I found this recipe in a church cookbook my grandmother gave me for my wedding. I've adjusted it to my tastes, and my husband just loves it. It's so easy and takes practically no time to make. I thoroughly recommend it.

1 (12 ounce) package breakfast sausage
1 (32 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 (8 ounce) container sour cream
2 teaspoons dried parsley
1 (16 ounce) package lasagna noodles
4 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup water

Steps:

  • Cook sausage in a large skillet over medium heat. Drain excess fat. Reduce heat to low, stir in the jar of spaghetti sauce, and heat through. Set aside.
  • In a large bowl, combine cottage cheese, sour cream. Stir in dried parsley to taste.
  • Spoon 1/2 of the meat sauce into the bottom of a 9x13 inch baking dish. Place 1/2 of the uncooked noodles over the sauce, then 1/2 of the cottage cheese mixture, 1 cup of the mozzarella cheese, and 1/4 cup grated Parmesan cheese. Repeat layers. Top with remaining 2 cups of mozzarella cheese. Pour water around the outside edge of pan. Cover tightly with aluminum foil.
  • Bake in a preheated 350 degree F(175 degree C) oven for one hour. Uncover. Continue baking for an additional 20 minutes, or until bubbly and browned. Remove from oven, and let stand 15 to 20 minutes before serving.

8 ounces uncooked lasagna noodles, broken into 2-inch pieces
1 cup part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese, divided

1 jar (24 ounces) pasta sauce with meat

Steps:

  • Preheat oven to 400°. Cook lasagna noodles according to package directions. Meanwhile, in a large bowl, mix ricotta cheese, 1/2 cup mozzarella cheese and Parmesan cheese. Drain noodles well; stir into cheese mixture., Spread 1 cup pasta sauce into a greased 11x7-in. baking dish. Layer with half of the noodle mixture and 1 cup sauce; layer with the remaining noodle mixture and sauce. Sprinkle with remaining cheese., Cover with greased foil; bake until heated through, 10-15 minutes.

Because it's too much trouble messing with lasagna noodles and making those careful layers. The quality of the chosen sauce is key. A friend of mine couldn't figure out how she could make the same recipe I did but mine was better until we realized that she was buying a cheap, minimally seasoned spaghetti sauce. Use more or less sauce according to how wet your family prefers lasagna. Lazy Lasagna is easy to halve or double, just adjust the cooking time for the smaller or larger pan.

1 lb pasta shells or 1 lb macaroni
1 lb ground beef or 1 lb bulk Italian sausage, browned and drained
1 lb ricotta cheese
1 lb pre-shredded mozzarella cheese
1/2 cup parmesan cheese
1 -2 quart spaghetti sauce (I prefer Classico)
olive oil

Steps:

  • Cook pasta a bit less than fully done.
  • Grease a 9x13 pan with olive oil.
  • Layer 1/2 the amount each of pasta, ground beef, ricotta, parmesan, spaghetti sauce, and mozzarella in that order.
  • Repeat except for the mozzarella.
  • Draw a wooden spoon through the layers in an S-shaped pattern to mesh the layers without actually stirring them together.
  • Top with the remaining mozzarella.
  • Bake at 350F for 30-45 minutes or until the cheese is as brown as you like it and everything is bubbling hot.
  • Note -- steamed and drained zucchini or very well-drained, frozen spinach is a good addition.
  • Note -- Can substitute ground turkey or chunks of cooked chicken/turkey for the ground beef if desired.

1 dash minced garlic
1/2 teaspoon salt
1 3/4 cups favorite spaghetti sauce (I use chunky mushroom & garlic)
6 ounces spiral noodles, cooked and drained
1 cup cottage cheese
2 cups shredded mozzarella cheese, divided
grated parmesan cheese

Steps:

  • Brown beef with onion, garlic and salt; drain. Stir in spaghetti sauce, simmer until heated. Remove 1 cup meat sauce & set aside. Stir noodles into remaining sauce. 1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

It's made with cheap and simple ingredients that are easy to keep on hand: frozen ravioli, cheese and sauce. Simply layer everything together, and bake. It's comes out of the oven just like lasagna, but without all of the hassle.

