OLD FASHIONED GOULASH
A Classic Old-Fashioned Goulash with Beef, veggies and noodles will be your go-to dinner any night of the week. Don't worry about food going to waste, because you can make an entirely new dish using the leftovers!

Steps:
- Cook the macaroni according to package directions, but shorten the cooking time by 3 minutes. Drain and set aside.
- Preheat a large pan over medium heat until hot. Add in the Ground Beef, onion and garlic. Cook for about 10 minutes until reaching 160°F, crumbling the Beef as it cooks.
- Add in the Worcestershire sauce, tomato sauce, diced tomatoes and stir to combine. Allow to simmer on medium heat for about 15 minutes.
- Add in the cooked macaroni. Season with salt, pepper and Italian seasoning.
- Stir to combine and enjoy!

HEARTY GOULASH SOUP
In Austria, warming bowls of goulash soup are served in all kinds of establishments - from quick-service restaurants along the Autobahn to Vienna's elegant Hotel Bristol. This hearty beef and vegetable soup can be found in many areas of central and eastern Europe, especially in regions that were once part of the Austro-Hungarian Empire.

- In an 8-quart heavy kettle cook bacon over moderate heat, stirring, until crisp and transfer with a slotted spoon to a large bowl. In fat remaining in kettle brown chuck in small batches over high heat, transferring it as browned with slotted spoon to bowl.
- Reduce heat to moderate and add oil. Add onions and garlic and cook, stirring, until golden. Stir in paprika, caraway seeds, and flour and cook, stirring, 2 minutes. Whisk in vinegar and tomato paste and cook, whisking, 1 minute. (Mixture will be very thick.) Stir in broth, water, salt, bell peppers, bacon, and chuck and bring to a boil, stirring. Simmer soup, covered, stirring occasionally, 45 minutes.
- Peel potatoes and cut into 1/2-inch pieces. Add potatoes to soup and simmer, covered, occasionally until tender, about 30 minutes. Season soup with salt and pepper. Soup may be made 3 days ahead and cooled, uncovered, before chilling, covered. Reheat soup, thinning with water if desired.

This Hungarian-style goulash is a thick beef stew that is great served over buttered noodles and garnished with sour cream.

Steps:
- Season beef with salt and black pepper. Heat vegetable oil in a large skillet over high heat; cook and stir beef in hot oil in batches until browned on all sides, about 5 minutes per batch. Transfer to a large stockpot and reserve drippings in the skillet.
- Return skillet to medium heat; stir onions into the reserved drippings, drizzle olive oil over onions, season with 1/2 teaspoon salt and cook until onion has softened, about 5 minutes. Transfer to the stockpot with beef.
- Combine paprika, caraway seeds, black pepper, marjoram, thyme, and cayenne pepper in the skillet and toast over medium heat until fragrant, about 3 minutes. Add 1 cup chicken broth and stir; transfer to the beef and onion mixture.
- Stir 3 cups chicken broth into beef mixture. Add tomato paste, garlic, vinegar, sugar, 1/2 teaspoon salt, and bay leaf; place stockpot over high heat and bring to a boil. Reduce heat to low and simmer until a fork inserts easily into the meat, 1 1/2 to 2 hours.

- In a dutch oven or large skillet, heat olive oil over medium-high heat until shimmery. Add beef stew meat and brown all sides until golden. Remove from pan and set aside.
- In same pan, add onion, carrots, and sweet pepper and saute several minutes in beef drippings until vegetables are just softened. Add beef back to pan, garlic, and paprika and saute 1 minute until fragrant.
- Add whole tomatoes and beef broth to pot. Bring to a simmer over medium-high heat, smashing tomatoes with a wooden spoon, then reduce heat to medium-low, cover, and let simmer 1 hour until beef and vegetables are very tender.
- Pour pasta into pot and cook an additional 8-10 minutes, stirring occasionally until pasta is tender.

- In a 10-inch skillet over medium-high heat, heat oil 30 seconds. Add onions and peppers and cook, stirring occasionally, 3 minutes until tender.
