Old Fashioned Slow Cooked Liver, Bacon and Onions. Meltingly soft, tender pieces of liver cooked in a delicious onion gravy with the bonus of bacon thrown in too! Options to use stove top, slow cooker or oven, pressure cooker, multi cooker, Instantpot too!.

1 lb or 500 g Lamb's or Pig's Liver, washed and sliced
1/2 lb or 250 g Bacon, chopped
2 Medium Onions, sliced
3 Cloves garlic
1 Cup or 70 g Mushrooms, cut to bite size pieces
1 Tablespoon Tomato Puree
1/2 Cup Flour
1 Pint Beef Stock
Salt and Pepper to taste
Optional: 1 teaspoon fresh or dried herbs of your choice, such as Thyme or Oregano.

Steps:

  • Wash and slice the liver in to bite size pieces.
  • In a large mixing bowl, add the flour and season with salt and pepper. Then add the liver and toss, making sure each piece is coated with flour. When done, take 3 tablespoons of flour and place in a cup and add a little cold water to form a paste. We will use this to thicken the gravy later. Set aside.
  • Chop the bacon and slice the onions, mince garlic etc. and over a medium heat, fry off bacon until cooked. Use a slotted spoon and put the cooked bacon on a plate, leaving the bacon fat in the pan.
  • Turn the heat up on the pan and add the liver slices. Carefully turn them until they are browned on all sides then remove on to a plate.
  • Add the sliced onions, garlic and mushrooms to the pan. You may need to add a drop of olive oil if there is not much fat left from cooking the liver. Gently cook until the onions are soft. If using herbs, add them now.
  • Add the bacon and liver back to the pan with the onions and mushrooms and combine. Then add the tomato puree and beef stock. Add the cup of flour water you prepared earlier and gently stir until everything is combined.
  • For cooking on the stove top, place the lid on the pan and gently cook on the lowest heat setting you have for about 2 hours or until the liver is tender.
  • For cooking in the oven, transfer everything to an ovenproof casserole dish and place in the oven at 300 F or 150 C for approximately 2 hrs 30 minutes.
  • For cooking in the slow cooker, transfer everything into your slow cooker and cook on low for 5-6 hours.
  • For those of you who would like to make this recipe in your Multi cooker or Instantpot, using the browning setting, saute as the instructions above and then add the broth mixture to the pot. Select MEDIUM Pressure and cook for 35 Minutes. Release the steam and serve!
  • When ready, serve hot with some lovely mashed potatoes and steamed vegetables!

1 kg/ 2.2 lbs boneless lamb shoulder or leg (Note 1)
about 2 tablespoons all-purpose flour
125 g/ 4.4 oz bacon cubes (Note 2)
2 medium onions
3 garlic cloves
2 tablespoons tomato paste
125 ml/ 4.2 fl. oz/ ½ cup dry red wine
2 tablespoons vegetable oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
2-3 bay leaves
250 g/ 8.8 oz carrots (2-3 depending on size)
750 g/ 1.7 lb potatoes
750 ml/ 25 fl. oz/ 3 cups stock (preferably low-sodium or unsalted (Note 3))
2 tablespoons corn starch
2-3 tablespoons cold water
2 tablespoons Worcestershire sauce
1 tablespoon cider or red wine vinegar (more to taste)
fine sea salt and black pepper (Note 4)

Steps:

