CHEESY CARAMELIZED ONION BACON DIP

8 slices thick bacon
4 large Vidalia or sweet onions, thinly sliced
1 teaspoon garlic powder
1 teaspoon ground mustard
1/2 teaspoon freshly cracked black pepper
1 teaspoon kosher salt
One 8-ounce brick cream cheese, at room temperature
1/2 cup Greek yogurt
3 tablespoons mayonnaise
2 tablespoons chopped fresh parsley
1 teaspoon Worcestershire sauce
3/4 cup grated yellow Cheddar
3/4 cup grated Swiss cheese
One 10- to 12-inch boule
Crudites, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the bacon on a sheet pan fitted with a wire rack. Roast the bacon until crispy, about 20 minutes.
  • Pour the bacon fat from the sheet pan into a large skillet and warm over medium-high heat. Add the onions to the skillet and cook, stirring frequently, for about 1 minute, then sprinkle in the garlic powder, ground mustard, pepper and 1/2 teaspoon salt. Reduce the heat to medium-low and continue to cook, stirring occasionally, until the onions are browned, soft and caramelized, 30 to 45 minutes. Set aside.
  • Preheat the broiler.
  • Stir together the cream cheese, yogurt, mayonnaise, parsley, Worcestershire, 1/2 cup Cheddar, 1/2 cup Swiss and the remaining 1/2 teaspoon salt until completely combined. Stir in the warm onions.
  • Cut the top of the boule off and hollow out the center. Place the boule on a parchment-lined baking sheet. Save the scooped out chunks of bread and cut the removed top into pieces to dip later.
  • Fill the boule with the onion mixture and sprinkle the top with the remaining cheeses, holding back a tablespoon of each. Cut the bacon into 2-inch pieces and arrange them like the rays of the sun around the perimeter of the dip, then sprinkle the remaining cheese in the middle, overlapping the bacon to make an extra-cheesy center. Broil, watching closely to prevent burning, until the bacon is crisp and the cheese is melted beneath, about 2 minutes. Serve warm with crudites and reserved chunks of bread and use the bread bowl/bacon for dipping!

This is a great appetizer or snack. After the the dip is almost gone, its time to tear off chunks of the bowl. There's not enough bread left for dipping so i usually set out additional crackers. I buy a garlic flavored bread at our local store and it enhances the flavor but any type of round bread will do.

1 c sour cream
1 c mayonnaise
1/2 pkg bacon, uncooked
3 clove garlic, minced ( or you can use the minced garlic in a jar)
2 c shredded cheese, colby & jack or chedder
1 round bread, whole

Steps:

  • 1. Cut bacon into small pieces and cook until crispy.Drain on paper towel.
  • 2. In large bowl, mix sour cream, mayo, bacon, garlic and cheese until well blended.
  • 3. Refrigerate for at least a 1/2 hour or overnight to let flavors marry.
  • 4. Slice top of bread bowl. Scoop out bread and tear into chunks ( for dipping)
  • 5. Spoon cheesy mixture into bread bowl and place top of bread on top.
  • 6. Place on a cookie sheet and bake in a 350' degree oven for 30 to 40 minutes.
  • 7. Serve with leftover bread and additional crackers or tortilla chips

1 stick butter, 1 stick, softened
4 cloves garlic, minced
⅓ cup parmesan cheese
⅓ cup shredded monterey jack cheese
⅓ cup shredded cheddar cheese
⅓ cup fresh green onion, sliced
1 baguette, 8 inch (20 cm)

Steps:

  • Preheat oven to 400°F (200°C).
  • In a bowl, combine all of the ingredients except the baguette, and mix until smooth.
  • Slice the baguette in half lengthwise, then spread the butter mixture evenly on both sides of the baguette.
  • Place on a tray lined with parchment paper and bake for about 15 minutes, until cheese is bubbly and starting to brown on the edges.
  • Slice, cool, then serve.
  • Enjoy!

1 cup grated Monterey Jack cheese
1 cup grated Cheddar cheese
1 tablespoon chopped fresh parsley
8 slices bacon, partially cooked and chopped
2 green onions, white parts thinly sliced, green parts thinly sliced and reserved separately for garnish
1 round artisan or sourdough loaf
1 stick (8 tablespoons) salted butter, melted
2 tablespoons ranch dressing mix

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the Monterey Jack, Cheddar, parsley, bacon and onion whites in a bowl and mix well.
  • Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction to create small squares across the top of the loaf. Move slowly and use caution. Place the bread on a large sheet of aluminum foil.
  • Stuff the cheese mixture in between the rows of squares. Mix the melted butter and ranch dressing, then drizzle over the top. Wrap the loaf in the foil and bake for 25 minutes. Open the foil and continue to bake until heated through and the cheese is melted and bubbly, another 10 minutes. Sprinkle with the onion greens and serve immediately.

