1 (18.25 ounce) package lemon or yellow cake mix
½ cup butter, softened
1 egg
2 cups crushed saltine crackers
3 egg yolks
1 (14 ounce) can sweetened condensed milk
½ cup ReaLemon® lemon juice from concentrate

Steps:

  • Preheat oven to 350 degrees F. Beat cake mix, butter and 1 egg in large bowl with mixer until crumbly. Stir in saltine crumbs. Set aside 2 cups of crumb mixture. Press remaining crumb mixture on bottom of greased 13x9-inch baking pan.
  • Bake 15 to 20 minutes or until lightly golden. Beat 3 egg yolks, condensed milk and ReaLemon® with mixer or wire whisk. Spread over prepared crust. Top with reserved crumb mixture. Bake 25 minutes longer or until set and top is golden. Cool.
  • Refrigerate within 2 hours. Cut into bars. Store leftovers covered in refrigerator.

1 package lemon cake mix (regular size)
1/2 cup cold butter, cubed
1 large egg
2 cups crushed saltines (about 60 crackers)
3 large egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup lemon juice

Steps:

  • In a large bowl, beat the cake mix, butter and egg until crumbly. Stir in cracker crumbs; set aside 2 cups for topping. , Press remaining mixture into a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 18-20 minutes or until edges are lightly browned., In a small bowl, beat the egg yolks, milk and lemon juice. Pour over crust; sprinkle with reserved topping. 2 c. flour
1 1/2 c. brown sugar
1 c. butter (cold)
1 1/2 c. oats
2 8 oz. pkgs. cream cheese (room temperature)
1/2 c. sugar
3 eggs
1/4 c. milk
1 tsp. vanilla
1/4 c. lemon juice
1 tsp. lemon zest

Steps:

  • Preaheat oven to 350 degrees. Grease a 9 x 13 inch pan or line with greased aluminum foil.
  • Mix flour and brown sugar in a food processor. Slice butter in then add to food processor and pulse until crumbly. Add oats and pulse again.
  • Reserve 1 1/2 cups crumbs for top. Press remaining crumbs in the bottom of prepared pan and pack lightly. Bake for 10 minutes.
  • Beat cream cheese and sugar until smooth. Add eggs and blend. Add milk, vanilla, lemon juice, and lemon zest and blend until smooth.
  • Pour cream cheese mixture over baked crust. Sprinkle reserved crumbs on top of cream cheese layer. Press gently.
  • Bake 15-20 minutes or until browned on top. Cool. Cut into bars. Store in refrigerator.

1 1/4 cups (155g) plain flour
1 1/4 cups (110g) rolled oats
1/2 tsp salt
1/2 tsp bi-carb soda
1/2 cup (100g) raw sugar
1/2 cup (80g) brown sugar (firmly packed)
3/4 cup (170g) unsalted butter (melted)
1 tsp vanilla extract (, or vanilla essence)
395 g sweetened condensed milk
1 tbsp lemon zest (finely grated, approximately 1 lemon)
1/3 cup lemon juice (approximately 2 lemons)
2 large egg yolks
1/2 tsp lemon extract (optional)

Steps:

  • Preheat oven to 170 degrees celsius (160 degrees if fan forced).
  • Grease and line a 17cm x 28cm slice tray with baking paper, allowing the edges to overhang.
  • In a large bowl, mix together flour, rolled oats, salt and bi-carb soda.
  • Add the raw sugar and brown sugar to the bowl and mix until combined.
  • Stir vanilla into melted butter and pour mixture over dry ingredients. Stir mixture until well combined.
  • Pop half of the crumb mixture into the bottom of the prepared tin and press into an even layer. Bake in preheated oven for 15 minutes.
  • Remove from oven and set aside (leave the oven turned on).
  • In a bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks and lemon extract until well blended.
  • Pour mixture over crumb crust in baking dish and spread in an even layer.
  • Sprinkle the remaining crumble mixture evenly over the top of the lemon layer.

  • Peel the zest (yellow part only) off a lemon using a grater or knife. Place the zest into the Thermomix bowl and grate for 20 seconds, Speed 6. Scrape the sides of the bowl. Repeat until you have a very finely grated zest.
  • Add the condensed milk, lemon juice, egg yolks and lemon extract and mix for 30 seconds, Speed 4. Scrape the sides of the bowl and mix for a further 30 seconds, Speed 4.
  • Pour mixture over crumb crust in baking dish and spread in an even layer. Sprinkle the remaining crumble mixture evenly over the top of the lemon layer.
  • Bake in oven for 23 - 26 minutes or until lightly golden. Remove from oven and allow to cool.

22 ounce can lemon pie filling

Steps:

  • Preheat oven to 350F degrees. Spray 9x13-inch baking dish with nonstick cooking spray.
  • In a bowl, combine softened butter with dry cake mix. Mix until crumbly.
  • Set aside 1/2 cup of this crumbly mixture for the topping.
  • Take the rest of the crust mixture and press it into baking dish.
  • Spread it out evenly and then just go around and pack it down in there with your hands.
  • Spoon lemon pie filling evenly onto crust layer.

  • Preheat oven to 350 degrees and spray an 8x8 baking pan with baking spray.

1 cup old fashioned oats
¼ teaspoon salt
¾ teaspoon baking soda
10 tablespoons unsalted butter (melted)
½ cup light brown sugar (packed )
1 teaspoon pure vanilla extract
One 14 oz can sweetened condensed milk
2 tablespoons sour cream or plain yogurt
1 large egg yolk
¼ cup freshly squeezed lemon juice
1 generous tablespoon finely grated lemon zest
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Line an 8x8 pan with foil or parchment paper (leaving overhang on two sides for easy removal). Spray with nonstick spray.
  • In a medium bowl, combine, flour, oats, salt and baking soda.
  • In a large bowl, whisk butter, brown sugar and vanilla until well combined (this will take at least one full minute). Add dry ingredients and stir with a rubber spatula or wooden spoon until combined.