  • Cut the meat into large cubes, about 3-4 cm/ 1.5 inch. Dry very well with kitchen paper. Set aside.
  • Chop onions and garlic and set them aside separately from the meat. Chop the bacon.
  • Heat a Dutch oven or another heavy-bottomed pan. Add bacon. There is no need for oil, the bacon will render its fat. Cook for 2 minutes, stirring.
  • Add onions and garlic, stir well and cook for another 3 minutes. Add tomato paste, stir well for 1 minute.
  • Deglaze the pan with the red wine, scraping the bottom as well, for about 1 minute. Pour the contents of the pan into the slow cooker.
  • Wipe the pan clean with kitchen paper, be careful, it's hot!
  • Place one batch of the meat cubes in a bowl, add a little of the flour, and toss well.
  • Heat 1 tablespoon oil in the Dutch oven. Fry the meat pieces in 2 or 3 batches until golden, about 3-4 minutes per batch, turning the meat a few times in between. Only flour the next batch of meat just before it goes to the pan and add a little more of the oil between the batches. Don't overcrowd the pan or the meat will stew instead of searing. Transfer all the meat to the slow cooker.
  • Peel the potatoes and the carrots. Cut them into larger chunks. Place in the slow cooker.
  • Add thyme, rosemary, 2-3 bay leaves, salt, pepper, and stock. The amount of salt you need depends on the stock (Note 4).
  • Turn on the slow cooker and cook for about 6 hours on high and about 8 hours on low.
  • Once the meat and the potatoes are as tender as you want them to be, mix the corn starch and the water to obtain a thick paste. Whisk the slurry into the gravy. If the slow cooker is on high, the sauce will thicken almost instantly. If not, cover the pot again and simmer for about 5-10 minutes more until the sauce thickens.
  • Adjust the taste with salt, pepper, Worcestershire sauce, and vinegar.

450g/1lb lambs' liver, sliced and fully thawed if frozen
25g/1oz butter
2 tbsp sunflower oil
4 tbsp plain flour
1 onion, halved lengthways and sliced
125g/4½oz rindless streaky bacon rashers, each cut into 4-5 pieces
1 beef stock cube
500ml/18fl oz just-boiled water
1-2 tsp tomato ketchup
salt and freshly ground black pepper

Steps:

  • Rinse the liver in a colander under cold water and drain well on kitchen paper. Melt half of the butter with the oil in a large non-stick frying pan over a high heat.
  • Put three tablespoons of the flour in a large bowl and season with salt and freshly ground black pepper.
  • Coat half the liver in the seasoned flour, shake off any excess, then fry each slice in the hot fat for 1-2 minutes on each side until lightly browned, but not completely cooked through.
  • Transfer the slices to a plate and repeat with the remaining liver.
  • Reduce the heat and melt the remaining butter in the same pan. Add the sliced onion and cook for a minute or so, stirring to separate the layers.
  • Add the bacon to the pan and cook, stirring from time to time, for 8-10 minutes or until the onion is pale golden-brown and the bacon is beginning to crisp.
  • Sprinkle the rest of the flour over the onion and bacon and stir it for a minute or so.
  • Dissolve the stock cube in the just-boiled water and pour slowly into the pan, stirring constantly.
  • Bring to a simmer and cook over a medium heat until the gravy is thickened. Add a dash of tomato ketchup and season with salt and freshly ground black pepper.
  • Return the liver to the pan with the onion gravy for just 1-2 minutes to warm it through and finish cooking.
  • Serve the liver and bacon with some mash and freshly cooked greens.

4 rashers smoked streaky bacon
2 tbsp plain flour, seasoned
pinch dried sage (optional)
6 slices lamb's livers (about 400g/14oz)
1 tbsp olive oil
1 onion, thinly sliced
300ml beef stock
2 tbsp ketchup

Steps:

  • Cook the bacon in a large non-stick frying pan until crisp. Meanwhile, mix the flour and sage, if using, and use to dust the liver. Remove bacon from the pan and set aside. Add the oil to the pan and brown the liver for about 1 min on each side. Remove from the pan, then fry the onion until softened. Stir in stock and ketchup, then bubble for 5 mins.
  • Put the liver back in the pan and cook for 3 mins until cooked through. Serve with the bacon broken over the top and some mash. (see related recipes)

A classic British dish that makes the most of hearty, often-overlooked offal. Top your creamy mash with slices of melt-in-the-mouth liver and herb butter

3 large baking potatoes
½ tsp olive oil
150ml whole milk
1 tbsp butter
pinch of freshly grated nutmeg
100g butter , softened
½ tbsp chopped parsley
1 tbsp plain flour
200g lamb's liver , trimmed and cut into 2 pieces (approx 1cm thick)
1-2 tbsp sunflower oil
small handful of mini silverskin pickled onions
2 garlic cloves , very finely chopped

Steps:

  • Heat oven to 200C/180C/gas 6. Prick the potatoes all over with a fork, rub with oil and bake directly on the oven shelf for 1 hr 20 mins. Once cooked, leave for 10-15 mins or until cool enough to handle, then slice in half, scoop out the potato flesh and push it through a potato ricer or colander. Cover until needed. (I like to keep the potato skins for another day and stuff them with leftover mash, softened leeks and cheese, and bake until golden and bubbling.)
  • Mix the herb butter ingredients together, spread out into a rough log shape on a piece of baking parchment, roll up and twist the ends tightly so it resembles a cracker. Put in the freezer for 10-15 mins to firm up.
  • Heat the milk and butter for the mash in a saucepan until the butter has melted and the mixture starts to simmer. Pour this over the potato flesh, mash it and sprinkle over the nutmeg and some seasoning. Keep warm or reheat when serving.
  • Heat a large, non-stick pan over a medium-high heat. Season the flour with pepper, then use it to very lightly dust the liver. Pour the oil into the hot pan, season the liver well with sea salt, then fry for no more than 2 mins each side. Transfer to a plate and cover with foil.
  • Turn down the heat, but while the oil's still hot, add the pickled onions. As the onions start to caramelise, put them on the plate with the liver. Add the garlic to the pan, which by now should be sufficiently cooled enough not to burn it. Add a little oil to the pan if it looks dry. Once the garlic is starting to soften but not coloured at all, add 4-5 thin slices of the parsley butter and some of the resting juices from the liver plate. Turn off the heat and allow the butter to melt but not colour.
  • Heap your mash onto two plates, top with the liver, sliced if you like, and the onions. Then generously drizzle over the herb butter. Serve with a crisp, mustardy salad.

  • Preheat the oven to 180C.
  • Brown the onions in the butter in a frying pan for about 5 minutes, until they begin to soften.
  • Add the liver and fry gently until sealed, about 10 minutes. Add the bacon and brown for 5 minutes.
  • Transfer the meat and onion mix to a casserole dish. Add the baked beans, kidney beans, carrots and celery, and stir well. Add the mixed herbs, beef stock and apple juice and stir.
  • Cook in the casserole dish (with lid on) in the oven for 90 minutes. Check that it doesn't dry out during cooking.

1 package Lipton Onion Soup Mix
6 tablespoons flour

  • Saute the bacon in skillet until crisp.

  • Reserve pan drippings.

  • Add the liver strips and shake until dredged in the flour.
  • Save the flour that remains.
  • Saute liver, celery and onion in bacon drippings until liver is brown.
  • Place in a 2 quart casserole.
  • Top with crumbled bacon.
  • Add bouillon.
  • Bake, covered, in a 350 degreeF.oven for 30 minutes.
  • Add potatoes and carrots and bake, covered, for 45 minutes or until vegetables are tender.
  • Remove the meat and vegetables to a warm platter.
  • Add the flour remaingin in the sack to the skillet.
  • Stir in to the liquid from the casserole.
  • Cook, stirring constantly, until thickened.
  • Pour over liver and vegetables and serve.

400g new potato
2 tbsp olive oil
4 spring onions , trimmed and each cut into 2-3 pieces on the diagonal
4rashers of unsmoked bacon , snipped into pieces
1 tbsp plain flour
1 tsp paprika , plus extra for sprinkling
175g lamb's liver , sliced into thin strips
20g pack flatleaf parsley , chopped
150ml hot vegetable stock (made with bouillon powder)
4 tbsp soured cream

Steps:

  • Halve the potatoes. Simmer in salted water for 12-15 minutes. Drain and set aside.
  • Heat the oil in a wok. Add the potatoes and fry them for 4-5 minutes over a high heat until browned and crispy. Remove from the pan and set aside.
  • Tip the spring onions and bacon into the pan and stir and sizzle for 3-4 minutes or until the bacon gets crispy. Meanwhile, season the flour with paprika, a little salt and plenty of black pepper, then use to coat the liver.
  • Stir the liver into the pan and cook for 2-3 minutes. Toss in the potatoes and quickly reheat. Stir in the chopped parsley, remove everything from the pan and divide between 2 plates. Keep warm.
  • Quickly pour the hot stock into the pan and scrape all the crispy bits up from the bottom. Bubble for 1-2 minutes, then pour around the liver and potatoes. Serve each portion topped with soured cream and a sprinkling of paprika.
