Steps:
- Preheat oven to 375 degrees.
- On a lightly floured surface, carefully roll out one of the pie crusts. Transfer the pie crust to a prepared pie pan that has been sprayed with non-stick spray.
- **Note - To help with the transfer of the dough, roll the dough loosely onto the rolling pin and unroll it carefully over the pie pan. Press the dough into the pie pan and allow the excess to fold over the sides of the pan. Set aside.
- In a large stockpot over medium heat, melt the butter. Stir in the flour and cook for 2-3 minutes. Switch to a whisk and add the chicken stock, salt, pepper, and garlic. Whisk continually until the mixture heats and thickens (approximately 5-7 minutes).
- Using a wooden spoon, stir in the thyme, mustard, pork, minced garlic, and frozen vegetables. Cook, stirring occasionally to heat through.
- Carefully pour the pork filling into the prepared pie crust. On a lightly floured surface, roll the second pie crust out like the first one. Transfer the dough over the pork filling (on the rolling pin) and carefully unroll to cover.
- Use a paring knife to trim the excess dough away (saving some for the leaf garnish), and use a fork to press and seal the bottom and top crusts together.
- Use a paring knife to cut some steam holes into the top crust, and insert a pie bird (optional).
- Use some of the trimmed dough to cut out leaf shapes and use a little water to adhere the leaves to the top of the pie (optional).
- In a small bowl, mix the egg and 1 tablespoon water. Brush the egg wash over the top crust.
- Place the pie on a baking sheet and bake in a preheated oven for 40-45 minutes or until the crust is golden brown and the filling is heated through.
- Cool for at least 20 minutes and serve.

GREEN CHILI PORK STEW
This is a fairly simple but tasty stew. It is based loosely on a recipe from TOH. I've modified it to use leftover "Mean Chef Pulled Pork" (sans sauce). Hope you enjoy!

Steps:
- Note: To peel poblano peppers, either broil in the oven or using skewers roast over gas flames until skin is blackened, put into brown paper sack and close lid - Leave for appx 10 mins to steam - While waiting for the peppers to cool, peel and dice potatoes, open tomatoes, measure spices, etc.- Once peppers are cool enough to handle, skin should slip off (I usually do about 12 peppers at a time and freeze what I don't use).
- In a large soup pot, add all ingredients except for cooked meat. (More water may be needed to cover potatoes).
- Cover and simmer for 35 minutes.
- Taste, adjust any seasonings, add pork and simmer for an additional 10 minutes or until potatoes are done and meat is hot.
- Great with cornbread!

SUNDAY BRUNSWICK STEW
This is a sweet and spicy stew that you start in the morning and let the slow cooker do the rest. It is a great way to bring in the fall season because it is packed full of vegetables, pork, and butternut squash. It is perfect paired with cornbread muffins and a great way to use leftover pork roast or pulled pork barbeque! White potatoes can be substituted for the butternut squash.

- Turn the Instant Pot on and set to Saute setting. Once hot, add the butter and onions and cook for 2 minutes to soften the onion. Add the rest of the ingredients (except for the finishing ingredients) and stir through. Press Keep Warm/Cancel to stop the Saute process.
- Pop the lid on top, lock and press Manual/Pressure Cook and set to 1 minute at HIGH pressure. It will take about 10-15 minutes for the pressure to build up, during which time the cooking also begins. Once the timer is done, allow 10 minutes for natural pressure release (simply leave the pot sit). Then use the quick release method to let off the remaining steam (point the steam releasing handle to Venting).
- Once pressure is released, open the lid and stir the stew. Add the BBQ sauce and the brown sugar (if using) and stir in. Dissolve the cornflour (or regular flour) in water and once it’s white slurry consistency, stir it into the stew to thicken it. Garnish with some fresh herbs and serve.