1 (24oz) bag of frozen cheese ravioli
1 (24oz) jar of marinara or pasta sauce
2 cups shredded mozzarella ((heaping))
1/2 cup shredded parmesan ((optional))

Steps:

  • Preheat your oven to 400 degrees and grease a 9x13 baking dish.
  • Spread a thin layer of your marinara sauce onto the bottom of the pan (about 3/4 cup).
  • Arrange half of the frozen ravioli in a single layer over the sauce (should be about 12 of them).
  • Top with half of the remaining sauce and half of the mozzarella.
  • Repeat the layers starting with what's left of the ravioli. Finish by topping with the remaining sauce and cheese. Sprinkle with parmesan if you'd like.
  • Cover the baking dish with aluminum foil, and bake for 30 minutes. Remove the foil, and continue baking for an additional 15 minutes, or until the cheese starts to brown.

1 25 ounce bag of frozen cheese ravioli
1 lb of ground beef or turkey
2 cups of shredded Italian style cheese
1 teaspoon of basil

  • Preheat oven to 400 degrees. Spray 9x13 pan. Brown ground beef in skillet and add 3/4th of the sauce to meat and let simmer for about 10 minutes.

1 pound lean ground beef (or ground Italian sausage)
24 ounces marinara (or choice of pasta sauce)
25 ounce frozen cheese ravioli (square shaped (no need to thaw))
1 1/2 cups shredded mozzarella cheese (divided)
1/2 teaspoon Italian seasoning (***optional***)
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning (or dried oregano)

Steps:

  • Preheat the oven to 350F degrees. Optional*** coat interior of pan with non-stick cooking spray.
  • In a medium skillet, crumble and brown the beef over medium heat until completely browned. Drain off the excess fat. Mix in seasoning and garlic powder after draining the meat.
  • Reserve ¾ cup of the spaghetti sauce; set aside. Add the remaining spaghetti sauce to the skillet with the browned meat. Stir well then cover and simmer over medium-low heat for 10 minutes, stirring occasionally.
  • Spread ¼ cup of the reserved spaghetti sauce into the bottom of a 9x13 inch glass baking dish. Arrange one third of the frozen ravioli in a single layer in the pan.

10 ounces campanelle ((or another short pasta like penne, ziti, or medium shells))
1 pound lean ground beef
½ cup diced onion
1 teaspoon minced garlic (divided)
1 teaspoon Italian Seasoning

½ teaspoon pepper (divided)
25 ounces marinara sauce ((I like Mezzetta's Marinara))
¼ cup water
1 cup part-skim ricotta cheese
1 egg
3 cups shredded part-skim mozzarella cheese (divided)
½ cup grated Parmesan cheese (divided)
1 teaspoon dried parsley flakes (or 1 tablespoon fresh)
fresh basil (optional for garnish)

Steps:

  • Cook the pasta one minute shy of the package directions. Drain well and set aside.
  • Meanwhile, in a large, deep skillet or Dutch oven, cook beef, onion, and ½ teaspoon garlic over medium heat until meat is no longer pink. Drain the grease and return the pan to the heat. Sprinkle with Italian Seasoning, salt and ¼ teaspoon pepper and cook, stirring, for a minute or two. Add the marinara and water and let it simmer for a couple of minutes until warmed through. Stir in the cooked pasta, remove from the heat and set aside.

1/2 cup grated Parmesan cheese (about 2 ounces)
1 pound lean ground beef
1/2 cup minced onion, optional
1 garlic clove, minced, optional
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
12 ounces frozen (not thawed) cheese ravioli
1 (14-ounce jar) spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
  • Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.

LASAGNA CASSEROLE - EASY (BUT DELICIOUS!)

10 oz of short pasta
1lb of ground beef
1/2 a cup of chopped onions
1 tsp of minced garlic
25 oz of marinara sauce
1/4 of a cup of water
1 cup of ricotta cheese
1 large egg
3 cups of shredded mozzarella cheese
1/2 cup of grated parmesan cheese
Italian herbs and seasoning
Salt and pepper to taste
Fresh basil to serve

Steps:

  • Bring a large pot of lightly salted water to a boil on the stovetop.
  • Add in your pasta and allow it to cook until it's al dente (cook the pasta for one or two minutes less than it says to on the back of the packet). Once you finish cooking the pasta, drain the water, and keep the pasta ready on your counter.
  • Place a large skillet onto a medium heat on the stovetop and throw in your ground beef, chopped onions, and minced garlic. Allow the ingredients to cook on medium heat until the ground beef is browned all over, and the onions have softened up.
  • Add in your Italian herbs and seasoning alongside salt and pepper to taste. Stir before pouring over your marinara sauce. Pour in a little water (no more than 2 tbsps) to lighten the sauce.
  • Allow the ingredients to simmer in the sauce until it's warmed up (no need to boil), then add your drained pasta to the mix and stir everything together.
  • Now you need to prepare a 13 x 9-inch casserole dish and preheat your oven to 350 °F.
  • While the oven is preheating, pour your ricotta cheese into a large mixing bowl. Crack your large egg into the bowl and whisk it into the cheese.
  • Shred your mozzarella cheese and grate your parmesan. Add half of both kinds of cheese to the mixing bowl. Stir everything together with a light seasoning of pepper.
  • Now it's time to layer your lasagna casserole. First, pour half of the sauce, beef, and pasta into the baking dish. Add a smooth layer of your cheese mixture, then add a second layer of sauce, beef, and pasta.
  • Add any leftover cheese mixture to the top, cover the pan with tin foil, and then place the lasagna casserole into the oven.
  • After 30 min of baking, take the easy lasagna casserole out of the oven, remove the tin foil, and cover the top with the rest of your grated parmesan and shredded mozzarella.
  • Place the lasagna back into the oven, this time uncovered. Bake for a further 10 min to give the lasagna a cheesy, yet golden brown finish.
  • Leave to cool, sprinkle with fresh basil, and serve up to a hungry dinner table!

16 ounces/1 pound lasagna noodles (broken into smaller pieces)
24 ounces spaghetti sauce
24 ounces water (just fill the sauce jar with water)
20 ounce bag of frozen Italian meatballs (about 40 small meatballs)
16 ounces ricotta cheese
16 ounces/4 cups shredded mozzarella cheese (divided in half)

Steps:

  • Add everything except 2 cups of shredded mozzarella to a large broiler safe pot or dutch oven. We used a 6.5 quart enameled cast iron dutch oven.
  • Stir everything together, it will be watery, don't worry. Sprinkle remaining cheese over top.
  • Cover and cook at 375 degrees for 45 minutes. If your meatballs are frozen, you may need to add an additional ten minutes of cook time. Remove cover and turn on broiler until cheese browns and crisps a little. Watch closely so it doesn't burn!
  • Remove from oven and stir. It will seem a little watery at first, but let it rest 3 - 5 minutes and it will be perfect. My kids devoured the entire pot for lunch!

3 packages Refrigerated Ravioli ((about 750 grams or 25 ounces total))
1 jar Pasta Sauce ((about 700mL or 24 ounces))
3 cups Mozzarella Cheese (Shredded)
3 Tablespoons Parmesan Cheese (Grated)

Steps:

  • Preheat the oven to 400F. Spray a 9 inch by 13 inch baking dish with cooking spray.
  • Spread a layer of pasta sauce over the entire bottom of the dish.
  • Add a single layer of ravioli on top of the sauce. Try to cover the dish entirely.
  • Add another layer of sauce, making sure the ravioli is completely covered in sauce.
  • Sprinkle half the mozzarella cheese on top, covering the entire layer.
  • Lay down one more layer of ravioli, again making sure you cover the entire dish.
  • Spread another layer of sauce on top making sure to cover all of the ravioli.
  • Sprinkle the rest of the mozzarella cheese on top, evenly covering the top.
  • Finally, sprinkle parmesan cheese evenly on top. (Optional)

1 pound lean ground beef
1 jar of spaghetti sauce (approximately 24 ounces (may want to add more))
1 bag of square shaped cheese ravioli (25 ounces) ((no need to thaw))
1 bag of shredded mozzarella cheese ((8 ounce bag) Divided in thirds)

Steps:

  • Preheat the oven to 350F degrees.
  • In a medium skillet, crumble and brown the ground beef over medium heat until completely browned. Drain off the excess fat.
  • Reserve ¾ cup of the spaghetti sauce; set aside. Add the remaining spaghetti sauce to the skillet with the ground beef. Stir well then cover and simmer over medium-low heat for 10 minutes, stirring occasionally.
  • Spread ¼ cup of the reserved spaghetti sauce into the bottom of a 9x13 inch glass baking dish. Arrange one third of the frozen ravioli in a single layer in the pan.
  • Top the ravioli in the pan with half of the ground beef mixture, then sprinkle 1/3 of the bag of the shredded mozzarella cheese.
  • Place another 1/3 of the frozen ravioli in a single layer over the meat sauce and cheese. Top with the rest of the meat sauce and another 1/3 bag of the shredded mozzarella cheese.
  • Place the final 1/3 of the frozen ravioli on top of the casserole. Top with the remaining ½ cup of the spaghetti sauce. Sprinkle with the remaining shredded mozzarella cheese.
  • Bake the casserole at 350F for 30-40 minutes, until the cheese is completely melted and beginning to bubble around the edges.

2 tablespoons olive oil
1 lb. ground beef
1 cup onion, finely chopped
2 tablespoons garlic, minced
3 cups tomato sauce
2 tablespoons tomato paste
1 teaspoon salt
1/4 cup fresh parsley, finely chopped
2 cups ricotta cheese
1 + 1/2 cups mozzarella cheese, shredded and divided
1/2 cup Parmesan cheese, grated and divided
1 egg, beaten
1/4 cup fresh parsley, chopped

Steps:

  • Preheat oven to 375 F.
  • Bring a large pot of water to a boil over medium high heat. Add lasagna noodles, olive oil and salt and cook until al dente (fully cooked but still firm), or according to package directions, about 10 minutes. Rinse the noodles under cold water to stop the cooking process and set aside in the pot.
  • Heat oil in a large pot or Dutch oven for 2 minutes over medium-high heat until the oil is sizzling hot. Add ground beef and cook for 5-7 minutes until browned. Add onion and garlic. Stir well to combine and continue cooking for 3-4 minutes until tender. Pour tomato sauce, tomato paste, salt and parsley. Stir well to mix and bring the meat sauce to a simmer. Turn the heat down to low and let it simmer for 10 minutes uncovered. Set aside.
  • In a medium bowl, combine ricotta cheese, 1 cup mozzarella, 1/4 cup Parmesan, beaten egg, and parsley. Stir well to combine together.

  • Noodles: Place 3 lasagna noodles evenly apart over the meat sauce.
  • Cheese: Spread 1/2 of the cheese mixture evenly over the noodles.
  • Sauce: Spread 1/2 the remaining meat sauce on top.
  • Noodles: Top with another layer of 3 lasagna noodles.
  • Cheese: Spread remaining half of cheese mixture.
  • Noodles: Top with last 3 pieces of lasagna noodles.
  • Sauce: Add remaining meat sauce on top.
  • Shredded cheese: Top with remaining mozzarella and Parmesan cheese.
  • Lightly grease a large piece of aluminum foil and cover the pan with the greased side inside. Greasing the foil prevents the melted cheese from sticking to the foil while baking. Bake the lasagna covered for 45 minutes. Then, remove the foil and bake uncovered for another 20 minutes or until the melted cheese turns golden brown and bubbly. Optionally, turn on broiler on high and broil for 3-4 minutes to get a crispy and brown cheesy crust. But keep a close eye on the broiler as things can burn quickly.
  • Let the lasagna cool for 10 minutes before serving.

1 small onion
7.5 ounces Garlic and Herb Cream Cheese
24 ounces spaghetti sauce (your favorite jar of sauce)
4 cups Mafalda pasta (mini lasagna noodles) (1 pound)
3 cups water
Grated Parmesan (optional)
Shredded Mozzarella (optional)

Steps:

  • Using the Sauté function on your instant pot, brown ground beef and onion. Drain excess grease, and scrape off any bits off the bottom of the pan to prevent a burn error.
  • Return drained beef and onions to the instant pot insert. Stir in cream cheese and spaghetti sauce until creamy.
  • Put the uncooked pasta on top of the sauce. Do not stir.
  • Add just enough water to submerge the noodles, around 3 cups. Do not stir!
  • Cover and seal the instant pot. Cook on high pressure for 4 minutes. Release pressure following Quick Pressure Release method.
  • Stir to combine. Optional: add as much Grated Parmesan and/or Shredded Mozzarella cheeses. Stir and serve!
