1/4 cup mayonnaise

  • In a large bowl, mix cream cheese, pimientos, mayonnaise and onion until blended. Stir in cheddar cheese. Refrigerate at least 2 hours before serving. Serve with crackers.

Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

3/4 cup good mayonnaise, such as Hellmann's
1 1/2 teaspoons granulated onion (not onion powder)

3/4 cup canned pickled jalapeño peppers, drained and chopped
1/2 cup chopped scallions, white and green parts (3 to 4 scallions)

A pimiento cheese sandwich made on very fresh white bread is a true southern staple. Nothing goes better with Gwen's Fried Chicken (page 93). Mama slices the crusts off the sandwiches and cuts them in half for family reunions-very southern belle!

Number Of Ingredients 3

2 7-ounce jars canned, sliced pimientos, drained
3 10-ounce bricks sharp Cheddar cheese, finely grated
1 cup mayonnaise

Steps:

  • Place the drained pimientos in a blender or food processor and purée until smooth. Using an electric mixer, combine the cheese and pimiento, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.
  • The spread may be stored, covered, in the refrigerator for up to 1 week. Remove the spread from the refrigerator and allow it to reach room temperature before serving.
  • Make a lot of these. One triangle disappears in only three bites!
