1 cup butter, softened to room temperature
2 cups granulated sugar
2 Tbsp lemon zest
4 eggs, large
3/4 tsp salt
2 tsp baking powder
2 3/4 cup all purpose flour
3 Tbsp cornstarch
1/2 cup milk (whole or 2%)
1/4 cup fresh lemon juice
1/4 cup sour cream (greek yogurt may be substituted)
1 tsp vanilla extract
1 1/2 cups powdered sugar
2-3 Tbsp lemon juice
1 tsp lemon zest

Steps:

  • Preheat oven to 350 degrees.
  • With a standing mixer or a handheld mixer, cream the butter until light and fluffy, about 1-2 minutes.
  • Add granulated sugar and lemon zest to the butter and mix until it is well combined.
  • Add in the eggs, one at a time, beating well after each addition.
  • In a separate bowl, whisk salt, baking powder, all purpose flour and cornstarch together. Set aside.
  • Mix lemon juice, milk and vanilla extract together.
  • Alternately, add the flour mixture and milk mixture to the butter mixture, beginning and ending with the flour. Mix until everything is just combined.
  • Add in sour cream and mix until just combined.
  • Grease your bundt cake pan well and pour the batter evenly into the pan.
  • Bake for 45-55 minutes, or until a cake tester comes out clean (if there are a few moist crumbs stuck to it, that's fine). (My oven took exactly 49 minutes.)
  • Allow to cool for about 10-15 minutes, then remove the cake from the bundt pan and allow it to finish cooling on a wire rack or plate.
  • Whisk powdered sugar, lemon juice and lemon zest together. Once combined, drizzle over the cooled cake.
  • Allow the icing to set, about 5 minutes, before serving.
  • Enjoy!

  • Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/4 by 2 1/2-inch) loaf pans. You may also line the bottom with parchment paper, if desired.
  • Cream the butter and 2 cups granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy, about 5 minutes. With the mixer on medium speed, add the eggs, 1 at a time, and the lemon zest.
  • Sift together the flour, baking powder, baking soda, and salt in a bowl. In another bowl, combine 1/4 cup lemon juice, the buttermilk, and vanilla.   • Preheat the oven to 375 degrees. Butter and flour a 9-inch round pan and set aside.
  • In a mixing bowl, using an electric mixer set on high speed, blend the butter and the 1 cup granulated sugar together until light and fluffy, about 5 minutes. Add the egg yolks, one at a time, mixing well after each addition. Add the lemon juice, zest, and baking powder and mix well.
  • Slowly stir in the flour and milk. Mix on low speed until combined.

Steps:

  • Preheat oven to 350°F.
  • Finely grate 1 Tbsp zest from lemons, then squeeze 1/4 cup+ 2 Tbsp juice.
  • Whisk together flour, salt, and 1/2 cup + 2 Tbsp sugar in a large bowl.
  • Whisk together yolks, milk, zest and juice in a small bowl and add to flour mixture, whisking just until combined.

2 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (230g) unsalted butter, softened to room temperature
1 and 3/4 cups (350g) granulated sugar
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup (240ml) whole milk, at room temperature
1 heaping Tablespoon lemon zest (about 2 lemons)
1/3 cup (80ml) fresh lemon juice (about 2 lemons)
1 cup (230g) unsalted butter, softened to room temperature
8 ounces (224g) full-fat brick style cream cheese, softened to room temperature*
4 and 1/2 cups (540g) confectioners' sugar
2 Tablespoons (30ml) fresh lemon juice
1 teaspoon pure vanilla extract
pinch salt, to taste

Steps:

  • Preheat oven to 350°F (177°C). Grease three 8-inch cake pans, line with parchment paper, then grease the parchment paper. Parchment paper helps the cakes seamlessly release from the pans.
  • Whisk the flour, baking powder, baking soda, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and sugar together on high speed until smooth and creamy, about 3 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the eggs and vanilla extract on high speed until combined, about 2 minutes. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients just until combined. With the mixer still running on low, add the milk, lemon zest, and lemon juice and mix just until combined. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be a little thick.
  • Pour batter evenly into cake pans. Bake for around 21-26 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it's done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling. The baked cakes are fluffy, but they are not thick- about 1 - 1.5 inches.
  • In a large bowl using a hand-held mixer or stand mixer fitted with a whisk or paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Add the cream cheese and beat until completely smooth and combined. Add confectioners' sugar, lemon juice, and vanilla extract with the mixer running on low. Increase to high speed and beat for 3 minutes. Add more confectioners' sugar if frosting is too thin, more lemon juice if frosting is too thick, or add a pinch of salt if frosting is too sweet. (I always add a pinch of salt!)
  • Using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand, cake turntable, or serving plate. Evenly cover the top with about 1 cup of frosting. Top with 2nd cake layer and evenly cover the top with about 1 cup of frosting. Top with the third cake layer. Spread the remaining frosting all over the top and sides. I like to top mine with homemade whipped cream (I used Wilton 8B piping tip).
  • Refrigerate for at least 30-45 minutes before slicing. This helps the cake hold its shape when cutting.
  • Cover leftover cake tightly and store in the refrigerator for 5 days.

Seven minute frosting (or Buttercream icing)

Steps:

  • In a mixing bowl,whisk together the cake flour, all-purpose flour, sugar, baking powder and baking soda.
  • Now, add eggs, oil, lemon juice, or emulsion oil and lemon zest. Mix until everything is smooth
  • Add sour cream and mix until just combined. Don't over-mix!
  • Pour this batter in two round greased/floured cake pans (Dimension: 8x2). Bake at 350 degrees for 40 minutes or until an inserted toothpick comes out clean.
  • While the cake is baking and then cooling down, make lemon curd and frosting.
  • Place one cake on a cake stand and top it off with a thin layer of frosting and lemon curd. Place the other cake on top of all this. Press your cake down with your hands (some of the frosting and curd will come out from the sides but don't worry about it!)
  • Now, use a spatula to frost the entire cake roughly with frosting.
  • Finally, pour some lemon curd on top of the cake and place some berries here.
  • Keep this cake refrigerated until you are ready to serve.

  • Place the butter and sugar in a bowl and cream together until thick and pale. Beat the 3 eggs and add to the bowl, then sift in the flour gradually. Finely grate the zest from the 2 lemons into the bowl, and squeeze 1 tbsp lemon juice and add.

  • To make the icing, beat the butter with the icing sugar until light and fluffy, and squeeze 1 tbsp lemon juice into the mixture.
  • Spread the icing over the top of each cake using a palette knife, and sandwich together.

1 cup white sugar
½ cup butter, softened
2 tablespoons fresh lemon zest
2 eggs
1 tablespoon fresh lemon juice
½ teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup powdered sugar

Steps:

  • Cream sugar, butter, and lemon zest together in a large bowl using an electric mixer until light and fluffy, about 3 minutes.
  • Combine eggs, lemon juice, and vanilla extract in a cup; mix using a fork until combined. Beat into egg mixture slowly on low speed.
  • Whisk flour, baking powder, and salt together in a medium bowl. Add to egg mixture slowly on low speed until just combined. Do not overbeat; dough will be sticky. Cover and chill dough in the refrigerator for 30 minutes; it will still be sticky after chilling.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
  • Form dough into balls using a cookie scoop or tablespoon and roll each in powdered sugar. Place onto the prepared baking sheets, spacing 2 inches apart. Lightly smash each ball down using your hand.
  • Bake in the preheated oven until the middle of each cookie is just barely set, 11 to 12 minutes. Let cool on a wire rack completely before storing in an airtight container.