1 1/2 cups shredded mild yellow cheddar cheese (about 4 ounces)
1 1/2 cups shredded pepper jack cheese (about 4 ounces)
3 slices bacon, cooked and finely chopped
1/4 cup finely chopped pickled jalapenos
2 scallions, finely chopped
1 round loaf white or sourdough bread (14 to 16 ounces)
6 tablespoons unsalted butter, melted

Steps:

  • Preheat a grill to low and medium: On a gas grill, turn the center burner(s) to low and the side burners to medium; on a charcoal grill, bank the coals to the sides with a few coals in the center.
  • Combine the cheddar, pepper jack, bacon, jalapeños and scallions in a medium bowl.
  • Slice the bread with a serrated knife in 1-inch intervals, cutting almost all the way through. Rotate the bread 90 degrees and repeat to create a crosshatch pattern. Set the bread on 2 large stacked sheets of heavy-duty foil.
  • Gently spread the bread open and brush between the cuts with 4 tablespoons melted butter. Stuff the cheese mixture into the spaces. Press the bread back together and brush the outside with the remaining 2 tablespoons melted butter; wrap in the foil.
  • Once the grill registers 350˚ F to 375˚ F, set the bread in the center of the grill over low heat, cover and cook until warmed through, about 15 minutes. Pull back the foil to expose the surface of the bread (do not remove). Continue to grill, covered, until the top of the bread is crisp and the cheese melts, 10 to 15 minutes. Serve warm.

Studded with melty cheese and herbs, this garlic bread couldn't be easier! I like to buy a crusty round loaf of bread right from the bakery section of my grocery store. Be careful not to cut all the way through the loaf-you don't want the cheese to ooze out the bottom and stick to the pan.

1 small round loaf sourdough bread (7 ounces)
4 tablespoons unsalted butter
1/3 cup chopped fresh parsley, plus for more garnish
1 teaspoon onion powder
Pinch kosher salt
5 cloves garlic, minced
4 ounces mozzarella, cut into 1/2-inch cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • Score the bread with 2-inch-deep cuts with a serrated knife into a 1-inch diamond pattern without slicing all the way through. Place on a parchment paper-lined baking sheet.
  • Melt the butter in a small saucepan over medium heat. Stir in the parsley, onion powder, salt and garlic. Brush the butter mixture all over the bread and into the cut diamonds using a pastry brush. Insert the cheese cubes in the crevices of the bread.
  • Cover the bread with aluminum foil and bake for 30 minutes. Uncover and bake until the cheese is melted and bubbly, 8 to 10 more minutes. Sprinkle with more fresh parsley. Serve hot!

8 ounces lager beer, plus 1 tablespoon, divided
1 tablespoon whole grain mustard
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch

8 ounces sharp cheddar cheese, shredded

3 garlic cloves

Steps:

  • Preheat the oven to 375°F.
  • Slice off the top of the bread. Hollow out the inside of the bread to create a bowl. Save the top of the bread for later.
  • In a large bowl, combine whisk together the softened cream cheese and 1 cup of the beer, until well-combined. Combine the remaining tablespoon of beer with 1 tablespoon cornstarch. Add the cornstarch slurry, the whole grain mustard, and the Worcestershire sauce to the cream cheese mixture and whisk again to combine. Fold in the shredded cheeses, then fold in the bacon. Fill the bread bowl with the cheese mixture. Transfer the bread bowl to a rimmed baking sheet.
  • Slice the top of the bread that was cut off earlier into thin pieces, and place them on the baking sheet, crust-side up.
  • In a small bowl, mix together the garlic, herbs, and olive oil. Spoon or brush the herb mixture onto the tops of the bread slices.
  • Bake the bread for 5 minutes, or just until the cheese is melted, stir, and continue to bake until the cheese begins to brown on top, about 30 minutes. If you notice that the bread slices begin to brown too much, cover them with foil as the beer cheese finishes cooking.
  • Top the dip with chopped chives and serve warm with the bread slices, broccoli, and pretzels.
