4 cups uncooked mini lasagna (mafalda) noodles (8 ounces)
1 jar (28 ounces) spaghetti sauce
1 can (8 ounces) mushroom stems and pieces, drained
1 can (2 1/4 ounces) sliced ripe olives, drained
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 350°. Cook and drain pasta as directed on package.
  • Mix pasta and remaining ingredients except cheese in ungreased 2 1/2-quart casserole.
  • Cover and bake about 30 minutes or until hot and bubbly. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted.

2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese
2 tablespoons dried parsley flakes
1 jar (24 ounces) pasta sauce

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside. , In a large bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper. Transfer to a greased shallow 3-qt. or 13x9-in. baking dish. Top with beef mixture and spaghetti sauce (dish will be full). , Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until bubbly and cheese is melted, 15 minutes longer. Let stand for 10 minutes before serving. Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

1/2 onion ((chopped))
16 oz rotini noodles
28 oz crushed tomatoes ((canned) )
1 egg ((beaten))
8 oz ricotta cheese
8 oz mozzarella cheese ((shredded))
1 Tbsp Italian Seasoning (dried)
2 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Preheat the oven to 350 degrees F and spray a 9X13 pan with a non-stick cooking spray.
  • Brown ground beef and onion until cooked. While the meat is cooking, boil the noodles according to package directions until al dente.
  • Mix crushed tomatoes, garlic, Italian seasoning, salt and pepper in with the meat mixture..
  • Reserve half of mozzarella cheese aside to sprinkle on the top of the casserole.
  • Combine the rest of the mozzarella cheese, ricotta cheese, beaten eggs together in a large bowl.
  • Then stir in the cooked pasta. Coat the pasta completely with the cheese mixture.
  • Place half of the pasta on the bottom of the 9X13 pan. Then place half of the meat mixture on top of the pasta.
  • Repeat the process until all of the pasta and meat mixture is layered in the pan. Top with the remaining shredded mozzarella cheese.
  • Bake uncovered at 350 degrees for 30 to 45 minutes (until bubbly). Let stand for 10 minutes before serving.
  • Serve warm and enjoy!

10 oz Queso Fresco (Ranchero Cheese)
1 Tbsp sour cream
1 egg
4 oz mozzarella cheese ((1 cup shredded))
2 Tbsp parsley (chopped)
1 tsp garlic salt
1 lb penne pasta ((reserve 1 cup pasta water))
2 oz cheddar cheese ((1/2 cup shredded))
2 oz mozzarella cheese ((1/2 cup shredded))
1 lb lean ground beef (use 90/10 or an 85/15 fat content)
1 medium diced onion
1 tsp granulated sugar
1/2 tsp dried oregano
1/2 tsp sea salt
1/4 tsp ground cumin
1/8 tsp ground black pepper
24 oz marinara sauce (homemade, or store-bought)

Steps:

  • Bring a 5 Qt pot of water to boil and add 1 Tbsp salt. Add penne pasta and cook al dente according to package instructions.
  • In a large, deep, oven-safe pan, combine beef and onion. Sauté over med/high heat, until meat is fully cooked and onion is soft (5 to 8 mins), breaking up meat with a spatula. Discard any excess fat released from beef.
  • Stir in seasonings: 1 tsp sugar, 1/2 tsp oregano, 1/2 tsp salt, 1/4 tsp cumin, 1/8 tsp pepper. Add marinara and bring to simmer then remove from heat.
  • Meanwhile, crumble up ranchero cheese in a medium bowl. Add 1 Tbsp sour cream, 1 egg, 1 cup shredded mozzarella, 2 Tbsp parsley and 1 tsp garlic salt. Stir together then add it to the meat sauce and mix just until combined.

