Steps:
- Divide apples among four ungreased 10-oz. microwave-safe bowls. Top each with 1 teaspoon of brown sugar. Sprinkle with cinnamon; top each with 1 teaspoon butter. , Cover and microwave on high for 7-1/2 minutes or until apples are tender. Cool slightly; drizzle with caramel topping if desired.

APPLE LAVENDER MUFFINS
From my local paper they say, "The resinous floral flavor of lavender is lightened by sweet apples in these muffins. Fresh or dry lavender flowers can be used interchangeably since their flavor and volume are nearly the same. Look for dried lavender in the bulk herb section of your grocer or natural foods store." Sounds too good to pass up...

Steps:
- Preheat oven to 375 degrees.
- Coat 12 muffin tins with cooking spray or line with muffin cups.
- In large bowl, sift together flour; sugar; baking powder and salt. Make a well in center.
- In separate bowl, whisk together milk, lavender; butter and egg. Add milk mixture to flour mixture and stir by hand just until batter is evenly moistened. Fold in 1/2 cup of the apples.
- Fill prepared muffin tins about three-quarters full. Gently tap filled tins to release any air bubbles.
- Sprinkle remaining diced apple over muffins. Bake until skewer inserted into center of a muffin comes our clean, 25 to 30 minutes. Cool muffins in pan about 10 minutes, then transfer to cooling rack.

LAVENDER JELLY
A beautiful lavender jelly that will awaken your senses and delight your tastebuds with pleasure! Wonderful served at Afternoon or High tea with scones, puddings, or cream. It can also be served as an unusual accompaniment to meats, such as lamb or poultry. Or serve as a topping over brie cheese as an appetizer. The sky is the limit!

Steps:
- In a large saucepan over high heat bring water just to a boil.
- Remove from heat and stir in dried lavender flowers. Cover and let steep for 20 minutes.
- After 20 minutes, strain mixture through a fine mesh strainer into a deep kettle or pot, discarding the lavender flowers.
- Stir in lemon juice and pectin; continue stirring until the pectin is thoroughly dissolved.
- Over high heat, bring the mixture to a hard rolling boil (a full rolling boil that cannot be stirred down).
- Add sugar. When the jelly solution returns to a hard rolling boil, let it boil for 2 to 4 minutes (see below), stirring occasionally.
- Boil Times:.
- 2 minutes - soft gel.
- 4 minutes - medium gel.
- Testing for "jell" (thickness - I keep a metal tablespoon sitting in a glass of ice water, then take a half spoonful of the mix and let it cool to room temperature on the spoon. If it thickens up to the consistency I like, then I know the jelly is ready. If not, I mix in a little more pectin (about 1 teaspoon to 1/2 of another package) and bring it to a boil again for 1 minute.
- After boiling, transfer the jelly into hot sterilized jars. Fill them to within 1/4 inch of the top, wipe any spilled jam off the top, seat the lid and tighten the ring around them.
- Process in a water bath for 10 minutes. Remove jars to wire rack and let cool before serving.
- Makes five 1/2 pints.
DUTCH APPLE DELIGHT
Served warm, this old-fashioned dessert of a simple cake topped with apples, walnuts, cinnamon and shredded Cheddar is sure to please the whole family.

- Preheat oven to 375°F. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg; mix well. Combine flour, baking powder and 1/2 tsp. of the cinnamon. Add to brown sugar mixture alternately with the milk, mixing well after each addition. Stir in 1/2 cup of the cheese. Pour into greased 8-inch square baking pan.
- Mix apples, granulated sugar and remaining 1/2 tsp. cinnamon. Spoon evenly over batter; sprinkle with walnuts.
- Bake 35 min. or until toothpick inserted in center comes out clean. Sprinkle with the remaining 1/2 cup cheese. Cut into 9 squares. Serve warm.

I came across this recipe in a little cookbook called Modified 19th Century Recipes by Mary Reid. She has taken old recipes and modified them for 20th century kitchens. I haven't tried this one yet, but it looks intriguing.

- Combine apples, lavender, cinnamon and lemon juice in a baking dish.
- Mix apple slices gently to allow them to coat evenly.
- Dot with butter.
- Mix sugars, flour, and baking powder together, then add egg and salt.
