1 pound medium (21/25 count) shrimp, shells and tails removed, deveined, halved lengthwise, then crosswise
2 tablespoons Ginger-Garlic Paste, recipe follows
2 teaspoons sambal oelek (Asian chile-garlic sauce)
1/2 cup soy sauce
1 teaspoon cornstarch
3 large eggs
1 teaspoon soy sauce
Peanut oil
3 tablespoons peanut oil
1/2 medium yellow onion, diced
1/4 cup finely diced celery
1 tablespoon Ginger-Garlic Paste, recipe follows
2 tablespoons toasted sesame oil
4 cups cold cooked white rice
1/2 cup frozen peas, thawed
1/2 cup frozen shelled edamame, thawed
1 cup diced fresh pineapple
1 cup bean sprouts
1/4 cup soy sauce
2 tablespoons sambal oelek
3 scallions, chopped
1/2 cup garlic cloves, peeled
1/2 cup fresh ginger, broken into broken pieces
2 tablespoons canola oil

Steps:

  • For the shrimp: In a large bowl, combine the shrimp with the soy sauce, Ginger-Garlic Paste, sambal and cornstarch. Mix well to coat the shrimp. Cover and refrigerate for 15 minutes.
  • For the egg crepes: In a bowl, whisk together the eggs, soy sauce and 1/4 teaspoon water. Set a medium nonstick skillet over medium-low heat and coat it lightly with peanut oil. Pour in half the egg mixture and swirl the pan so the egg coats the bottom. Cook over low heat until firm, then carefully turn with a spatula and finish cooking on the other side, about 45 seconds per side. Transfer the egg crepe to a plate to cool. Repeat with remaining egg mixture. When the crepes are cool enough to handle, stack, roll and slice them into thin julienne strips. Set aside until ready to use.
  • For the fried rice: Set a large wok or large nonstick skillet over high heat and swirl in 1 tablespoon of the peanut oil. Add the marinated shrimp and stir fry until slightly pink, about 2 minutes. Transfer the shrimp to a plate and set aside. Reduce the heat to medium and add the remaining 2 tablespoons peanut oil. Add the onions, celery and Ginger-Garlic Paste and stir fry until softened and fragrant, about 3 minutes. Add the sesame oil and the rice and stir fry until hot and a little crispy, about 2 minutes, breaking up the rice with a wooden spoon as you go. Fold in the peas, edamame, pineapple and bean sprouts and continue to stir fry until the vegetables heated through, about 2 minutes more. Stir in the soy sauce and sambal. Fold in the cooked shrimp and the sliced egg crepe. Transfer to a serving platter and garnish with chopped scallions.
  • Pulse the garlic and ginger in a food processor. With the processor running, stream in the canola oil and process to a paste. (You'll need 3 tablespoons of the paste for the above recipe. Refrigerate remaining paste for up to a week.)

  • Mix soy sauce, curry powder and sugar. In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry shrimp until they turn pink, 2-3 minutes. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add ginger and garlic; cook just until fragrant, about 10 seconds. Add pepper, carrot and onion; stir-fry 2 minutes. Stir in pineapple and shrimp. Add rice and soy sauce mixture; heat through over medium heat, tossing to combine and break up any clumps of rice. Stir in green onions. Sprinkle with peanuts; serve with lime wedges.

8 Shrimps (leave 4 whole, and 4 cut into small pieces)
50 g chicken breast meat (marinated with 1 tsp oil and 1/4 tsp salt)
Half cup fresh pineapple cubes
1 egg
250g of cooked rice
half onion (about 50g) diced
3 tablespoons vegetable oil
One tablespoon of Golden Mountain seasoning sauce
2 teaspoon of fish sauce
1 teaspoon of sugar
1 teaspoon of curry powder
1/4 teaspoon ground white pepper
1 tablespoon raisins
2 tablespoons roasted cashew nuts
1/8 red capsicum, diced
1/8 green capsicum, diced

  • Heat some vegetable oil in a wok. Stir-fry the shrimps over medium heat until they turn color. Remove.
  • Saute the chicken meat. Once it is cooked, remove.
  • Saute the onion until tender and slightly translucent. Remove.
  • Scramble the egg until it is half cooked over low heat. Add the cooked rice and combine with the egg.
  • Add the seasonings. Combine well.

