CRYSTAL LIGHT NO BAKE LEMONADE PIE
I have made this for many picnics. Yummy lemonade pie that is quick and easy to make. Cooking time does not include chilling time.

- Mix pudding and milk.
- Mix tub of Crystal Light with Cool Whip and combine with pudding.
- Pour into pie crusts.
- Refrigerate.
THE MOST-LEMONY LEMON BAR OF ALL TIME
This bar is lemon city! We put lemon zest in the crust, upped the pucker in the filling and put lemon candy on top. It's the bar for the ultimate lemon lover.

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Line a 9-by-13-inch glass baking dish with foil leaving a 2-inch overhang on two sides. Grease the foil and dish with 1 tablespoon butter.
- To make the crust, pulse the zest with 1/3 cup of the sugar in a food processor until the sugar is yellow and sandy, 1 to 2 minutes. Add 1 1/2 cups of the flour, the butter, cornstarch and salt and pulse until the dough comes together, about 1 minute. Press the dough evenly into the bottom of the prepared pan. Bake until the crust is golden at the edges and pale golden in the center, about 30 minutes. Transfer to a wire rack.
- Reduce the oven temperature to 300 degrees F. To make the filling, whisk the eggs and egg yolks with the remaining 1 2/3 cups sugar and the remaining 1/2 cup flour in a bowl until smooth. Whisk in 1 cup lemon juice.
- Pour the filling over the warm crust and return to the oven. Bake until the filling is just set, about 30 minutes.
- Cool the lemon bars on a wire rack, 30 minutes, then refrigerate uncovered until firm, at least 1 hour. Lift the bars out of the pan using the foil. Peel off the foil and cut into 24 bars. Dust with confectioners' sugar. Place a piece of gummy lemon candy on top of each square and serve.
STRAWBERRY-LEMON ANGEL FOOD TRIFLE
A wonderful quick and easy trifle for Easter, or anytime! Luscious lemon filling plus fresh strawberries and whipped cream are layered with angel food cake cubes in this delicious variation on my Strawberries and Cream Trifle. Tip: Can be made using part lemon curd and part lemon pie filling for a more lemony-tart version. Yum! I like to make this trifle in the morning or a day in advance, and then chill until ready to serve. Can be made in a large trifle bowl, or in individual dessert glasses. Enjoy!

Steps:
- Whip the cream until soft peaks form; beat in the vanilla and sugar and mix thoroughly.
- Gently fold lemon filling into the whipped cream (add lemon zest and Limoncello, if using).
- In a trifle dish or individual dessert dishes layer the strawberries, cake cubes, and lemon creme mixture.
- Arrange a few strawberries on top.
- Serve immediately, or cover with saran wrap and chill until serving time.

EASY CRYSTAL LIGHT LEMON PIE
A light & fluffy sweet/tart lemon pie that has half the sugar of regular pies, because Crystal Light lemonade mix contains aspartame sweetener (like Equal). Covered with plastic wrap, this keeps well for several days in the refrigerator. Baking time includes chilling time.

Steps:
- Bake pie crust as directed on package for crust that will be filled with an unbaked pie.
- Cool.
- In small bowl, with electric mixer, beat egg whites until fluffy, about 2 minutes.
- Gradually add 1/4 cup sugar and beat until egg whites are stiff.
- Set aside.
- In food processor or blended, combine gelatin, 1/4 cup sugar and boiling water.
- Process on High about 40 seconds.
- Add egg yolks and process another 10 seconds.
- With food processor running, add Crystal Light powder and crushed ice.
- Process until smooth.
- Pour into mixing bowl and gently fold in egg white mixture until well-blended.
- Pour into baked pie crust.
- Sprinkle with lemon zest.
- Chill several hours until set.
- To serve, slice into wedges and top with fat-free non-dairy topping.
LEMON CRYSTAL FORTY-THREE
Steps:
- In a bowl, stir together lemon juice, sugar, rind and 1 1/4 cups water until the sugar is dissolved.Pour the mixture into an ice tray and freeze into solid cubes. The lemon mixture may be prepared up to this point 1 day in advance.
- In a blender, blend frozen lemon mixture, Cuarenta Y Tres, and vodka, scraping down the sides occasionally, until the mixture is smooth but still frozen. Divide the mixture between 2 stemmed glasses.
