1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 teaspoons minced ginger (or more if you wish)
2 minced garlic cloves
2 tablespoons toasted sesame oil
2 teaspoons soy sauce
1 teaspoon vietnamese chili sauce (or dried chili flakes)
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon olive oil
10 ounces boneless skinless chicken breasts, cut into 3/4 inch cubes
1 pizza dough, use your own recipe
cornmeal or flour, for handling
2 cups shredded mozzarella cheese
4 scallions, slivered diagonally
1/2 cup white bean sprouts
1/4 cup shredded carrot
2 tablespoons chopped roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Combine sauce ingredients in a small pan over medium heat.
  • Bring the sauce to a boil; boil gently for one minute.
  • Divide into 2 portions for use on chicken and pizza; set aside.
  • To make Thai chicken: Cook the chicken in olive oil over med-high heat, stirring, until just cooked; 5 to 6 minutes do not overcook.
  • Set aside in refrigerator until chilled through.
  • Once chilled, coat the chicken with 1/4 cup sauce.
  • Set aside in refrigerator.
  • To make the pizza: Use a large spoon to spread 1/4 cup sauce evenly over pizza dough within the rim.
  • Cover sauce with 3/4 cup cheese.
  • Distribute half the chicken pieces over the cheese followed by half the green onions, bean sprouts, and carrots, respectively.
  • Sprinkle an additional 1/4cup cheese over the toppings and top the pizza with 1 TBSP chopped peanuts.
  • Transfer the pizza to oven; bake until crisp and golden and the cheese is bubbly, 9 to 10 minute.
  • When cooked through, remove pizza from oven.
  • Sprinkle 1TBSP chopped cilantro over the hot cheesy surface.
  • Repeat with remaining ingredients for a second pizza.

1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

1 prepared pizza crust (your own or purchased tube or crust)
10 ounces chicken breasts, cooked and shredded
1 tablespoon olive oil
2 tablespoons barbecue sauce
1/2 cup barbecue sauce
1 cup gouda cheese
1 cup mozzarella cheese
1/4 small red onion, sliced into rings
2 tablespoons cilantro

Steps:

  • One hour before baking the pizzas, start preheating the oven at 500 degrees Coat chicken with 2 tablespoons barbecue sauce.
  • Set aside in the refrigerator.
  • Prepare dough into pizza shape.
  • Precook if needed.
  • Spread remainder of barbecue sauce over the surface of the dough.
  • Spread cheese over the sauce.
  • Spread chicken over the cheese.
  • Place the onion rings over the chicken pieces.
  • Place the pizza in the oven (on top of pizza stone if available or on pan).
  • Bake until crust is crispy and cheese is bubbling (8-10 minutes).
  • Remove pizzas from the oven and sprinkle each with 1/2 of the cilantro.

1 teaspoon active dry yeast
1 ½ cups warm water
4 cups flour
1 teaspoon salt
⅓ cup olive oil
4 boneless skinless chicken breasts (cooked and cubed)
20 ounces barbecue sauce
olive oil (for drizzling)
salt (to taste)
16 ounces mozzarella cheese (sliced)
½ red onion (thinly sliced)
½ cup cilantro (chopped)

Steps:

  • Sprinkle yeast over warm water in a small bowl and let stand for 5 minutes
  • In a mixer, combine flour and salt.
  • Drizzle olive oil into the mixer and mix until combined.
  • Pour in yeast/water mixture after it has proofed and mix until dough is formed.
  • Coat a large mixing bowl with olive oil and form dough into a ball and place inside. Cover bowl tightly with plastic wrap and set aside for 1-2 hours or in the fridge for 2+ hours.
  • Preheat oven to 500 degrees F.
  • Drizzle and spread olive oil over two baking sheets.
  • Split dough in half and roll out onto each pan.
  • Lightly brush a little olive oil onto each crust and sprinkle with salt.

1/2 cup Buttermilk
4 tablespoons BBQ Sauce (store bought or homemade, of choice)
1 tablespoon Hidden Valley Ranch Powder
1 clove Garlic (grated)
Freshly ground Black Pepper (to taste, to taste)
1 large Red Onion
1 1/2 - 2 cups Buttermilk
1 2/3 cup Flour
1 tablespoon Salt
Dash Cayenne
Freshly ground Black Pepper (to taste, to taste)
Canola Oil (for frying)
4 Chicken Breasts
Salt and freshly ground Black Pepper (to taste)
1 cup BBQ Sauce (store bought or homemade, of choice, divided)
3 - 4 heads Romaine Lettuce (chopped)
2 Tomatoes (diced)
2 Ears Corn, shucked, rinsed and kernels cut from the cob or 1 cup canned Corn Kernels
1 can Black Beans (rinsed and drained)
1 Avocado
Fresh Cilantro (chopped)

Steps:

  • Add all ingredients to a small bowl. Mix well. Set aside. This can be done in advance. Store, covered, in the refrigerator, until ready to use.
  • Cut both ends off of red onion. Peel off papery skin.
  • Using a mandolin, slice into thin rounds (as thin as you can get them).
  • Separate all the rings and lay them into a shallow baking dish.
  • Cover with 1 1/2 -2 cups buttermilk. Set aside and allow to soak for 30 - 45 minutes.
  • In a large bowl, mix together flour, salt, cayenne and black pepper.
  • Heat oil in a deep skillet to 350°F.
  • Using tongs, remove a small amount of onions from the dish. Allow excess buttermilk to drip off.
  • Toss onions in flour mixture to coat. Shake off excess.
  • Place floured onions into hot oil. Shallow fry until crispy and golden, flipping half way through, about 2 - 3 minutes per side.
  • Remove from oil. Place onto a paper towel-covered plate to drain.
  • Repeat with remaining onions until all have been cooked. Set aside until ready to use.
  • Season chicken with salt and pepper on both sides.
  • Bake or grill chicken breasts to an internal temperature of 165°F. During last few minutes of cooking, baste the chicken breasts with 3/4 cups of the BBQ sauce, making sure to get both sides. Set aside to cool. Cut into bite-sized cube pieces. This, too, can be done in advance. Store, covered, in the refrigerator, until ready to use.
  • Starting at the top, with a very sharp knife, cut down into each avocado until you hit the pit. Cut completely around the avocado, top to bottom, touching the pit the entire time.
  • Pull the two halves of the avocado apart and remove the pit with a spoon.
  • Use the spoon to scoop the avocado out of the skin.
  • Cut avocado flesh into cubes.
  • Divide lettuce evenly among four large salad plates or bowls.
  • Add 1/4 of tomato, corn, black beans and avocado
  • Top each salad with 1/4 of the cubed up chicken breast.
  • Add a handful of the onion straws.
  • Top with a drizzle of the BBQ Ranch Dressing and a drizzle of the remaining BBQ sauce.
  • Sprinkle a bit of cilantro over top, to garnish.
  • Serve cold.