1 to 2 tablespoons sesame oil
1 pound medium-large fresh shrimp*, cleaned (approximately 15-20 count shrimp)
1 medium red bell pepper, diced small
1 cup peas and diced carrots blend (frozen and thawed; or canned and drained)
1/2 cup corn (frozen and thawed; or canned and drained)
2 to 3 garlic cloves, finely minced or pressed
1 teaspoon ground ginger, or to taste
3 large eggs, lightly beaten
4 cups cooked rice (I use white; long-grain, or brown may be substituted. To save time use two 8.8-ounce pouches cooked and ready-to-serve rice)
1 to 1 1/2 cups fresh diced pineapple (one 8-ounce can drained pineapple tidbits may be substituted)
2 to 3 green onions, trimmed and sliced into thin rounds
1/4 cup reduced-sodium soy sauce*, or to taste

Steps:

  • To a large non-stick skillet or wok, add the oils, shrimp, and cook over medium-high heat for about 3 minutes, flipping halfway through. Cooking time will vary based on size of shrimp; don't overcook.
  • Remove shrimp with a slotted spoon (allow oils and cooking juices to remain in skillet) and place shrimp on a plate; set aside.
  • Add the red bell pepper, peas, carrots, corn, and cook for about 2 minutes, or until vegetables begin to soften, stir intermittently.
  • Add the garlic, ginger, and cook for 1 minute, stir intermittently.
  • Push vegetables to one side of the skillet, add the eggs to the other side, and cook to scramble, stirring as necessary.
  • Turn the heat to low, add the cooked rice, stir to combine, and allow it to warm through for a minute or two. Tip - If mixture seems at all dry, add additional oil to taste.

This was my mother's favorite way to use up leftover white rice. It really doesn't taste like the fried rice you get at a restaurant, but it still a great meal. I typically throw in whatever vegetables I have in my kitchen, and leave out the shrimp or chicken. I also cut this down to accommodate the amount of rice I have. Cooking time does not include making rice, chicken or shrimp since this is usually made out of leftovers.

3 cups cooked rice, cold
3 tablespoons oil
3/4 cup scallion, sliced
3/4 teaspoon salt

1 egg, beaten
3 tablespoons parsley, minced

Steps:

  • Make rice in advance and refrigerate.
  • Heat the oil in a skillet. Stir in the rice until lightly browned, pressing out any lumps.

8 ounces shrimp ((225g, peeled, deveined, rinsed, and pat dry))
1 cup onion ((150g, diced))
1/2 cup carrot ((75g, diced))
4 ounces ham ((or Chinese sausage; 115g, finely diced))
6 cups cooked rice ((about 900g))
2/3 cup peas ((100g))
1 cup pineapple ((diced into 1/2-inch pieces))
1 scallion ((chopped))
2 eggs ((beaten))
1/4 teaspoon salt ((more to taste))
1/2 teaspoon Shaoxing wine ((plus 1 tablespoon, divided))
4 tablespoons vegetable oil ((divided))
1 tablespoon fish sauce
1 tablespoon light soy sauce ((or Thai thin soy sauce))
1/2 teaspoon ground white pepper
1 1/2 teaspoons sesame oil

Steps:

  • First, prepare the shrimp, onion, carrot, ham/Chinese sausage, rice, peas, pineapple, and scallions. If using fresh pineapple, remember to trim away the pineapple core. If using canned pineapple, rinse away any syrup and pat dry with a clean kitchen towel.
  • Beat 2 eggs with ¼ teaspoon salt and ½ teaspoon Shaoxing wine. Heat your wok over medium heat until lightly smoking. Add 1 tablespoon oil, and scramble the eggs for 1 minute-until just cooked. Turn off the heat, break the egg into small pieces, transfer to a dish, and set aside.
  • Heat another 1 tablespoon of oil over medium heat. Cook the shrimp until they turn pink, about 1 minute. Remove from the wok and set aside.
  • Heat the last 2 tablespoons of oil over medium heat. Cook the onion until translucent. Add the diced carrots and ham, and cook until the carrots are no longer crunchy. Add the rice and 1 tablespoon Shaoxing wine. The steam from the wine will loosen the rice chunks!
  • Stir-fry everything together well, and add in the peas, 1 tablespoon fish sauce, 1 tablespoon light soy sauce, ½ teaspoon ground white pepper, 1 teaspoon sesame oil, the scrambled egg, and the cooked shrimp. Stir-fry everything together for a few minutes.
  • Finally, add the pineapple and scallions. Mix everything again for a minute or two. To crisp and warm the rice through, you can use your wok spatula to spread the rice in a single layer around the surface area of the wok, making use of all the heat and letting any excess liquid evaporate.
  • Salt to taste, and serve immediately!

