2 tablespoons butter, melted
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon rubbed sage

Steps:

  • Place hens breast side up on a rack in a shallow roasting pan.
  • In a small bowl combine the remaining ingredients.
  • Brush over hens and bake uncovered at 350 degrees F for 50-60 minutes or until juices run clear.

6 Cornish game hens (20 to 24 ounces each)
1 cup lemon juice
3/4 cup butter, melted
1/2 teaspoon paprika
1-1/2 teaspoons dried thyme, divided
1-1/4 teaspoons seasoned salt, divided
1-1/8 teaspoons garlic powder, divided
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. Pour half over the hens; set the remaining mixture aside for basting. Combine salt, pepper and remaining thyme, seasoned salt and garlic powder; sprinkle over hens. Bake, uncovered, at 375° for 30 minutes. Baste with reserved lemon juice mixture. Bake 30 minutes longer, basting occasionally, or until the meat is tender and juices run clear.

1 large Cornish hen
1 teaspoon kosher salt
1 teaspoon fresh coarse ground black pepper
1 garlic clove, sliced

1 carrot, chopped into 1 pieces

Steps:

  • Preheat oven to 375°F.
  • Rinse hen with cold water & pat dry. Season with salt & pepper inside & out.
  • Stuff cavity with garlic, rosemary, thyme, & ½ bay leaf. Place some of the shallots, carrots, & celery in cavity.
  • Scatter rest of veggies on bottom of roasting pan. Place hen on top of veggies.
  • Squeeze juice from ½ lemon over hen and add a pice (about ¼ of a lemon) to the cavity. Roast in oven 45 minutes until hens are golden brown & crisp. Juices should run clear when thigh is pierced with a sharp knife.
  • Transfer to serving platter and let sit for 5 minutes. Remove skin & cut in half.

3/4 cup medium-grain bulgur
1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh dill, plus generous sprigs for garnish
1/4 cup chopped fresh flat-leaf parsley, plus generous sprigs for garnish
1/4 cup chopped fresh mint, plus generous sprigs for garnish
3 tablespoons pine nuts, toasted
2 teaspoons kosher salt, plus more as needed
4 scallions (white and green), chopped
3 cloves garlic, minced
Freshly ground black pepper
1 large egg, beaten
1/2 cup crumbled Greek feta (about 3 ounces)
4 Cornish game hens, backbone and breast bone removed (butterflied)
Charred Tomato Coulis, recipe follows
4 medium ripe tomatoes
1 tablespoon white wine vinegar
2 teaspoon kosher salt
1 teaspoon minced garlic
1/3 cup extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Bring the stock to a boil in a small saucepan. Meanwhile, toast the bulgur in a medium skillet over medium heat until fragrant and nutty, about 4 minutes. Stir in the bulgur, lower the heat, and simmer, covered, for 15 minutes. Remove from the heat and set aside for 5 minutes.
  • Transfer the bulgur to a medium bowl and fluff with a fork. Add 1/4 cup of the olive oil, chopped herbs, pine nuts, 2 teaspoons salt, scallions, and garlic and season with pepper, to taste. Cool slightly and add the egg and feta, and mix to combine. Set the stuffing aside.
  • Preheat the oven to 450 degrees F.
  • Lay the hens on a work surface. Starting from the neck of a hen, slip a couple fingers between the skin and breast, and loosen the skin. Take a large spoonful of the stuffing and slip the spoon between the skin and breast. With your free hand, hold the stuffing in place and gently pull the spoon out, leaving the stuffing behind. Press the skin down to evenly distribute the stuffing over the breast. Repeat until the hens are evenly stuffed. Cross the legs of the birds at the breastbone and tie them with a piece of kitchen twine.
  • Arrange the hens breast-side up on a baking sheet. Brush all over with the remaining 2 tablespoons olive oil and season generously with salt and pepper.
  • Roast the birds until well browned and crispy, and an instant-read thermometer registers 160 degrees when inserted into the thigh, about 40 minutes.
  • To serve, split the hens in half lengthwise. Pour the coulis onto a platter and arrange the hens on top. Garnish with the herb sprigs and serve.
  • Put the tomatoes over 2 gas burners on high and cook, turning occasionally, until charred and peeling. Alternatively, broil the tomatoes until charred. Put the tomatoes in a bowl and cover tightly with plastic wrap. Set aside to steam for 5 minutes. Peel and seed the tomatoes.
  • Transfer the tomatoes to a blender with the vinegar and garlic and puree until smooth. While the motor is running, drizzle in the oil until incorporated. Season with pepper, to taste.

Cornbread Herbed Stuffing, recipe follows
1/4 cup vegetable oil
1/2 cup dry white wine
1 medium onion, finely chopped
2 cloves garlic, minced
2 teaspoons chopped fresh rosemary or 3/4 teaspoon dried rosemary
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 tablespoons unsalted butter, softened
Freshly ground black pepper
3 tablespoons butter
1 cup chopped onions
1 cup chopped celery
2 cups dry cornbread cubes
2 cups dry white bread cubes
2 teaspoons poultry seasoning
2 teaspoons chopped fresh sage leaves or 3/4 teaspoon dried sage leaves
2 teaspoons finely chopped fresh rosemary or 3/4 teaspoon dried rosemary
2 teaspoons finely chopped fresh parsley
2 large eggs, lightly beaten
1/2 to 1 cup chicken stock
Salt and freshly ground black pepper, to taste

Steps:

  • Remove the giblets from the hens. Rinse the hens with cold water and pat them dry with paper towels.
  • Combine the marinade ingredients in a small bowl. Place the hens in a large self-sealing food-storage bag and pour the marinade over them. Close the bag securely and refrigerate for at least 3 hours. Shake the bag once or twice to coat the hens evenly with the marinade. Preheat the oven to 400 degrees.
  • Remove the hens from the plastic bag and pat dry with paper towels. Season the hens inside and out with salt and pepper. Stuff the cavity loosely with the Cornbread Herbed Stuffing. Rub or brush butter over the skin of the hens and place the hens breast side up in a shallow roasting pan, large enough to allow space between the hens.
  • Roast for 15 minutes to brown. Reduce the oven temperature to 350 degrees and baste frequently with pan drippings and melted butter. Continue roasting for 35 to 45 minutes, or until the juices run clear when the flesh is pierced with a sharp knife.
  • In saute pan, melt the butter. Saute the onions and celery in the butter until tender. In a large bowl, toss the bread cubes with onions, celery, poultry seasoning, and herbs. Add the eggs and enough chicken stock to slightly moisten and barely bind the ingredients. Season with salt and pepper to taste. Yield: 9 to 10 cups;

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
  • Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
  • In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.

Roasted Game Hens Stuffed Under the Skin with Herbed Ricotta image

12 ounces (3/4 of a 15-ounce container) part-skim ricotta
1/3 cup freshly grated Parmesan cheese
1 egg yolk, lightly beaten
1/4 cup finely chopped fresh basil
3 tablespoons finely chopped fresh parsley
1 1/2 tablespoons grated lemon zest
2 small garlic cloves
Kosher salt and freshly ground pepper
6 Cornish game hens
1 1/2 small lemons, cut into 6 quarters
1 1/2 small onions, cut into 6 quarters
1/2 cup dry white wine

Steps:

  • Preheat the oven to 350 degrees. Put the ricotta in a fine sieve and drain for 30 minutes. In a medium bowl, combine the drained ricotta, Parmesan, egg yolk, herbs, and lemon zest. Put the garlic cloves through a garlic press and add to the mixture. Combine well, adding the salt and pepper to taste.
  • Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a lemon quarter and an onion quarter in each cavity.
  • Loosen the skin on the breasts by sliding your fingers under the skin, being careful not to pierce it. Spoon the ricotta mixture under the skin (about 4 tablespoons of stuffing per bird). Truss the birds.
  • Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 1 hour, or until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven, tent loosely with aluminum foil, and let rest 10 minutes. Discard the trussing string and serve with the pan juices spooned over the hens.

1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

4 -6 Cornish hens
kosher salt & freshly ground black pepper
1/2 cup extra virgin olive oil
2 large garlic cloves, flattened
2 tablespoons fresh thyme, minced
1 tablespoon fresh rosemary, minced
2 tablespoons fresh lemon juice

Steps:

  • Heat a grill to high. Remove the backbone of each hen. Turn the hens skin side up and press on the breast bone to flatten. If desired you can cut through the breast to half the hens. Rinse each hen and dry.
  • Spread the hens out flat on a large shallow baking sheet and sprinkle both sides with salt and pepper. Bend the wings under the breasts to protect them from burning.
  • Pour 1/4 cup of the olive oil into a small bowl and add the garlic, a generous amount of pepper, and all but 1 teaspoon each of the thyme and rosemary. Brush the hens liberally on both sides with the seasoned oil and more pepper.
  • Grill the hens skin side down, uncovered, until the skin develops nice grill marks (rotate a quarter turn after first 3 minutes to create a crosshatch pattern). Turn the hens over and sear on the second side, again uncovered for about 4 minutes. Sprinkle the skin side with the reserved herbs and salt, reduce the heat and close the lid. If using a charcoal grill, move to side of coals to cook indirectly. Cook until the hens are tender and the skin is crisp and golden. A instant-read thermometer inserted into the thick part of the thigh should read 180 degrees, 10 to 15 minutes.
  • Put the hens on a large serving platter. Whisk together the remaining 1/4 cup oil and the lemon juice. Serve the hens drizzled with the lemon oil. Serve immediately.

HERBED MUSTARD CORNISH GAME HENS

These hens are great hot off the grill but they, I think, taste even better cold. I have a gas grill, so my grilling directions are kind of geared toward that type of equipment. Charcoal can be used, of course, just use an indirect method by moving the coals to the edges and placing the hens in the middle. Marinade time is 2-3 hours.

4 (1 1/4 lb) Cornish hens
3/4 cup extra virgin olive oil
1/4 cup dry white wine
2 tablespoons Dijon mustard
2 teaspoons dried thyme
1 1/2 teaspoons dried rosemary
3 -4 garlic cloves, minced
1/4 teaspoon fresh ground black pepper

Steps:

  • Wash the hens inside and out under cold running water and pat dry with paper towels.
  • Combine the marinade ingredients and pour into a 1-gallon plastic zip-loc bag (or other container, whatever you want). Place the hens in the marinade, smush them around so they're coated well, and refrigerate for 2 to 3 hours, or overnight.
  • Preheat the grill with all burners on high, for 10 minutes and the lid down.
  • While the grill is preheating, drain the marinade into a small saucepan. Bring to a boil for 2 minutes then remove from the heat and set aside for basting.
  • Once the grill is hot, turn off the center burner and turn the other burners to medium. Place the hens, breast side up, over the center of the grill (or over the unlit burners or over the part of the charcoal grill where the coals have been cleared). Close the lid and cook until the juices run clear when the thickest part of the meat is pierced with the tip of a sharp knife (I shoot for where the thigh is attached), about 1 hour. Turn the birds about every 15-20 minutes and baste with the hot boiled marinade. Serve hot off the grill or cool to room temp and refrigerate for a picnic.
