Moist Lemon Drizzle Muffins with Lemon Curd Filling, a little treat for Easter or all year round. If you like the classic lemon drizzle cake, you will absolutely love these little beauties. Super easy to make, great for kids and grown-ups alike.

150 g self-raising flour
1 egg
125 ml full-fat milk
3 tbsp butter, melted and cooled
1 tsp baking powder
1 tsp lemon extract
1 lemon
100 g sugar + 3 tbsp for the drizzle
6 tsp lemon curd

Steps:

  • Preheat the oven to 200 degrees Celsius (390 Fahreneheit).
  • Sift the flour, and add it to a bowl together with the 100 grams of sugar and baking powder.
  • Beat the egg well until pale yellow and fluffy, add the milk and cooled melted butter.
  • Pour it over the dry ingredients, then grate the lemon and add the lemon zest to the other ingredients.
  • Use a spatula to mix gently until you get a batter, making sure you don't over mix it.
  • Grease and flour a 6-hole muffin tin, add half a tablespoon of batter to each hole, sprinkle a little bit of flour over, then add one teaspoon of lemon curd, sprinkle more flour over, and top with the remaining batter.
  • Bake for 20-25 minutes until golden.
  • Squeeze the lemon juice out of the lemon used for the zest, and mix it with the 3 tablespoons of sugar.
  • When the muffins are ready, drizzle the lemon juice mixture over as soon as they come out of the oven.
  • Leave to cool, then use a sharp knife to loose up the edges, then should come out easily.
  • Serve with extra lemon curd if you wish.

Steps:

  • Make lemon curd:
  • Whisk together zest, juice, sugar, and eggs in a 2-quart heavy saucepan. Add butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 6 minutes.
  • Force lemon curd through a fine-mesh sieve into a wide shallow dish, scraping bottom of sieve, then cover surface with wax paper. Cool completely, stirring occasionally, about 30 minutes.
  • Make and bake crust:
  • Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan (to make it easier to slide cake off bottom), then lock on side. 3Stir together crust ingredients in a bowl, then press onto bottom and 1 inch up side of springform pan. Place springform pan in a shallow baking pan and bake 10 minutes, then cool crust completely in springform pan on a rack.
  • Make filling and bake cheesecake:
  • Reduce oven temperature to 300°F.
  • Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, 1 to 2 minutes. Reduce speed to low and add eggs 1 at a time, beating until incorporated. Beat in sour cream and vanilla until combined.
  • Pour two thirds of cream cheese filling into crust, then spoon half of lemon curd over filling and swirl curd into filling with a small knife. (Avoid touching crust with knife to prevent crumbs getting into filling.) Repeat with remaining filling and curd.
  • Bake cheesecake until set 1 1/2 inches from edge but center trembles when pan is gently shaken, about 45 minutes. (Center of cake will appear very loose but will continue to set as it cools.) Transfer springform pan to a rack and immediately run a knife around top edge of cake to loosen. Cool completely, about 2 hours, then chill, uncovered, at least 4 hours. Remove side of springform pan before serving.

Steps:

  • Using a carrot peeler, remove the zest of 3 lemons, being careful to avoid the white pith. Put the zest in a food processor fitted with the steel blade. Add the sugar and pulse until the zest is very finely minced into the sugar.
  • Cream the butter and beat in the sugar and lemon mixture. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.
  • Pour the mixture into a 2 quart saucepan and cook over low heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken at about 170 degrees F, or just below simmer. Remove from the heat and cool or refrigerate.

Steps:

  • Preheat the oven to 350°F Line 12 muffin cups with cupcake liners. Put the flour, baking powder, salt, and sugar in a large bowl and whisk lightly to aerate and combine.
  • Mix the egg, yogurt, milk, and melted butter together in a pitcher. Pour them into the dry ingredients and mix lightly, stopping as soon as everything is combined - it's essential not to overmix or you'll get dense, cakey muffins.
  • Add 2/3 of the lemon curd in 6 or 7 dollops and quickly "marble" it lightly through the mixture (a couple of light stirs is really add that's needed). If your lemon curd is a bit stiff, just add it in little blobs.

3 egg yolks
¼ cup lemon juice
2 teaspoons lemon zest
6 Tablespoons sugar
¼ cup butter-cold and cut in pieces
1 cup all-purpose flour
¼ cup sugar
¼ cup light brown sugar
6 Tablespoons unsalted butter-melted
1 ½ cups all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda
1/3 cup unsalted butter-room temperature
¾ cup sugar
2 eggs
2/3 cup Greek yogurt
1 teaspoon vanilla extract
Grated zest from 1 lemon
2 Tablespoons fresh lemon juice
¾ cup powdered sugar
1-2 Tablespoons milk or cream

Steps:

  • Make lemon curd ahead, because it takes time to cool and set completely. I recommend cooking the lemon curd in a double boiler because mixing these ingredients over direct heat quickly leads to burning. Whisk together egg yolks, granulated sugar, lemon zest and lemon juice into the top pot of your double boiler, place over simmering water and then using a silicone spatula continue to stir as the curd cooks. Stir constantly to prevent the egg yolks from curdling. Cook until the mixture becomes thick, about 10 minutes. If curd isn't thickening, turn up the heat and constantly whisk.
  • Remove pan from heat, add butter and whisk into the curd. The butter will melt from the heat of the curd. Pour curd into a jar or bowl and place a piece of plastic wrap directly on top so it is touching the top of the curd to prevents a skin from forming on top. The curd will continue to thicken as it cools.
  • Preheat oven to 350F. Line a 12-count muffin pan with paper liners and set aside.
  • Stir together flour, baking powder, baking soda, and salt, set aside.
  • Beat the butter on high speed until smooth and creamy (about 1 minute), then add sugar and cream together. Add eggs, vanilla extract, lemon zest and Greek yogurt, and mix just to combine. Add lemon juice and mix to combine.
  • Finally, add flour mixture and mix until combined.
  • Spoon batter into prepared pan, filling them about ½ full with muffin batter.
  • Drop about a tablespoon of lemon curd into the center of each muffin, cover with a thin layer of muffin batter. The cups should be about ¾ full. Then generously top with streusel crumb. Gently press the crumb to stick to the batter.
  • Bake for about 25 minutes or until the muffin has set and the crumbs get nice golden brown color.
  • To make the glaze, stir together powdered sugar and milk (or creme) and drizzle over the muffins. If the glaze is too thin add more liquid, if it is too thin add more powdered sugar

  • Heat the oven to 190oC/375oF/gas 5. Line a 12 whole muffin tin with paper cases.
  • Sieve the flour into a bowl mix in the sugar
  • mix together the egg, sunflower oil, milk and vanilla extract in a bowl
  • Make a well in the flour and sugar mix add some of the liquid mix into the centre of the well in the flour mix then stir in (this helps the dry and wet mixes mix together) continue to stir in the wet mix to the dry mis to make the muffin batter add some juice of a lemon stir it in.
  • fill the muffin cases half full withthe batter then place 1 tsp of lemon curd on top then top up the muffin cases with remaining muffin batter.
  • place in the pre heated oven on the middle shelf DO NOT SLAM the door. Bake for 10-15 minutes until risen and firm.
  • For the sugar coating, microwave the lemon curd on high for 1 minute until melted. Put the sugar into a shallow bowl. Brush on the melted lemon curd top of each muffin and dip the tops of each muffin in the sugar to coat the tops.
  • If anyone can't get hold of Lemon Curd at your local store, you can make your own. Below I have included a recipe but feel free to use your own recipe.
  • The following will make a single large jar of lemon curd. Obviously you can multiply up the quantities to make more.
  • Put a large bowl over a pan of water. Put this on the heat, and once the water has come to the boil put 55g (2oz) of unsalted butter and 225g (8oz) of sugar into the bowl.
  • Meanwhile, grate the rind of two lemons and squeeze their juice into another bowl. Once the butter has fully melted, add the rind and juice to your large bowl over the pan. Finally, beat two eggs and pour them into the mixture. Stir the mixture with a wooden spoon. Keep it moving slowly all the time so that it coats the edges of the bowl. This will allow it to start cooking on the hot glass. Over the next 20 to 30 minutes it will thicken and you may start to see some white parts forming in the otherwise yellow mixture. This is perfectly normal. Eventually you will see that the mix has become considerably thicker and you will be able to draw the spoon through it and see the bottom of the bowl. Once you have reached this stage it is ready to be poured into the jar.
  • Remove the pan from the heat and very carefully ladle the hot mixture into a sterilised jar using a funnel if necessary to help you get it in, without it running down the sides.

175 g Caster sugar

175 g Self raising flour
200 g Lemon curd (good quality shop bought or homemade)
200 g Butter or Baking spread
400 g Icing sugar
2 tsp Lemon extract
Yellow 100s and 1000s (optional)
Lemon jelly slices (optional)

Steps:

  • Pre heat your oven to 160C Fan/180C/350F/Gas Mark 4 and line a muffin tin with 12 yellow cupcake cases (if you can't find yellow ones any colour will do)
  • Mix together the butter, sugar and lemon zest until light and fluffy, ideally using an electric whick
  • Add the eggs one at a time and whisk them in throughly, then gently whisk in the self raising flour
  • Separate the batter between the cupcake cases
  • Bake them for 20-25 minutes until they are golden brown and a skewer inserted comes out clean, leave them on a cooling rack to fully cool
  • Use a cupcake corer or a knife to make a hole in the middle of each cupcake
  • Fill the holes with lemon curd. You can do this using a spoon or put the lemon curd into a small piping bag, snip the end off and pipe it in
  • To make the buttercream mix together the icing sugar and butter using an electric hand whisk or food mixer until they start to come together, then add the lemon extract and mix until smooth. If it is too stiff, add a splash of milk
  • Put the buttercream into a large piping bag fitted with a Wilton 2D nozzle, or other nozzle of your choice and pipe it onto the cupcakes
  • Decorate with jelly lemon slices and yellow hundred and thousands, or any sprinkles of your choice
  • Store in an airtight container in a cool place, eat leftovers within 3 days