2 cups pineapple chunks ( - fresh or canned)
4 cups cooked jasmine rice ( - use leftover cold rice for best results)
6 oz choice of protein - chicken, shrimp, ham, tofu ( - cut into bite sized pieces; about ¾ cup)
2 large eggs ( - beaten)
½ cup frozen peas
½ cup diced carrots
½ cup diced onions
½ cup diced red bell pepper
2 stalks scallions ( - chopped)
1 teaspoon toasted white sesame seeds ( - for garnish)
2 Tablespoons aloha shoyu ( - can substitute soy sauce (see Note 1))
2 Tablespoons oyster sauce
1 teaspoon toasted sesame oil
3 cloves garlic ( - minced)

Steps:

  • This recipe will cook fast so prepare the vegetables ahead of time. If you're using canned pineapple, be sure to drain out the liquid. Then, mix the sauce ingredients in a small bowl and set it aside.
  • Heat a large nonstick pan over medium high heat and a teaspoon of the oil. Add the beaten eggs and scramble them. Then remove them from the pan and set it aside.
  • Add another teaspoon of the cooking oil to the pan and add your choice of protein (spam, chicken, shrimp, tofu). When the protein is fully cooked, remove it from the heat and set it aside.
  • Add the rest of the cooking oil to the pan and add the red bell peppers, onions, and carrots. Stir fry them together for 2 to 3 minutes.
  • Next, add the cold pre-cooked rice and the sauce. Make sure to break apart any clumps of rice by pressing down with the flat side of your spatula or spoon. It's important to coat each grain of rice with the oil and sauce. Add in a teaspoon more oil if you find your rice is sticking together.
  • Once your rice is fully separated and coated with the sauce, add the eggs, protein, and pineapple back into the pan. Toss everything together for 1 minute.
  • Lastly add the frozen peas and toss it together until the peas turn bright green.
  • Sprinkle scallions and sesame seeds on top. Optional: serve it in pineapple bowls.

1 medium onion, diced
1 small carrot, diced
2 cloves garlic, minced
½ cup uncooked medium shrimp, peeled and deveined
½ cup diced ham
4 cups cooked jasmine rice
1 tablespoon soy sauce (such as Chinatown)
salt and ground black pepper to taste
1 ½ cups diced pineapple
1 small tomato, diced
3 green onions, thinly sliced

Steps:

  • Melt coconut oil over medium-high heat in a large frying pan. Add onion, carrot, and garlic; stir-fry until tender, about 3 minutes. Add shrimp and ham; stir-fry until shrimp are almost cooked through, about 2 minutes. Add rice and soy sauce and continue to cook and stir for 1 minute. Season with salt and pepper and remove from heat.
  • Stir pineapple, tomato, and green onions into fried rice mixture until thoroughly combined.

a 4-pound pineapple
1/2 cup julienne red bell pepper
3 scallions, sliced thin
2 teaspoons minced fresh jalapeño pepper, including the seeds (wear rubber gloves), or to taste
1 1/2 tablespoons soy sauce
1 1/2 teaspoons sugar
1 teaspoon anchovy paste
1/2 teaspoon turmeric
2 tablespoons vegetable oil
1 pound small shrimp (about 50), shelled and deveined
2 garlic cloves, minced
5 cups cooked rice
1/4 cup finely chopped fresh coriander

Steps:

  • Halve the pineapple lengthwise, cut out the flesh, leaving 1/2-inch-thick shells, and reserve the shells. Discard the core and cut enough of the pineapple into 1/2-inch pieces to measure 1 1/2 cups, reserving the remaining pineapple for another use. In a bowl combine the pineapple pieces, the bell pepper, the scallions, and the jalapeño pepper. In a small bowl whisk together the soy sauce, the sugar, the anchovy paste, the turmeric, and 1 tablespoon water.
  • In a wok or heavy skillet heat 1 tablespoon of the oil over moderately high heat until it is hot but not smoking, in it stir-fry the shrimp for 1 1/2 minutes, or until they are just firm, and transfer them to a bowl. Heat the remaining 1 tablespoon oil over moderately high heat until it is hot but not smoking and in the oil stir-fry the garlic for 5 seconds, or until it is golden. Add the rice and stir-fry the mixture for 30 seconds, or until the rice is hot. Add the soy mixture and stir-fry the mixture for 1 minute. Add the pineapple mixture and the shrimp, stir-fry the mixture for 1 minute, or until it is hot, and stir in the coriander. Serve the fried rice in the reserved pineapple shells if desired. (There will be extra fried rice.)

Add the sesame oil and the rice and stir fry until hot and a little crispy, about 2 minutes, breaking up the rice with a wooden spoon as you go. Fold in the peas, edamame, pineapple and bean sprouts and continue to stir fry until the vegetables heated through, about 2 minutes more. Stir in the soy sauce and sambal. Fold in the cooked shrimp and the sliced egg crepe. Transfer to a serving platter and garnish with chopped scallions.
  • Ginger-Garlic Paste: Pulse the garlic and ginger in a food processor. With the processor running, stream in the canola oil and process to a paste. (You’ll need 3 tablespoons of the paste for the above recipe. Refrigerate remaining paste for up to a week.)
