7-LAYER BEAN DIP
Easy 7-layer bean dip with refried beans, guacamole, sour cream, salsa, cheese, olives and green onion. Everyone loves this easy Mexican dip!

Steps:
- Add the refried beans to a mixing bowl. Season with chili powder, cumin and garlic powder. Taste and add more seasoning if desired.
- Spread beans into a single layer on a large serving plate or in a 9x13'' pan.
- Add avocado and lemon/lime juice to a bowl and mash well with a fork. Spread into an even layer, over the beans.
- Spread sour cream into an even layer, over the mashed avocado layer.
- Dollop small spoonfuls of salsa all over the top of the sour cream layer.
- Sprinkle with cheese, followed by olives, and then green onion. You could also add a diced tomato for garnish (optional).
- Refrigerate until ready to serve (this can be made a day in advance). Serve with tortilla chips.

This 7 layer bean dip is great for Super Bowl parties, work parties, other gatherings! Pretty easy to make...you can use store bought guacamole if you can't find ripe avocados.

- Mix avocados, lemon juice, salt, and pepper.
- Mix mayonnaise, sour cream, and taco seasoning mix.
- Layer ingredients as follows.
- Bottom layer: Bean Dip.
- Second layer: Avocado mixture.
- Third layer: Sour cream mixture.
- Fourth layer: Tomatoes.
- Fifth layer: Onions.
- Sixth layer: Olives.
- Seventh layer: Cheese (I like to use Colby Jack cheese).
- Top with extra sour cream/olives/salsa, etc. if desired.
- Serve with tortilla chips.
- **This seems to be a little bit better if you can chill it for a few hours or over night to let the flavors intensify**.
CAPTAIN'S AVOCADO BEAN DIP
This is a great quick recipe that can be doubled when you need to entertain a lot of guests. Great for the big game or tailgate parties. Texture should be that of most dips. If not, add more mayonnaise or salsa.

- In a small mixing bowl combine the sour cream and taco mix; mix well.
- Spread bean dip into the bottom of a 9x13 inch clear glass dish. Layer avocado on top of the bean dip. Sprinkle the lemon juice and garlic salt over the mixture. Spread the sour cream mixture over the avocados. Layer the olives over the sour cream, the tomatoes over the olives; spread the cheese dip and onions over the entire mixture. - Peel and pit and mash the avocados.
- Mix together the fresh lemon juice, garlic salt and tabasco.

- Remove 1 cup salsa and place in a fine-mesh sieve over the sink to drain. This will keep the dip from getting soggy. Stir remaining salsa and refried beans together and spread mixture in an 8x8 or 9x9-inch casserole dish or a 2-quart baking dish.
