1 ½ cups refried beans
1 ¾ cups guacamole
1 ½ cups sour cream
1 (8 ounce) package shredded Cheddar cheese
2 tomatoes, diced

Steps:

  • Heat refried beans in a microwave-safe bowl in a microwave oven until hot, stirring frequently, about 3 minutes. Spread beans onto the bottom of a serving platter; refrigerate until the beans are cooled completely, about 10 minutes.
  • Spread guacamole in a layer atop the beans. Spread sour cream atop the guacamole. Sprinkle cheese over the sour cream; top with tomatoes.
  • Cover platter with plastic wrap and refrigerate until cold, about 30 minutes.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

2 teaspoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed
1 tablespoon minced chipotle pepper in adobo
4 tablespoons lime juice
1/4 teaspoon ground cumin
1 tablespoon water
1/2 teaspoon salt
2 cups corn kernels (10-ounce box frozen corn)
1/4 cup chopped cilantro leaves
2 ripe avocados
4 medium tomatoes, seeded and diced (about 2 cups)
1/4 cup thinly sliced scallion
1 tablespoon finely diced jalapeno pepper, optional
3/4 cup shredded extra-sharp Cheddar

Steps:

  • Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
  • Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
  • Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
  • In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
  • Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

3/4 c. Grated Sharp Cheddar Cheese

Steps:

  • Begin by throwing the refried beans into a small pan over medium-low heat. Add several dashes of Tabasco sauce and a small can of (undrained) diced green chilies. Stir well. Next, sprinkle a little bit of ground Cumin. Spread the beans on the bottom of a glass bowl or high-sided dish. Over this sprinkle the sharp cheddar. Next, plop your sour cream. And spread it into a single layer, being careful not to disturb the cheese underneath.The next layer is the guacamole. Spread it over the sour cream. Steps:

  • In a small bowl, mash beans with a fork. Add remaining Bean Layer ingredients and mix. Spread the mixture in 8 x 11 baking (clear) dish or onto any other large serving platter.
  • Spread White Layer over the beans followed by a Salsa Layer.
  • In a small bowl, mash avocados with a fork and add remaining ingredients from Guacamole Layer. Mix and spread on top of Salsa Layer.
  • Place a layer of lettuce over the Guacamole Layer and top with cheese. Garnish with black olives. Serve immediately with any healthy tortilla chips.

For the Layered Mexican Dip:
Double all ingredients if using a 9x13 inch dish.
1 8- ounce package cream cheese (softened)
1 cup Picante sauce or tomato salsa - save 1/2 cup for topping
½ Iceberg lettuce (chopped into bite-size pieces)
½-1 cup Cheddar Cheese or Mexican Cheese Blend (shredded)
1- cup diced tomatoes
Avocado Crema (if desired - recipe below)
Optional other ingredients:
Black olives
Avocados (diced)
Black beans
Green (sliced or Sweet yellow onion, diced)
Whatever else your little heart desires.

For the Avocado Crema:
2 avocados (peeled, pitted)
Juice from ½ lime (approximately 1-tablespoon fresh juice)
2 tablespoons sour cream or plain yogurt
2 tablespoons fresh cilantro leaves (chopped)
Kosher salt
Freshly ground black pepper
2 tablespoons milk (if needed)
Optional Ingredients:
½ teaspoon Sriracha Sauce
½ teaspoon ground cumin
1- teaspoon honey (I prefer unsweetened Crema)

Steps:

  • For the Layered Mexican Dip:
  • Combine softened cream cheese and ½ cup salsa. With a stand mixer, beat on medium-high until well combined and fluffier.
  • Place the cream cheese/salsa mixture in the bottom of a 9x9 glass baking dish or casserole and smooth out the mixture.
  • In this order, layer chopped lettuce, cheese and tomatoes over the cream cheese mixture.
  • Drizzle extra salsa over the top.
  • If desired (as I do) serve Avocado Crema on the side
  • The salad is delicious as is, but if your want to kick it up, add your favorite toppings.

  • For the Avocado Crema:
  • Combine all Avocado Crema ingredients in a food processor or blender.
  • Pulse or mix until the ingredients are well blended and smooth. If needed, add a little milk.

2 tablespoons fresh lemon juice
Pinch of garlic salt
Pinch of black pepper
Dash of Paula Deen Hot Sauce
1 cup sour cream
1 cup mayonnaise
1 (1.25-ounce) package taco seasoning
4 (9-ounce) cans Frito-Lay bean dip
1 (16-ounce) jar picante sauce or salsa, drained
1 cup chopped yellow onion or green onion
3 tomatoes, chopped
1 (6-ounce) can pitted black olives, drained
sliced jalapeños, to taste (optional)
8 ounces sharp cheddar cheese, grated
4 ounces Monterey Jack cheese, grated

Steps:

  • In a bowl, stir together avocado, lemon juice, garlic salt, black pepper, and hot sauce; set aside.
  • In another bowl, mix sour cream, mayonnaise, and taco seasoning; set aside.
  • In a wide, shallow bowl, layer bean dip, avocado mixture, sour-cream mixture, picante sauce, onion, tomatoes, olives, and jalapeño peppers (if desired), and top with both cheeses. Serve with tortilla chips.
