice and 6 cups cold water. Chill until thoroughly cold, at least 2 hours. Serve over ice.

I use this sauce in a Singaporean-inspired "Grilled Beef in Grape Leaf" from chef/owner Chris Yeo of Straits Restarurant. I orginally acquired this recipe from Wine Enthusiast Magazine.

1 ounce lemongrass, chopped
10 mint leaves
15 cilantro leaves
2 ounces garlic
4 ounces red fresno bell peppers, seeded
1/4 cup fish sauce
1/4 cup corn syrup
3/4 cup lime juice
1/2 cup distilled vinegar
1 cup granulated sugar

Steps:

  • Combine all of the lemongrass sauce ingredients into a blender. Puree the ingredients until the garlic and lemongrass are finely chopped.
  • Serve with "Grilled Beef in Grape Leaf" which is posted on RecipeZaar.

  • Trim the lemon grass and chop roughly.
  • Place water and lemon grass in a large saucepan. Bring to a boil. Remove from heat and stir in the sugar. Cool to room temperature.
  • Strain. Sugar to taste.
  • Chill or serve over ice.
