- In a large bowl, mix cream cheese, pimientos, mayonnaise and onion until blended. Stir in cheddar cheese. Refrigerate at least 2 hours before serving. Serve with crackers.

PIMIENTO CHEESE SPREAD
Steps:
- Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.
OLD-FASHIONED PIMIENTO CHEESE SPREAD
Old-fashioned pimiento cheese for old-fashioned times, i.e., summertime family reunions, "supper on the ground," lots of kids, watermelon and home-made ice cream. (At least that's the way it was for us.)

Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

- Blend in spices, Worcestershire sauce, and hot sauce.

PIMIENTO CHEESE SPREAD
A pimiento cheese sandwich made on very fresh white bread is a true southern staple. Nothing goes better with Gwen's Fried Chicken (page 93). Mama slices the crusts off the sandwiches and cuts them in half for family reunions-very southern belle!

- Place the drained pimientos in a blender or food processor and purée until smooth. Using an electric mixer, combine the cheese and pimiento, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.
- The spread may be stored, covered, in the refrigerator for up to 1 week. Remove the spread from the refrigerator and allow it to reach room temperature before serving.
- Make a lot of these. One triangle disappears in only three bites!
