LAVENDER-LEMON SANDWICH COOKIES

- Make the cookies: Beat the butter, granulated sugar and honey in a large bowl with a mixer on medium-high speed until fluffy, about 1 minute. Beat in
- the egg, vanilla and lemon zest. Reduce the mixer speed to low; beat in the flour, baking soda and salt until the dough comes together. Cover and refrigerate until firm, 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Grind the lavender in a spice grinder until crumbly. Mix with the coarse sugar in a medium bowl.
- Roll rounded teaspoonfuls of dough into balls, then roll in the lavender sugar; arrange 2 inches apart on the prepared pans. Bake, switching the pans halfway through, until the cookies are browned around the edges, 12 to 15 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.
- Meanwhile, make the filling: Beat the butter, lemon zest, lemon juice and vanilla in a large bowl with a mixer on high speed until light, 1 to 2 minutes. Reduce the mixer speed to medium; beat in the confectioners' sugar until smooth. Spread the filling on half the cookies (about 1 teaspoon per cookie). Sandwich with the remaining cookies.

Delightful little cookies that add a wonderful atmosphere to any afternoon tea. They have a delicate lavender flavor that is not overpowering at all! My first batch of these cookies disappeared before it had a chance to cool!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Cream together the butter and sugar. Beat the egg, and blend into the butter and sugar. Mix in the lavender flowers and the flour. Drop batter by teaspoonfuls onto cookie sheets.
- Bake 15 to 20 minutes, or until golden. Remove cookies to cooling racks, and sprinkle with decorative sugar and additional lavender flowers if desired.

- Preheat oven to 375°. Cream butter, shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. - Preheat the oven to 350 degrees F (175 degrees C).
- Steep Earl Grey tea bag in hot milk in a bowl.
- Mix sugar and butter together in a large bowl. Mix in egg. Remove tea bag from hot milk; add milky tea mixture to batter. Add flour, baking powder, baking soda, and lavender; mix dough until well combined.
- Drop dough by rounded spoonfuls onto ungreased cookie sheets.

LAVENDER TEA COOKIES
A British friend made these for me when I visited her in 1999 and I've been making them every since. They are very buttery and spread like crazy while baking, but you can almost hear the bees buzzing on the lavender when you try one. I kept the recipe to myself for quite a while and only shared it with another friend when she remarked how good they were. Now, they are a standard in HER home and a perennial favourite at her church's bake sale! Very good when served with a cuppa hot tea, especially Earl Grey. And please don't be tempted to add salt or vanilla extract; this is just a plain buttery lavender cookie.
