One of the moistest and tasty gluten free turkey meatloaf recipes I've ever made. It reheats well and is loaded with simple flavors that make it perfect for even kids (especially with the hidden veggies)!

Number Of Ingredients 13

1 lb ground turkey, dark meat
1 whole carrot
1 whole celery stalk
1 small onion
3 medium garlic cloves
1.5 tsp Coconut palm sugar (I use http://amzn.to/2Amu7Jf)
1 cup gluten free rolled oats (I use http://amzn.to/2zz22Bm)
1/2 3oz tomato paste (make sure this is marked GF)
1 tsp Dijon mustard
1 tbsp Balsamic Vinegar
1/5 tsp sea salt
1 tsp ground black pepper
1.5 egg replacer (See explanation below)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare the egg replacement or use 1 egg (if you can tolerate eggs).
  • Cut up the carrot, celery, garlic and onion in chunks and use a food processor to mince/puree each. If you've got a small one, you'll need to process each vegetable by itself. Add each veggie (and whatever liquid results) into a large mixing bowl.
  • Add egg replacer, oats, sugar, tomato paste, mustard, vinegar and spices to the large mixing bowl and combine everything.
  • Add in the turkey meat and fold everything together until it become a consistent mass.
  • Place the entire turkey mixture in a baking dish and smooth out top. If using a metal pan, you may want to oil the pan before adding in the turkey mixture. If you use Corningware, you do not need to oil the sides.
  • Smooth out the top of the meatloaf and cover with foil or ideally a lid, if you have one.
  • Place the dish on the middle rack of your oven and bake for about 35 minutes.
  • Remove the lid or foil and bake for another 5 to 10 minutes.
  • Remove dish from the oven and allow it to cool for at least 5 minutes before serving.

2 lbs Ground Turkey (I use 1 lb 99% fat free & 1 lb 93% fat free)
2 large Eggs
1/2 small Red Onion (chopped)
3/4 cups Gluten-Free Italian Bread Crumbs (Ian's Brand)
1 tbsp Gluten-Free Soy Sauce
1 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
1/4 tsp Sea Salt
1 tbsp Brown Sugar (or honey)
3/4 cup Ketchup
1 tbsp Yellow Mustard
1/4 cup Brown Sugar (or honey )
1/2 tsp Black Pepper

Steps:

  • Preheat oven to 385-degrees
  • In a large bowl, mix the ground turkey, eggs, onion, Italian bread crumbs, soy sauce, pepper, garlic powder, onion powder, sea salt, and brown sugar together.
  • Form three even loafs and add them to a non-greased oven-safe pan.
  • Create the glaze. Mix the ketchup, mustard, and brown sugar together until smooth.
  • Coat the loaves with the glaze and sprinkle black pepper on top. I poke holes into the loaf while spreading the glaze that way it cooks into the loaf.
  • Bake the loaf in the oven for about 35-minutes. Meatloaf should read 175 to 185 on a thermometer for the perfect temp.
  • Allow the meatloaf to cool and slice!

3 lbs ground turkey
1 cup gluten-free breadcrumbs
1 large vidalia onion
2 teaspoons table salt
1/2 teaspoon black pepper
1/2 cup ketchup
8 ounces sweetened condensed milk
1/2 cup apple cider vinegar (sauce)
1/2 cup brown sugar
1 cup ketchup

Steps:

  • Combine meatloaf ingredients and place into loaf pans.
  • smooth out top.
  • Sauce: Combine sauce ingredients and pour on top of meatloaf.
  • Bake @ 350 degrees for 1 hour 30 minutes.

3 tablespoons becel buttery taste margarine
10 ounces cremini mushrooms or 10 ounces white mushrooms, finely chopped
1 medium zucchini, finely chopped
1/2 cup sweet onion, finely chopped
1 lb lean ground turkey
1/2 cup quinoa, cooked according to package directions (about 1 cup cooked)
4 slices gluten-free sandwich bread, processed into crumbs
1 cup no-salt-added tomato sauce, divided
1 large egg
1/2 teaspoon fresh ground black pepper
1 tablespoon firmly packed dark brown sugar
1/4 teaspoon salt

Steps:

  • Preheat oven to 375°F (176°C).
  • Melt margarine in large nonstick skillet and cook mushrooms, zucchini and onion, stirring occasionally until vegetables are starting to brown and tender, about 8 minutes. Let cool.
  • Combine mushroom mixture with ground turkey, cooked quinoa, bread crumbs, 1/2 cup (125 mL) tomato sauce, egg and pepper.
  • Form mixture into loaf and arrange in shallow roasting pan. Bake 40 minutes.
  • Blend remaining tomato sauce, brown sugar and salt in small bowl.
  • Brush top of loaf with tomato mixture and return to oven until meatloaf is thoroughly cooked, about 8 minutes.
  • Recipe tip: Cut the meatloaf into single-portion servings and store in plastic bags or containers to pack for lunch or prepare in a hurry.

This is my take on a family favorite of Swedish meatballs but usually made only at the holidays. With this, it can be like that delicious taste, but any day you desire! This flavor resembles that of a beef and pork recipe somewhat and is ever so good!

nonstick cooking spray
2 tablespoons butter
1 medium onion, diced
1 tablespoon minced garlic
1 tablespoon Worcestershire Sauce
2 teaspoons steak sauce (such as A1®)
1 teaspoon beef base
1 pound lean ground turkey
1 pound lean ground turkey sausage
2 large eggs
1 teaspoon ground allspice
1 teaspoon dried parsley
1 packet stevia powder
½ teaspoon sweet paprika
½ teaspoon ground nutmeg
½ cup gluten-free oats
1 cup water
1 (.87 ounce) package brown gravy mix
1 teaspoon lemon juice
1 large bay leaf

Steps:

  • Spray a 9x5-inch loaf pan with nonstick spray.
  • Melt butter in a saute pan over medium heat. Add onion and garlic and cook until translucent, about 5 minutes. Stir in Worcestershire sauce, steak sauce, and beef base. Set aside to cool a little.
  • Combine turkey, turkey sausage, eggs, allspice, parsley, and stevia in a large mixing bowl. Add oats and cooled onion mixture. Mix by hand until well combined and transfer to the prepared loaf pan. Cover and refrigerate for 1 to 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). Remove meatloaf from the refrigerator.
  • Bake, uncovered, in the preheated oven until no longer pink in the center, draining any liquid as it builds up, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • When the meatloaf has been cooking for about 1 hour, whisk water and gravy mix together in a small saucepan over medium heat. Add lemon juice and bay leaf and stir frequently until boiling. Reduce heat and simmer for 1 minute. Remove from the heat and let thicken, 3 to 5 minutes. Discard bay leaf and pour gravy over the meatloaf during the last 15 to 20 minutes of baking.
