LAURA'S TICKLE YOUR TASTEBUDS CHICKEN NOODLE SOUP



Laura's Tickle Your Tastebuds Chicken Noodle Soup image

This is the best that (in over 50 years) I have EVER tasted. Please don't leave out the spices---makes the soup.

Number Of Ingredients 12

6 (10 3/4 ounce) cans chicken broth or 6 (10 3/4 ounce) cans homemade chicken stock
5 cooked chicken breasts, chopped into 1 pieces (or use purchased rotisserie chicken)
1 cup celery, sliced
2 medium onions, chopped
2 cups carrots, sliced
1 (14 ounce) can corn, drained
1 teaspoon dried sage or 2 teaspoons fresh sage, minced
1 tablespoon thyme
1 teaspoon rosemary
1/2 bunch fresh cilantro, less stems and chop
salt & freshly ground black pepper, to taste
3 cups egg noodles, cooked

Steps:

  • In stock pot, cook onions and celery in olive oil until tender.
  • Add 5 cans of chicken broth, carrots, corn and seasonings.
  • Bring to boil, reduce heat to simmer, and cook for 2 hours.
  • Add remaining can of broth, chicken and noodles, stir to combine and cook until noodles are tender.
  • Variation: CROCKPOT.
  • Lightly spray inside of crock pot with cooking spray.
  • Follow instructions above; cooking for 6 hours on LOW or 3 hours on HIGH; add chicken and uncooked noodles and cook on HIGH for 1 ½-2 hours until noodles are tender.

1 ounce brandy
1/2 ounce Southern Comfort
1 ounce vodka
1 ounce ruby red grapefruit juice (I'd use cocktail juice)
3 ounces fresh pineapple juice
1 ounce freshly squeezed orange juice
1 tablespoon grenadine

Steps:

  • Fill a cocktail shaker halfway full with ice; add in the bourbon, brandy, Southern Comfort, vodka, all the juices, and the grenadine to the shaker.
  • Shake vigorously until the drink is cold.
  • Fill a highball glass halfway with ice, and strain the mixture into the glass; serve immediately.

1 tablespoon butter
1/2 large onion (diced)
1 1/2 cups carrot (diced)
1 1/2 cups celery (diced)
10 cups chicken stock (homemade or store bought...just use one you love)
salt & pepper (to taste)
1 tablespoon dried tarragon
1 bay leaf
2 cups diced cooked chicken
4 cups egg noodles (such as no yolks)

Steps:

  • In a large pot, saute onion, carrot and celery in olive oil and butter over medium heat. Cook until onion starts to soften, about 5 minutes.
  • Stir in chicken stock and seasonings. Bring to boil and stir in chicken and noodles. Reduce heat to simmer and cook until noodles are tender. Taste, adjust seasonings, remove bay leaf and serve.

4 cups low-sodium chicken broth
1 pound boneless, skinless chicken breasts
2 stalks celery, thinly sliced
2 carrots, peeled and thinly sliced
1 small onion, finely diced
Kosher salt and freshly ground pepper
2 medium zucchini (1 pound), trimmed and cut into thin noodles (about 5 cups)
1/4 cup chopped fresh dill
Extra-virgin olive oil, for drizzling
Lemon wedges, for serving

Steps:

  • In a medium pot, combine broth, 4 cups water, chicken, celery, carrots, and onion. Bring to a boil; season with salt and pepper.
  • Reduce heat to a simmer, cover, and cook until chicken is cooked through, about 10 minutes; transfer chicken to a plate. Let cool slightly, then shred into bite-size pieces.
  • Return broth to a simmer; add zucchini noodles. Cook until just tender, about 2 minutes. Remove from heat. Stir in chicken and dill. Season with salt and pepper. Serve, with a drizzle of oil and a squeeze of lemon.
