2 cups sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup 2% milk
1/4 cup butter, cubed
FROSTING:
1-1/2 cups packed brown sugar
3/4 cup butter, melted
1/2 cup half-and-half cream
2 cups sweetened shredded coconut

Steps:

  • In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine frosting ingredients; spread over warm cake. Broil 4 in. from heat until lightly browned, about 3-4 minutes.

2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
2 tablespoons butter
FROSTING:
3/4 cup packed brown sugar
1/2 cup butter, melted
2 tablespoons half-and-half cream
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, beat eggs, sugar and vanilla on high until thick and lemon-colored, about 4 minutes. Combine flour, baking powder and salt; add to egg mixture. Beat on low just until combined. Heat milk and butter in a small saucepan until butter melts. Add to batter; beat thoroughly (the batter will be thin). Pour into a greased 9-in. square baking pan. Bake until cake tests done, 20-25 minutes. Cool slightly. For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.

2 teaspoons baking powder
½ teaspoon salt
4 tablespoons butter
1 cup milk
1 teaspoon vanilla extract
4 eggs (room temperature)
2 cups sugar
9 tablespoons butter (melted)
¾ cup packed light brown sugar
6 tablespoons evaporated milk ((recommended: Carnation))
1 ½ cups shredded coconut ((recommended: Baker's Angel Flake))

Steps:

  • Adjust an oven rack to the middle position and heat the oven to 350. Grease and flour a 13x9 inch pan.
  • Whisk together the flour, baking powder, and salt in a medium bowl.
  • Heat the butter and milk in a medium saucepan over medium heat until the butter melts. Remove from the heat and stir in the vanilla.
  • In a large bowl, use an electric mixer on medium-high speed to beat the eggs and sugar together until pale and thick, about 6 minutes.
  • Using a rubber spatula, fold the flour mixture and milk mixture alternately into the eggs and sugar until just incorporated.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 30 to 35 minutes.
  • Remove from the oven and let the cake cool in the pan for about 10 minutes.
  • Heat the broiler while you mix the topping.

3/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup milk
1 tablespoon butter

1/2 cup chopped walnuts

Steps:

  • Beat eggs and add sugar until fluffy.
  • Sift flour, salt and baking powder.

  • Beat slightly.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whip the eggs, sugar, and vanilla until thick and pale. Combine the flour, baking powder and salt, stir into the egg mixture by hand. Scald the milk and butter in the microwave oven or in a saucepan over medium heat. Stir into the batter. Pour into the prepared pan.

1 1/4 cups boiling water
1/2 cup butter

1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg

3 tablespoons canned evaporated milk
1/3 cup nuts, chopped

Steps:

  • Preheat oven to 350.
  • Cake:.
  • In a shallow bowl, combine rolled oats and boiling water. Let stand for 20 minutes.
  • Using a mixer, cream butter until creamy.
  • Gradually beat in sugars, and beat until light.
  • Blend in eggs and vanilla.
  • Mix flour, baking soda, salt, and spices.
  • Remove beaters from creamed mixture.
  • Stir in rolled oat mixture.
  • Fold in flour mixture. Blend well.

1 (18 1/4 ounce) box white cake mix or 1 (18 1/4 ounce) box yellow cake mix
3 large eggs
1/3 cup vegetable oil
1 cup water
1 cup sugar
2 tablespoons molasses or 2 tablespoons corn syrup
1 cup flaked coconut
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon powdered ginger
1/4 cup butter
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees F, prepare a 9" or 10" springform pan.
  • Combine all the cake ingredients in a large bowl, and mix on medium speed for 2 minutes.
  • Pour the batter into the prepared pan and bake for 30 to 35 minutes.
  • Prepare the frosting while the cake is baking.
  • Combine all the frosting ingredients in a large saucepan and cook over medium heat, stirring constantly until the butter is melted.
  • As soon as the cake comes out of the oven, pour the warm topping over the surface of the cake and spread evenly.
  • Broil the cake for 3-4 minutes or until the topping is lightly browned.
  • Remove the cake from the oven and allow it to cool. Remove the sides of the springform pan and slide the cake into a serving plate.