1/2 teaspoon crushed red pepper flakes, optional
8 ounces farfalle pasta
Kosher salt and freshly ground black pepper, to taste
1 cup shredded mozzarella cheese
1/4 cup freshly grated Parmesan
1 cup ricotta cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. 1 green onion, finely chopped
2 tablespoons canola oil
2 tablespoons plus 1/2 cup butter, divided
1/2 cup chicken broth
1 bottle (8 ounces) clam juice
1 pound bay scallops
1 pound uncooked small shrimp, peeled and deveined
1 package (8 ounces) imitation crabmeat, chopped
1/4 teaspoon white pepper, divided
1/2 cup all-purpose flour
1-1/2 cups 2% milk
1/2 teaspoon salt
1 cup heavy whipping cream
1/2 cup shredded Parmesan cheese, divided
9 lasagna noodles, cooked and drained

Steps:

  • In a large skillet, saute onion in oil and 2 tablespoons butter until tender. Stir in broth and clam juice; bring to a boil. Add scallops, shrimp, crab and 1/8 teaspoon pepper; return to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until shrimp turn pink and scallops are firm and opaque, stirring gently. 2 small zucchini
2 small summer squash
Kosher salt
2 red bell peppers
7 ounces low-fat goat cheese
1/3 cup pitted Calamata olives
2 teaspoons chopped fresh thyme leaves
1/4 teaspoon red pepper flakes
1 recipe tomato sauce (recipe follows)
Freshly ground black pepper
1/4 cup grated Parmesan
1 (28-ounce) can chopped tomatoes
2 tablespoons extra-virgin olive oil
3 large cloves garlic, smashed
1 tablespoon red wine vinegar
1 teaspoon kosher salt
1/3 cup packed basil leaves
Freshly ground black pepper

Steps:

  • Slice zucchini and yellow squash lengthwise into 1/8 to 1/4-inch thick strips. Lay the strips out on baking sheet pan and salt generously. Set aside.
  • Roast the peppers over a gas flame or broil on a sheet pan until completely charred, about 8 minutes. Put the peppers in a bowl, cover, and set aside until just cool enough to handle, about 5 minutes. Rub the skins off the peppers with your fingers to remove most of the charred skin. Core and remove the seeds, then slice the peppers lengthwise into 1 1/2-inch strips.
  • Preheat the oven to 375 degrees F. Mix the goat cheese, olives, thyme, and red pepper flakes together in a bowl and season, to taste, with salt and pepper.
  • Thoroughly wipe excess salt and moisture from zucchini and squash with paper towel.
  • Spread 1 cup of the tomato sauce into the bottom of an 8- by 11-inch baking dish. Begin layering, remembering to season with pepper between each layer. Start with the zucchini and then summer squash and all the peppers. Dollop spoonfuls of the cheese over the peppers and then spread it out to cover. Spoon half of the remaining sauce over the vegetables. Repeat with the remaining zucchini, squash, goat cheese, and sauce. Sprinkle top layer with Parmesan and bake, covered, for 30 minutes, then uncover. Continue baking until the vegetables are tender and the sauce thickens, about 30 minutes more. Let lasagna stand for 10 minutes before slicing.
  • Put the tomatoes, olive oil, garlic, vinegar, and salt in a sauce pan. Bring to a boil over high heat, lower heat to a brisk simmer, and cook until thickened, about 30 minutes. While sauce cooks tear basil leaves into small pieces. Remove the sauce from the heat and stir in the basil. Transfer half of the sauce to a food processor and puree. Return to the saucepan and season, to taste, with salt and pepper.

10 ounces campanelle ((or another short pasta like penne, ziti, or medium shells))
1 pound lean ground beef
½ cup diced onion
1 teaspoon minced garlic (divided)
1 teaspoon Italian Seasoning
½ teaspoon salt
½ teaspoon pepper (divided)
25 ounces marinara sauce ((I like Mezzetta's Marinara))
¼ cup water
1 cup part-skim ricotta cheese
1 egg
3 cups shredded part-skim mozzarella cheese (divided)
½ cup grated Parmesan cheese (divided)
1 teaspoon dried parsley flakes (or 1 tablespoon fresh)
fresh basil (optional for garnish)

Steps:

  • Cook the pasta one minute shy of the package directions. Drain well and set aside.
  • Meanwhile, in a large, deep skillet or Dutch oven, cook beef, onion, and ½ teaspoon garlic over medium heat until meat is no longer pink. Drain the grease and return the pan to the heat. Sprinkle with Italian Seasoning, salt and ¼ teaspoon pepper and cook, stirring, for a minute or two. Add the marinara and water and let it simmer for a couple of minutes until warmed through. Stir in the cooked pasta, remove from the heat and set aside.
  • Preheat oven to 350 degrees F. Coat a 13- x 9-inch baking dish with non-stick cooking spray.

