LEMON CHESS PIE

A classic Southern pie with a delicious and tangy, sweet lemon filling.

1 refrigerated pie crust (or your favorite one-crust recipe)
5 large eggs
¼ cup whole milk or cream
1¾ cups granulated white sugar
2 tablespoons regular (not whole grain) cornmeal
4 tablespoons freshly squeezed lemon juice
1 tablespoon finely grated lemon zest
¼ teaspoon salt
½ cup (1 stick) butter, melted

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the pie crust into a 9-inch pie plate. Press it firmly onto the bottom of the pan and up the sides. Do not stretch the crust. Cut the excess off the overhang and tuck the rest under to form a decorative edge around the pie. Prick the bottom of the pie crust with a fork and place it into the freezer for 20 minutes.
  • In a large bowl, whisk together the eggs, milk, sugar, cornmeal, lemon juice, lemon zest and salt. Whisk until well-combined. Then whisk in the meltedbutter. Let the mixture sit while the pie crust is baking (to soften up thecornmeal).
  • Bake the pie crust (from the freezer to the oven) for 8 minutes and then remove it from the oven. Reduce the oven temperature to 350 degrees F.
  • Whisk the lemon filling to combine one more time, and then pour it into the pre-baked pie crust. Bake at 350 for 35 to 40 minutes- or until the pie is lightly browned and the center jiggles a little when the pie is shaken. Watch the crust on the edges to make sure they are not browning too much.
  • Cool completely before cutting and serving.

2 cups sugar
1 tablespoon flour
1 tablespoon fine yellow cornmeal
4 eggs
1/4 cup milk
1/4 cup unsalted butter, melted
2 tablespoons grated lemon rind
1/3 cup fresh lemon juice with pulp
One 9-inch unbaked pie shell
1 cup heavy cream, whipped

Steps:

  • In a large bowl combine the sugar, flour and cornmeal. Blend well, then add the eggs and combine well. Add the milk and mix then stir in the melted butter, lemon rind and juice. Pour this filling into the crust and cover then edge of the crust with foil to prevent it from burning, taking care not to touch the filling. Bake at 375 degrees F for 45 minutes, removing the foil after 30 minutes. Cool and serve or refrigerate overnight but let sit out 3 hours before serving to warm up slightly. Serve with dollops of whipped cream.

4 eggs
2 cups sugar
1/2 cup lemon juice
1/2 cup butter or 1/2 cup margarine, melted
1 teaspoon cornmeal
1 teaspoon flour
1/8 teaspoon salt
1 (9 inch) unbaked pie shells

Steps:

  • Preheat oven to 350°F.
  • Using an electric mixer at high speed, beat eggs in a bowl until well blended.
  • Gradually add the sugar, beating well after each addition.
  • Add the lemon juice, melted butter, cornmeal, flour, and salt.
  • Beat well, using electric mixer at low speed.
  • Pour into unbaked pie shell and bake 40 minutes or until top is browned. Do not overbake. Cool on a rack.

One 9-inch deep-dish pie shell, blind baked according to package directions and cooled
1 1/2 cups granulated sugar
4 large eggs
1 stick (8 tablespoons) unsalted butter, melted
1/3 cup whole milk
1 tablespoon all-purpose flour
1 tablespoon finely ground yellow cornmeal
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
3/4 cup heavy cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla paste

Steps:

  • For the pie: Preheat the oven to 350 degrees F. Place the blind-baked pie shell on a rimmed sheet pan.
  • In a large bowl, whisk together the granulated sugar and eggs until combined. Add the butter, milk, flour, cornmeal, vinegar, vanilla and salt. Whisk until well blended.
  • Pour the filling into the prepared pie shell and bake until the center of the custard is just set and the edges are slightly puffy, 45 to 50 minutes. Let cool completely
  • For the whipped cream: Beat the cream with the confectioners' sugar and vanilla until soft peaks form. Chill until ready to serve.
  • Slice the pie and serve with a dollop of whipped cream.

SOUTHERN LEMON CHESS PIE

One 9-inch prebaked pastry shell
1/4 pound softened butter
1 cup sugar
3 large eggs
Grated zest of 2 lemons
1/3 cup lemon juice
1/3 cup buttermilk
1/2 teaspoon vanilla
1 tablespoon cornmeal

Steps:

  • Preheat oven to 400 degrees. Cream the butter and sugar, and add the eggs one by one. Blend in the lemon juice, zest, buttermilk, vanilla and cornmeal so you have a light mixture. Pour filling into pie shell and bake for 10 minutes. Lower temperature to 325 degrees and bake for 20 minutes or more until center is almost completely set.
  • TIP: LEMON PEPPER
  • This is a great tip to lower your salt intake. Just peel the zest from a lemon, avoiding the white pith which is bitter. Bake at a low temperature, like 300 for about 2035 minutes, until peel is dry (temperature depends on how big a batch). Coarsely chop, and blend in a spice grinder with 15 black peppercorns, 10 white peppercorns, 8 allspice berries, 1/2 teaspoon onion powder. Pulse to combine.
  • LEMON BUTTER
  • Soft butter. Juice lemons, add shallots and parsley. Season with salt and white pepper. Mix well and form into logs for serving and freezing.

I did increase the lemon zest a bit when I made it (probably closer to 1 tsp). Per the cookbook: "A lemony custard pie with the texture of a cheesecake, topped with a sprinkle of ground nutmeg."

2 cups buttermilk
1 cup sugar
1/4 cup flour
2 tablespoons butter or 2 tablespoons margarine, melted
1/2 teaspoon lemon zest
1 (9 inch) unbaked pie shells
freshly ground nutmeg, to taste

Steps:

  • Preheat oven to 425°F.
  • Combine eggs, buttermilk, & sugar in a mixer bowl.
  • Add flour, melted butter & lemon zest and beat at medium speed until blended.
  • Pour mixture into pie shell. Sprinkle with nutmeg (I grated it fresh, right over the pie).
  • Bake at 425F for 15 minutes. Reduce temperature to 325F and bake 25-30 more minutes, or until knife inserted halfway between the center and the edge comes out clean. Cool on a rack.

1 ½ cups white sugar
2 tablespoons white cornmeal
¼ cup butter, melted
½ cup milk
2 lemons, juiced
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine eggs, sugar, cornmeal, melted butter, milk, and lemon juice in a large bowl. Mix until sugar is dissolved, but do not beat. Pour filling into unbaked pie shell.
  • Bake at 425 degrees F (220 degrees C) for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C), and continue to bake until set, about 45 minutes more. Serve at room temperature.

Finely grated zest of 3 large lemons
Juice of 3 large lemons
5 large eggs
1/3 cup butter, melted
One 9-inch unbaked pie shell (see About Pie Crusts, below)

Steps:

  • 1. Preheat the oven to 325°F.
  • 2. Combine the sugar, lemon zest, and lemon juice in a medium- size bowl. Beat the eggs in, one by one, then add the butter in a slow stream, beating all the while.
  • 3. Pour the filling into the pie shell, slide the pie onto a baking sheet, and bake on the middle oven shelf for about 45 minutes or until puffed and delicately browned.
  • 4. Transfer the pie to a wire rack and cool to room temperature before cutting; don't fret when the filling begins to fall. This is what gives chess pies their silken texture. Cut into slim wedges and serve.
