2 cups mayonnaise
1 cup sour cream
1/2 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
8 cups fresh baby spinach (about 6 ounces)
6 hard-boiled large eggs, chopped
1/2 pound sliced fully cooked ham, cut into strips
4 cups torn iceberg lettuce (about 1/2 head)
2-1/2 cups frozen petite peas (about 10 ounces), thawed, optional
1 small red onion, halved and thinly sliced
8 ounces sliced Swiss cheese, cut into strips
1/2 pound bacon strips, cooked and crumbled

Steps:

  • For dressing, mix first five ingredients. In a 3-qt. or larger glass bowl, layer spinach, eggs, ham, lettuce, peas, if desired, and onion. Spread with dressing. Sprinkle with cheese and bacon. Refrigerate, covered, until serving.

6 tablespoons olive oil
1 onion, thinly sliced
2 tablespoons white-wine vinegar
2 teaspoons grainy mustard
Coarse salt and ground pepper
2 bunches spinach (about 1 pound), trimmed and cut into bite-size pieces
8 ounces ham, sliced 1/4 inch thick, and cut into small sticks
6 radishes, thinly sliced
6 hard-cooked eggs, quartered

Steps:

  • In a medium-size saucepan, heat olive oil over medium-high. Add onion. Remove from heat, and stir in vinegar, mustard, 3/4 teaspoon salt, and 1/4 teaspoon pepper.
  • In a large bowl, combine spinach, ham, and radishes. Drizzle onion mixture over salad, and toss to coat evenly. Garnish with hard-cooked eggs, and serve.

16 cups torn fresh spinach
1 teaspoon sugar
1 teaspoon pepper
1/4 teaspoon salt
6 hard-boiled large eggs, chopped
1-1/2 cups cubed fully cooked ham
1 medium red onion, sliced
1 envelope ranch salad dressing mix
1-1/2 cups mayonnaise
1 cup sour cream
2 cups shredded Swiss cheese
1/2 pound sliced bacon, cooked and crumbled

Steps:

  • Place two-thirds of the spinach in a 4-qt. salad bowl. Sprinkle with half of the sugar, pepper and salt. Top with eggs, ham and remaining spinach. Sprinkle with remaining sugar, pepper and salt. Arrange onion slices on top., In a large bowl, combine the dressing mix, mayonnaise and sour cream. Spread over onions. Sprinkle with cheese and bacon. Refrigerate until serving.

I'm always on the lookout for new spinach salads, and I particularly like this one. It can be prepared ahead of time and it travels well, too!

1/2 to 3/4 pound fresh spinach
1/2 medium cucumber, thinly sliced
1/2 cup thinly sliced radishes
1/4 cup thinly sliced green onion
2 hard-boiled large eggs, sliced
3/4 cup Ranch-style salad dressing
5 slices bacon, crisply fried and crumbled
1/2 cup Spanish peanuts

Steps:

  • Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly layer cucumber slices, radish, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts.