1 jar (28 ounces) spaghetti sauce
1 package (25 ounces) frozen sausage or cheese ravioli
1-1/2 cups shredded part-skim mozzarella cheese
Minced fresh basil, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. In a greased 2-1/2-qt. baking dish, layer a third of the spaghetti sauce, half of the ravioli and beef, and 1/2 cup cheese; repeat layers. Top with remaining sauce and cheese., Cover and bake at 400° until heated through, 40-45 minutes. If desired, top with basil to serve.

Ridiculously easy lasagna, from Real Simple magazine. It would be easy to vary -- different sauces, add extra veggies, etc. I actually used refrigerated ravioli, and forgot to use foil. It puffed up beautifully, and didn't overbrown. Delicious!

1 (26 ounce) jar pasta sauce
1 (18 ounce) bag frozen large cheese ravioli, unthawed
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 (8 ounce) bag shredded mozzarella cheese
1/2 cup grated parmesan cheese (2 ounces)

Steps:

  • Heat oven to 350°F.
  • Spoon 1/3 of the sauce into a 9-by-13-inch baking dish.
  • Place 12 ravioli on top.
  • Cover with the spinach and half the mozzarella.
  • Add another layer of ravioli and the remaining sauce, mozzarella, and the Parmesan.
  • Cover with foil and bake for 25 minutes.
  • Uncover and bake until bubbly, 5 to 10 minutes more.

1 can (29 ounces) tomato sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
6 ounces cream cheese, softened
2 cups sour cream
2 cups shredded cheddar cheese, divided
4 green onions, chopped
12 to 14 lasagna noodles, cooked and drained

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the tomato sauce, salt, pepper and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. , In a large bowl, beat cream cheese until smooth. Add the sour cream, 1 cup cheddar cheese and onions; mix well., Spread about 1/2 cup meat sauce into each of two greased 8-in. square baking dishes. Place two to three noodles in each dish, trimming to fit as necessary. Top each with about 1/2 cup cream cheese mixture and 2/3 cup meat sauce. Repeat layers twice. Sprinkle 1/2 cup cheddar cheese over each., Cover and freeze one casserole for up to 1 month. Bake remaining casserole, uncovered, at 350° for 25-30 minutes or until bubbly and heated through. Let stand for 15 minutes before cutting. , To use frozen casserole: Thaw in the refrigerator for 18 hours. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-50 minutes or until heated through.

5 medium (2-1/4" to 3" dia, raw)s potatoes, peeled and cubed
½ cup milk
½ cup butter, melted
½ pound bacon, diced
1 onion, chopped
6 cloves garlic, minced
½ (16 ounce) package lasagna noodles
2 cups shredded Cheddar cheese
salt and pepper to taste
1 (8 ounce) container sour cream
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes in a large pot with water to cover over high heat. Bring to a boil and cook until the potatoes are tender. Remove from heat, drain, then combine with the milk and 6 tablespoons of butter, mash and set aside.
  • Melt the remaining 2 tablespoons of the butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes, or until the bacon is fully cooked.
  • Cook the lasagna noodles according to package directions and cool under running water.
  • Place 1/2 of the mashed potatoes into the bottom of a 9x13 inch baking dish. Top this with 1/3 of the cheese, followed by a layer of lasagna noodles. Repeat this with the remaining potatoes, another 1/3 of the cheese and a layer of noodles. Then arrange the bacon, onion and garlic over the noodles, then another layer of noodles, and finally top all with the remaining cheese. Season with salt and pepper to taste.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 30 to 45 minutes, or until the cheese is melted and bubbly. Serve with sour cream and chopped fresh chives.

1 (1 1/2 ounce) package spaghetti sauce mix
1 teaspoon garlic powder

3 ounces cream cheese
1 cup evaporated milk
1 1/2 cups shredded mozzarella cheese

Steps:

  • Cook noodles according to pkg directions.
  • Brown meat with onion until no longer pink.
  • Add tomato sauce, spaghetti sauce mix, garlic powder, italian seasoning and salt.
  • Drain noodles.
  • In same pan, heat cream cheese with evaporated milk, stir until smooth; Return the noodles to pan and mix well.
  • Pour noodle mixture into sprayed 9x9 in baking dish.
  • Top with meat sauce.
  • Sprinkle with cheese.
  • Bake at 350° for 30 minutes, until bubbly.
  • Let sit on rack 10 minutes before serving.
